BARBECUE SAUCE FOR CHOPS, WINGS, SPARERIBS
Another favorite 1960 recipe from one of my old recipe cards. A great basic barbecue sauce for pork chops, chicken wings, or spareribs using ingredients readily available in most pantries. No precooking of the sauce is required but you can simmer it for 10 to 15 minutes if you like. Or, just mix the sauce ingredients together, pour over the meat, and bake. Adjust seasonings to taste. You can add garlic powder or minced garlic if you like. A good make ahead for next day barbecue.

Steps:
- Trim excess fat from pork chops, remove tips from chicken wings, cut spareribs into serving pieces.
- There should be enough meat to cover the bottom of 9"x13" pan in a single layer.
- Even though precooking of the meat is not required, I usually parboil spareribs to get rid of excess fat, and brown pork chops, drain the fat, and deglaze the browning pan with some of the sauce.
- Combine all the sauce ingredients.
- Simmer for 10 to 15 minutes (optional).
- Pour sauce over chops, wings, or ribs.
- Bake at 350 degrees Fahrenheit for 75 to 90 minutes or until meat is tender and thoroughly cooked.
- Baking time will depend on quantity, type of meat, and thickness.
- Baste occasionally and turn over at least once.
- Place meat on a serving dish.
- Pour balance of sauce into a bowl.
- Skim off any excess grease, or chill the sauce to allow the fat to solidify on top so it will be easier to remove.

SPARERIBS WITH COFFEE BARBECUE SAUCE
Steps:
- Place spareribs in a large pan, cover with salted water, and bring to a boil. Cook spareribs for 1 1/2 hours, drain, and allow spareribs to cool until they can be easily handled.
- Bone spareribs and trim all visible fat. Discard bones and fat, and cut remaining meat into 1/2-inch cubes and reserve.
- Heat butter in a large saute pan, preferably with a nonstick surface. Add potatoes and onions, and cook until tender.
- Add meat and coffee barbecue sauce and cook until all ingredients are heated through. Stir in corn, caraway seeds, chives, and cilantro. Season and reserve.
- Steam asparagus until fork tender but still vibrant green. Gently stuff asparagus in place of bones in spareribs.
- To plate dish, place spareribs on plate and drizzle with a little barbecue sauce mixture.
- Heat oil in a saucepan. Add vegetable oil, onion, garlic, cilantro, chile, cumin, chile powder, red pepper flakes, lemon zest, and coffee beans and cook for 2 minutes.
- Add the dark brown sugar, red wine vinegar, lemon juice, and ketchup to pan. Cook mixture stirring occasionally, until liquid is reduced by half. Add the salt, pepper, and tomato paste to the mixture. Cover and simmer for 2 to 3 hours, occasionally stirring. Strain and adjust seasonings.
OVEN-BARBECUED SPARERIBS
ONE of my family's favorites, this dish is often at the heart of our special meals. All our married children live nearby, so we have family gatherings often. Whenever I prepare these spareribs, I need a large quantity - most everyone asks for seconds. -LaVerna Mjones, Moorhead, Minnesota

COFFEE BARBECUE SAUCE
An easy to make tasty barbecue sauce made with cold coffee. It keeps well for a long time in a glass jar in refrigerator. Use as a sauce for precooked chicken wings or ribs in the oven. Or cook raw wings as directed below. Sauce can also be used for pork chops or spareribs or any recipe calling for barbecue sauce. Easy to make with readily available ingredients. A good way to use up leftover coffee. Time given is to make the sauce only and the yield is an estimate.

RESTAURANT STYLE WING AND RIB SAUCE
This sauce tastes similar to the sauce used on the sticky fingers at one of my favorite restaurants. It is easy to make and has endless possibilities for modification. Try adding a bit of cinnamon or cloves to it. Honey is used to thicken the sauce, but isn't necessary. If not using the honey, just use extra brown sugar.

A VERY POPULAR BBQ SAUCE
This recipe has a lot of sweetness and spice, so if you're looking for a classic BBQ sauce that's easy to make, look no further. It is very popular with users of 'ceramic' type smokers and grills, (i.e. Primo, Kamado, Big Green Egg, etc.)
