⅔ cup water
⅔ cup white wine vinegar
1 tablespoon fresh-ground black pepper
2 tablespoons garlic salt
2 tablespoons Worcestershire sauce
1 tablespoon hot sauce
3 tablespoons margarine, melted
4 (10 ounce) bone-in chicken breast halves

Steps:

  • Place the water, vinegar, pepper, salt, Worcestershire sauce, hot sauce, and melted margarine into a large, resealable plastic bag. Shake to combine ingredients, then add chicken, seal, and shake to coat. Place in refrigerator to marinate at least 4 hours.
  • Preheat an outdoor grill for medium-high heat, and lightly oil grate. Remove chicken from marinade, and shake off excess. Discard remaining marinade.
  • Cook on preheated grill until no longer pink in the center; about 10 minutes per side.

Steps:

  • In a small bowl, combine the vinegar, salt, cayenne pepper, crushed red pepper flakes and brown sugar. Mix well and allow ingredients to mesh for about 4 to 8 hours before using.

This is the first Thai-style dish I ever attempted to make, after I 'discovered' how delicious Thai food is. This recipe is easy enough (for the beginner that I was 10 years ago) and the ingredients not too difficult to find. Prep time does not include the several hours to overnight marinading time.

2 lbs chicken thigh fillets
1/2 cup coconut milk
4 cloves garlic, crushed
1 teaspoon cracked black peppercorns
2 teaspoons sugar
2 teaspoons turmeric
2 teaspoons paprika
1 tablespoon chopped fresh cilantro, root if possible
1 teaspoon curry powder
2 small fresh red chilies, chopped
1 tablespoon oil
1 small fresh red chile, chopped
2 cloves garlic, crushed
1/2 cup white vinegar
2 tablespoons sugar

Steps:

  • Cut chicken thighs in half and place in a bowl.
  • Combine the next 9 ingredients (garlic thru oil) and grind to a paste using a mortar and pestle.
  • Combine the paste with the chicken and mix well; refrigerate several hours or overnight.
  • Just before serving, grill chicken until tender, basting frequently with coconut milk.
  • Serve with sweet vinegar sauce.
  • Sweet vinegar sauce: Grind chili and garlic to a paste using a mortar and pestle.
  • Combine vinegar and sugar in a pan, stir over heat, without boiling, until sugar is dissolved.
  • Bring to a boil, simmer, uncovered, without stirring, until syrup just begins to color; remove from heat, cool slightly, stir in chili and garlic paste.

4 teaspoons chili powder
2 1/2 teaspoons salt
1 1/2 teaspoons sugar
1 teaspoon cayenne pepper
1 teaspoon dry mustard

4 skinless boneless chicken breast halves

Steps:

  • Prepare barbecue (medium-high heat) or preheat broiler.
  • Whisk first 9 ingredients in small bowl to blend. Arrange chicken in shallow glass dish. Spoon 1/4 cup sauce over; turn to coat evenly. Let stand at least 10 minutes and up to 30 minutes, turning chicken occasionally.
  • Grill chicken until just cooked through, basting occasionally with another 1/4 cup sauce, about 5 minutes per side.

  • In a small bowl, mix the first 6 ingredients. Place chicken in a 3-qt. slow cooker; add vinegar mixture. This recipe originally came from Judd Farr on an episode of Calling all Cook's -Food Network. I adjusted the quantity for my use and I use this to baste my chicken on the grill. I used to tease my boys if they were bad - I'd put vinegar in their mouths; when they found out that this recipe has vinegar in it --they said the chicken must have been bad- thus the name! This is one that our family uses on a regular basis. It makes a lot of basting sauce - so don't be alarmed - I usually use 1/2 of the sauce and store the remaining for another time.

1 cup water
1/2 cup canola oil
1 tablespoon poultry seasoning

1 broiler/fryer chicken (3 to 3-1/2 pounds), cut up

Steps:

  • In a small bowl, whisk the vinegar, sugar and salt. Whisk in the water, oil, poultry seasoning and pepper. Reserve 1/2 cup for basting; cover and refrigerate. Pour remaining marinade into a large resealable plastic bag; add the chicken. Seal bag and turn to coat. Refrigerate for 2-4 hours., Drain chicken, discarding marinade in bag.
