CLAFOUTIS AUX CERISES (CLASSIC CLAFOUTI)

Clafoutis aux Cerises (Classic Clafouti) image

A quick and classic cherry clafoutis, made the authentic French way with the pits still in the cherries. Should you wish to avoid the pits when enjoying this gorgeously simple dessert, you can remove them prior to baking. Clafoutis can be served warm or cool.

APPLE CLAFOUTIS

Apple Clafoutis image

Clafoutis is a French dessert which combines fresh fruit and custard. Just like a souffle, it rises beautifully then it deflates once cooled. It's best made in a cast iron skillet but any oven-proof skillet will work. Sprinkle with powdered sugar just before serving.

Provided by Yoly

Categories     World Cuisine Recipes     European     French

Time 1h15m

Yield 8

Number Of Ingredients 11

4 large eggs
¾ cup brown sugar
⅓ cup all-purpose flour
¼ teaspoon salt
1 ½ cups milk
1 tablespoon vanilla extract
5 tablespoons salted butter
⅓ cup brown sugar
¼ cup water
6 cups apples, peeled and sliced into 1/2-inch wedges
1 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Mix eggs and brown sugar in a bowl until smooth. Whisk in flour and salt. Slowly add milk, stirring constantly until well combined. Stir in vanilla extract and set aside to rest.
  • Melt butter, brown sugar, and water in a 10 1/4-inch cast iron skillet over medium-high heat. Stir frequently until mixture starts to boil. Reduce heat to medium; swirl skillet, but do not stir, until mixture starts to thicken, about 2 minutes. Add apples and cinnamon. Cook and stir until apples are crisp-tender and starting to brown, 15 to 18 minutes. Remove from heat.
  • Stir egg mixture and pour over the apples in the skillet.
  • Bake in the preheated oven until edges are golden brown and custard is set, 28 to 35 minutes.

How long do you bake clafouti?
Whisk in the flour, stirring until most of the lumps are gone. Pour the batter over the fruit. Bake the clafouti for 45 minutes, until a cake tester inserted into the center comes out clean. Remove the clafouti from the oven, and serve it in wedges, warm or at room temperature.
How much sugar do you add to clafoutis?
Note that the texture of clafoutis is like a sturdy custard, so if it feels a little rubbery, that's just how it's supposed to be. Feel free to reduce the sugar to 1/4 cup if you are working with very sweet cherries, or would prefer a less sweet clafoutis.
