BAKED BANANA OATMEAL
I love baked oatmeal and make many different versions, but this is one of my kids favorites. It is really easy to throw together and smells so good. We like to eat it topped with vanilla yogurt.

Steps:
- Preheat oven to 375.
- Spray an 8 inch square pan with cooking spray.
- Stir together oats, baking powder, salt and cinnamon.
- Add sugar, an egg, 1 mashed banana, milk and vanilla. Stir just until combined.
- Pour into prepared pan and top with a layer of sliced bananas.
- Bake for 25 minutes.
- Top with brown sugar and broil until golden. About 3-4 minutes, but watch it carefully!

- In medium saucepan, bring milk, sugar, salt and spices to gentle boil (watch carefully); stir in oats. Return to boil; reduce heat to medium.
- Cook 1 minute for quick oats, 5 minutes for old fashioned oats, or until most of liquid is absorbed, stirring occasionally.
- Remove oatmeal from heat. Stir in mashed bananas and pecans.
- Spoon oatmeal into six cereal bowls.
- Top with yogurt, sliced bananas and pecan halves, if desired.

BANANA BREAD BAKED OATMEAL BARS
This is the perfect breakfast for those days when you really want a muffin but need something hearty and healthy like oatmeal. For the best flavor use a very ripe banana. Any fruit can be substituted for the banana, including dried fruit (cranberries!) and nuts. The bars are great the next day, too. Once cool, put the bars into the fridge, then pop them in the microwave for a few seconds before eating.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8-inch square baking dish.
- Beat applesauce and white sugar together in a bowl. Add oats, milk, eggs, baking powder, and salt to applesauce mixture; beat until evenly mixed. Stir banana into oat mixture. Pour batter into prepared baking dish.
- Stir brown sugar and cinnamon together in a small bowl; sprinkle mixture over banana batter.
- Bake in the preheated oven until firm, 30 to 35 minutes. Cool for 5 minutes before slicing into bars.

- Preheat oven to 350°. In a bowl, whisk the first 5 ingredients until blended. Stir in oats. , Arrange banana slices in a single layer in a greased 9-in. square baking pan; sprinkle with blueberries. Pour oatmeal mixture over top, spreading evenly. Bake until set, 25-30 minutes. Remove from oven. Preheat broiler., For topping, in a small bowl, mix brown sugar, flour and butter with a fork until crumbly; stir in pecans. Sprinkle over oatmeal. - Preheat oven to 375°F Lightly coat an 8x8 baking dish with cooking spray. Layer the banana slices over the bottom of the dish. Top with apple slices. Set aside.
- Mix together oats, cranberries, brown sugar, baking powder, and spices.
- In a seperate bowl, whisk together milk, egg, 1 Tbsp of butter, vanilla extract, and agave nectar.
