This is a hearty soup widely served here, especially at the many restaurants specializing in Basque cuisine. It's a nice way to use the abundant vegetables that are available this time of year. Give it a try this harvest season.

1 broiler/fryer chicken (2 to 3 pounds)
8 cups water
2 medium leeks, sliced
2 medium carrots, sliced
1 large turnip, peeled and cubed
1 large onion, chopped
1 large potato, peeled and cubed
1 garlic clove, minced
1-1/2 teaspoons salt
1/2 teaspoon pepper
1 tablespoon snipped fresh parsley
1 teaspoon dried thyme
12 ounces smoked Polish sausage, sliced
2 cups navy beans, rinsed and drained
1 cup shredded cabbage
1 can (15 ounces) tomato sauce

Steps:

  • In Dutch oven, slowly bring chicken and water to a boil; skim foam. Reduce heat; cover and simmer for 45-60 minutes or until tender. Remove chicken; set aside until cool enough to handle., Strain broth and skim fat. Return broth to Dutch oven. Add the leeks, carrots, turnip, onion, potato, garlic, salt, pepper, parsley and thyme. Bring to a boil. Reduce heat; cover and simmer for 30 minutes., Meanwhile, remove chicken from bones; discard bones and skin. Cut chicken into bite-size pieces; add to the Dutch oven. Add the sausage, beans and cabbage. Simmer, uncovered, for 30 minutes or until vegetables are tender. Stir in tomato sauce; heat through.

1/2 cup dry red wine
1 1/2 lbs chicken breasts, boneless and skinless (cubed)
2 (15 ounce) cans chickpeas, rinsed and drained
4 cups coarsely shredded cabbage
1 cup chopped onion
1 cup chopped leek
1 cup cubed potato
1/2 cup cubed turnip
1/2 cup chopped carrot
1/2 cup red and green bell pepper
5 garlic cloves, chopped
2 teaspoons dried thyme
salt and pepper
1 1/2 cups garlic-flavored croutons

Steps:

  • Combine all ingredients except salt, pepper and croutons in slow cooker; cover and cook on low for 6-8 hours.
  • Season to taste with salt and pepper. Serve topped with croutons.

2 large onions, cut into 8 wedges
4 large tomatoes, cut into 8 wedges
1 large sweet red pepper, cut into 8 wedges
4 garlic cloves, halved
1/4 cup olive oil
2 cans (14-1/2 ounces each) reduced-sodium chicken broth
1/2 cup fat-free half-and-half
1/2 cup coarsely chopped fresh basil
1 small chipotle pepper in adobo sauce, seeded
1/2 teaspoon pepper
1/4 teaspoon salt
Fresh basil leaves, optional

Steps:

  • Line a 15x10x1-in. baking pan with foil and coat the foil with cooking spray. Place the onions, tomatoes, red pepper and garlic in pan. Drizzle with oil and toss to coat., Bake, uncovered, at 425° for 40-45 minutes or until tender and browned, stirring occasionally., In a large saucepan, combine the broth, half-and-half, chopped basil, chipotle pepper, pepper, salt and roasted vegetables. Bring to a boil. Reduce heat; simmer, uncovered, for 20-25 minutes. Cool slightly. , In a blender, process soup in batches until smooth. Return all to the pan; heat through. Garnish with basil leaves if desired.

Basques use ham and chicken in different entrees. This is an outstanding cream soup that will have you coming back for more. The recipe calls for you to let the soup sit for 2 hours to let the flavors blend - but I usually whip this soup up the day before I need it as it is so much better the second day.

1 medium onion, finely chopped
1 cup celery, finely chopped
1 cup broccoli floret, divided into small pieces
1 cup carrot, diced
1 cup frozen peas
1/4 minced parsley
1 cup chicken, cut into small pieces
1 cup ham, cut into small pieces
1 bay leaf
6 cups whole milk, cold
2 cups water
1/3 cup butter (to saute vegetables)
2/3 cup flour
3 tablespoons chicken base
salt
pepper
minced garlic (optional)

Steps:

  • Melt butter in a heavy stock pot, add flour - whisking rapidly. Add milk slowly whisking all the time. Whisk in water. Keep warm.
  • In another smaller pot, saute onions and carrots in butter over medium heat, stirring frequently. When they are almost done add all the other vegetables and garlic, stir gently. When the vegetables are almost cooked, add them to the creamed mixture.
  • Add the remaining ingredients and simmer for 10 min, scraping the bottom of the pot often so that the soup will not burn. Remove the bay leaf. (Do not cook too long or the vegetables will disintegrate and the texture will change) Set aside for 2 hours to let the flavors blend. Then refrigerate. Its even tastier the second day.

3/4 pound polish sausage, sliced
1 broiler-fryer chicken (about 3 pounds)
8 cups water
2 leeks, sliced
2 carrots, sliced
1 , large turnips, , peeled and cubed
1 large onion, chopped
1 large potato, peeled and cubed
1 clove garlic, minced
1-1/2 teaspoons salt
1/2 teaspoon pepper
1 tablespoon snipped fresh parsley
1 teaspoon dried thyme
1 cup shredded cabbage
2 cups cooked navy or great northern beans

Steps:

  • In a skillet, cook the sausage until no longer pink. Drain on paper towels set aside. In a large Dutch oven, cook chicken in water until tender. Remove chicken let cool. Strain broth and skim off fat. Return broth to Dutch oven. Add leeks, carrots, turnip, onion, potato, garlic, salt, pepper, parsley and thyme. Bring to a boil. Reduce heat cover and simmer for 30 minutes. Meanwhile, remove chicken from bones and cut into bite-size pieces add to the Dutch oven. Add cabbage, beans and sausage. 1 pound white pea beans
1/2 pound dried peas
1 meaty ham knuckle
3 bay leaves, divided
1 onion, stuck with 2 whole cloves
3 quarts water
6 potatoes, cut small
4 carrots, sliced
4 turnips, diced
5 leeks, cut up
6 garlic cloves, chopped
1 teaspoon thyme
1 small cabbage, shredded
12 sausages
1 grated cheese
1 French bread

Steps:

  • Soak pea beans and dried peas overnight in water (unless they are the quick-cooking type). Next day, drain and put them into a deep kettle with a meaty ham knuckle, 2 bay leaves, onion with cloves, and 3 quarts water. Cook 1 hour and taste for salt (if ham is salty, salt will not need to be added.) Cook until beans are tender, and drain, reserving liquid. In bean liquid, cook potatoes, carrots, turnips, leeks, garlic, thyme, and remaining 1 bay leaf. When tender, add shredded cabbage, the beans and peas, meat from ham bone, and sausages. Cook until cabbage is just tender and soup very thick. Serve with grated cheese on top and French bread. Fun Fact: The silver rush of the 1850s brought Basque people from their European mountain homeland to the Mountain West area of the United States. After the boom went bust, they went back to their heritage as sheep ranchers. In 1959, the first national Basque festival was held in Sparks, Nevada, with nearly 6,000 Basque-Americans in attendance.
