BBQ CHICKEN BURGERS AND CHEESY FRENCH FRIES
A lunch combo sure to please. Recipe was found in an old Sunset magazine and modified for chicken instead of beef.

- Preheat oven to 425°F Combine the 1/3 cup barbecue sauce and the jelly or jam. Mix with a wire whisk until smooth. Set aside.
- Arrange waffle-cut potatoes or thick-cut french fried potatoes in a single layer on an ungreased baking sheet. Sprinkle with chopped bacon. Bake for 8 minutes.
- Meanwhile, in a bowl combine bread crumbs, nuts, the 1 tablespoon barbecue sauce, poultry seasoning, 1/4 teaspoon salt, and 1/8 teaspoon ground black pepper. Add ground chicken; mix well.
- Shape into 8 balls; place 2 inches apart on greased shallow baking pan. Moisten the bottom of a glass and press each ball to about 1/4 inch thickness.
- Place pan of burgers in oven. Bake fries and burgers for 5 minutes. Stir fries; turn burgers. Continue baking burgers and potatoes for 5 more minutes.
- Sprinkle cheese over fries. Brush barbecue sauce mixture on burgers. Bake burgers and potatoes 2 minutes more or until burgers are no longer pink in center and cheese is melted on fries.
- To serve, sprinkle fries with snipped chives. Place mini burgers in cocktail buns with additional barbecue-jelly mixture spooned over. Top with tomato slices and/or lettuce.
- NOTE: Burger and Fries can be pan fried.

CHICKEN FRENCH FRY CASSEROLE
This is ultimate comfort food, and oh so good! One of my family's favorites. You can add all sorts of things, we like to add chopped serrano peppers occasionally for a little spice. I am estimating with the spices, I just sprinkle them in myself! I have also frozen this recipe for OAMC.

- Chop chicken breasts up into bite sized pieces and brown a a large skillet with the butter.
- Preheat oven to 350 degrees F.
- In a large casserole dish, combine french fries, cream of mushroom soup, milk, onion powder, garlic powder, and about half the cheese.
- Stir in browned chicken.
- Top with remaining cheese, then sprinkle with paprika.
- Bake uncovered for 1-1/2 hours, until fries are completely soft.

BBQ CHICKEN BURGERS

- Make the sauce and marinade by mixing everything together in a large bowl, then put a few spoonfuls aside. Slice halfway into the thickest part of each breast and open it up like a book. Flatten down slightly with your hand, then toss in the bowlful of marinade to coat. Chill for as little, or as long, as you have time to.
- Barbecue the chicken for about 10 mins until completely cooked through, turning so it doesn't burn but is nicely charred and sticky. Cook the bacon at the same time until crisp, if using, and toast the buns. Assemble the burgers with lettuce, slices of tomato, onion and the reserved sauce on the side for dolloping on top.

COPYCAT BURGER AND FRIES
With gooey, melty cheese on a double burger with browned and crusty bits, plus fresh, crunchy toppings and a soft, steamy bun served alongside golden fries, this is pretty darn close to the real thing served at that restaurant chain run by those five brothers. Make these burgers and fries at home and save lots of money while satisfying your fast food cravings. Serve the fries with malt vinegar and enjoy with a cold beer... you can't get that at the restaurant!

- Cut potatoes in 1/2-inch wide strips. Place in a large bowl filled with warm water and soak for 20 minutes.
- Pour oil in a Dutch oven and heat over medium-high heat until it reaches 350 degrees F (175 degrees C). Line a rimmed baking sheet with paper towels and set a wire rack on top.
- Drain potatoes well and dry thoroughly with paper towels. Add 1/2 of the dried potatoes to the hot oil and cook, stirring often, until they soften slightly, about 3 minutes. Remove potatoes to the wire rack to drain. Repeat with remaining potatoes. Maintain oil temperature at 350 degrees F (175 degrees C) for finishing fries just before serving.
- Divide ground chuck into 4 portions and flatten to form 1/4-inch thick patties.
- Heat a large skillet over medium-high heat. Add burger patties to the hot skillet and cook undisturbed, until a brown crust has formed around the edges, 2 to 3 minutes. Flip, press down with a spatula to flatten, and cook for 2 more minutes. Flip again, press down once more, then top each patty with a slice of cheese; cook for 1 minute.
- While the burgers cook, spread mustard and ketchup on bottom halves of the buns. Drizzle hot sauce on the top halves of the buns, then spread mayonnaise over top. Layer with lettuce, tomato slices, pickles, and onions.
- Invert 1 patty onto a second patty so the cheese sides are touching. Repeat with remaining 2 patties. Place a stacked patty onto each top bun, and cover with a bottom bun, condiment-side down. Wrap burgers in foil.
- Return fries to the hot oil and cook until golden brown, 3 to 4 minutes. Drain on paper towels and sprinkle with salt. Serve immediately with burgers.

BBQ BACON CHEESY CHICKEN BURGERS

- Preheat grill, skillet, oven, toaster oven, whatever you're using. Crack eggs into mixing bowl. Add milk until it mostly fills in the whites. Add about a cup of BBQ sauce. Whisk until blended. Add in shredded cheese, mix. Add in ground chicken, mix until evenly distributed. Now with the bread crumbs, add about a cup at a time, mixing between additions until you've reached your desired firmness.
- Shape into eight patties or use a hamburger press.
- Cook according to your usual hamburger preferences. Place on buns. Add any condiments or sides of your choice. Enjoy!
