- Dissolve yeast in water. Add sugar and salt, dissolve. Lightly beat in the 1 eggs. Stir well. Add 2 cups of flour, stirring to make a smooth thin dough. Then add remainder of flour to make a stiff dough. Knead this dough 15 minutes. Then set aside covered to rise for 40 minutes.
- Divide the dough into 10 equal parts and knead each separately to form a small ball. Push a floured finger through the center of each and twirl it around your finger to make a bagel with about a 1 to 1 1/2" hole and an outer diameter of about 3". Let rise for 20 minutes.
- Bring to boil 3 qts. water with 1 tablespoon sugar in it. Boil 4-5 bagels at a time for 4 minutes each, turning carefully. Dry on a paper towel. Mix the egg yolk with 1 tablespoon water, beat well, and brush the bagels with the mixture. Bake 20-30 minutes at 400oF (until brown). Don't expose to direct fire in the oven.

Steps:
- Mix 1 1/2 cups of the flour, sugar, salt, and yeast in a bowl.
- Add water gradually and beat for 2 minutes at medium speed, scrapping bowl occasionally.
- Add 1/2 cup of flour.
- Beat at high speed for two minutes, scrapping bowl occasionally.
- Stir in enough additional flour to make a soft dough.
- (Dough should be pulling away from the sides of the bowl).
- Turn out onto lightly floured surface.
- Knead for about 8 minutes or until smooth and elastic, adding additional flour as necessary.
- Place in ungreased bowl.
- Cover and let rise in warm place for 20 minutes (dough will rise, but will not double).
- Punch down dough; divide into 12 small balls.
- Poke finger through the middle of the ball to the other end.
- Make a round hole about 1/2 inch in diameter.
- Place on a lightly greased baking sheet.
- Cover and let rise in warm place for 20 minutes.
- Preheat oven to 375 degrees.
- Boil at least 2-inchs of water in a large shallow pan.
- Lower heat and add a few bagels at a time.
- Simmer bagels in water for 2 to 3 minutes turning once.
- Remove from water and replace the bagels on the greased baking sheet.
- Mix together egg white and a tablespoon of water.
- Brush the egg white wash over each bagel.
- Sprinkle poppy seeds or sesame seeds over the bagels.
- Bake for 30 minutes.
- Variations:
- Italian Herb Bagels: Add 2 teaspoons of Italian seasoning, and replace salt with onion salt.
- Onion Bagels: Add 2 tablespoons of dehydrated minced onion, and replace salt with onion salt.

- In a mixing bowl fitted with the dough hook, combine the yeast, water and approximately 1 tsp. of the sugar. Gently stir to hydrate the yeast. Allow to sit until foamy, 3-5 minutes. Add the yolks, bread flour, rest of the sugar, and 20 g. malt powder. (If using instant yeast*, combine all ingredients except the salt and continue from here.) Knead on a medium-low speed for about 7 minutes. Then, with the mixer on a low speed, slowly add the salt. Once combined, increase the mixer to medium-low, and continue kneading an additional 3-5 minutes. The salt should be fully absorbed (you should not feel the salt when you touch the dough) and the dough should be very smooth.
- To make sure the gluten is fully developed, do a windowpane test. Take a small piece (approximately 1 tsp.) of dough and stretch it between your fingers. It should form a “window pane”, meaning it should get thin enough that it is translucent without it ripping. If it is not at that point yet, continue kneading in the machine at 1 minute intervals or knead by hand until it passes the test. If it feels too dry (which could also cause it to rip), add 1 tsp. of water. The dough should barely be tacky.
- Divide the dough into six equal portions, each approximately 125 g. (If you want your bagels to each be equal, weigh the entire dough and divide the weight by 6.) Shape each one into a ball, covering with plastic wrap as you shape each ball. Taking one dough ball at a time, flatten the ball with your fingers into an oval/rectangle, approximately four inches by six inches, so that the long part of the oval/rectangle is horizontal in front of you. Fold over the top third onto itself, pressing down. Make another fold over the remaining portion of the dough. Pinch the ends of the log together. With both your hands, roll the dough into a rope, approximately 8-9 inches long. In between rolling, it is a good idea to squeeze the log to release any air bubbles within it. Cover with plastic wrap. Repeat with remaining dough balls. Allow the six ropes to rest for 15 minutes.
- Attach the ends of each rope to form bagels. Place each bagel on a baking sheet lined with parchment paper. Place the tray, tightly covered in plastic wrap, in the refrigerator overnight.
