1 1/2 cups cut-up cooked chicken
1 cup frozen corn, medley mix
1 envelope taco seasoning mix
1 (4 ounce) can chopped green chilies (drained)
1 cup shredded cheddar cheese or 1 cup monterey jack cheese
1 1/4 cups milk
3/4 cup biscuit mix
3 eggs

Steps:

  • Heat oven to 400°.
  • Grease 10-inch pie plate.
  • Mix chicken, corn and seasoning mix; spread in plate.
  • Sprinkle with chilies and cheese.
  • Beat remaining ingredients until smooth.
  • Pour over chicken and cheese.
  • Bake until knife inserted in center comes out clean, about 30 minutes.
  • Cool 5 minutes.
  • Cut into wedges.

3/4 cup ketchup
3/4 cup blackberry jam (other jams work too!)
1/8 cup white vinegar
1 teaspoon Worcestershire sauce
2 teaspoons chili powder
1/8 teaspoon salt
1 1/2 lbs chicken pieces or 1 1/2 lbs chicken breasts

Steps:

  • For immediate cooking: Preheat oven to 350º.
  • Place all ingredients into a prepared baking dish, turn chicken to coat. Bake until chicken juices run clear - about 45-60 minutes for chicken pieces, or 20-30 minutes for chicken breasts.
  • For freezing: Place all ingredients into a 1 Gallon freezer bag. Lay flat in freezer.
  • To cook from the freezer: Thaw in the refrigerator.
  • Preheat the oven to 350º.
  • Empty the contents of the bag into a large baking dish and bake until the juices run clear *See above cooking times.

I've seen how much teen boys can eat. I don't know where they put it all, empty limbs maybe? If you're on a budget and you're trying to cook OAMC... this recipe can help a lot. It's affordable to make, easy and I think they're tasty. The recipe calls for those refrigerated biscuit doughs but I've made bread/biscuit dough myself before and it worked just as well. That was a time the refrigerated dough was a bit more than my budget would allow. This makes 60-80 cups depending on what dough you use and the size of the muffin tins you use. It's written to be baked but most of the time they just nuke it, nuked bread.. ew. Anyhow, if you have more than one teen it's a great recipe. If your kids don't like onions just put some onion powder in the mix, they won't know it's there then.

6 lbs ground beef
3 cups frozen corn, thawed
3 cups prepared barbecue sauce (I used 4 sometimes)
2 cups sliced green onions (or onion flakes or powder, to taste)
2 teaspoons salt (optional)
8 (24 ounce) cans large refrigerated biscuits (8 count or 4 cans of 10 ct flaky kind, pulled apart flaky layers in halves)
24 ounces shredded cheddar cheese
pepperoni (optional, makes it more like a pizza) (optional)

Steps:

  • Heat oven to 400 degrees.
  • Brown ground beef, drain.
  • Remove from heat.
  • Add BBQ sauce and corn.
  • Spray your muffin tins with non-stick spray, press a biscuit dough in each, forming a "cup" (some ppl fill and bake them, I don't because the dough seems more cooked if you don't).
  • Bake for 10 minutes.
  • Fill with some meat, top with cheese and pepperoni if you're using it.
  • Cool, freeze on a baking sheet, then put them in baggies with zippy tops. I use quart sized not gallons. Make them easier to handle and they get closed more often by the kids.
  • **To cook**.
  • Take out of freezer, place on cookie sheet, bake at 350 for 10-15 minutes.
  • Or if you're a teen in a hurry (normal!) Just microwave them, but they're not as good of course.

4 lbs chicken pieces (I like boneless skinless chicken breasts)
1 cup of your favorite barbecue sauce
1 teaspoon garlic powder
1 teaspoon onion powder
12 ounces Coke
salt and pepper

Steps:

  • Mix barbecue sauce, garlic powder, onion powder, coke, salt and pepper in large freezer bag.
  • Add chicken.
  • Freeze.
  • When ready to serve thaw in fridge.
  • Cook in oven or grill.
  • In oven, place in pan sprayed with Pam.
  • Cook at 350 for about 30 minutes.
  • Baste with marinade during cooking.

This is a make ahead (Once a Month Cooking) recipe that is bound to help those working families out there who want a home made meal in 30 minutes. You just need to set aside a bit of time on a weekend or evening to do a few meals and you definitely won't regret it! Served with corn tortillas, it is also Gluten Free!

8 ounces dry pinto beans (1 1/4 cups)
1 lb boneless skinless chicken breast
1 (4 ounce) can chopped green chilies
1 teaspoon ground cumin
3/4 teaspoon dried oregano leaves
1/8 teaspoon ground cloves
1/8 teaspoon cayenne pepper
3 cups chicken broth
1 teaspoon minced garlic
1 teaspoon salt
2/3 cup onion, finely chopped
1 cup grated low-fat monterey jack cheese
1 dozen corn tortilla
1 (11 1/2 ounce) jar salsa

Steps:

  • Rinse pinto beans, soak them in cold water overnight, then drain.
  • Cut chicken into 1" cubes; cook until no longer pink in small amount of water.
  • Combine chicken with chilies and seasonings; refrigerate until needed.
  • At the same time, combine beans, chicken broth, garlic, salt, and onion in a large pot; bring to a boil.
  • Reduce heat and simmer until beans are soft, about 1 hours.
  • Add more water if necessary.
  • Combine chicken and spices with beans; simmer 10 more minutes.
  • cool and freeze.
  • Grate cheese, put in a 1 qt bag, and attach it to the freezer container with the chili.
  • To serve, thaw chili and cheese.
  • Simmer chili 30 minutes, stirring occasionally.
  • Top chili with salsa and grated cheese; serve on warmed corn tortillas.

BEEF TAQUITOS (OAMC)

I don't know about you guys but I cheat sometimes and buy taquitos from the freezer section of the grocery. I knew there had to be a way to make me feel less guilty so thus became the taquito recipe. I think you could do this with chicken also, but have yet to do it yet.

5 lbs roast
onion soup mix (optional)
2 cups cheddar cheese, grated
garlic powder
onion powder (optional)
1 1/2 cups salsa or 1 (14 ounce) can diced tomatoes, undrained
1/4 cup onion, finely chopped
48 corn tortillas
cheese sauce (optional)
salsa (optional)
sour cream (optional)
guacamole (optional)

Steps:

  • Cook roast in roasting pan (or slow cooker), pouring onion soup mix, dissolved in 1 cup water, over it.
  • Cook at 325F for 34-38 minutes per pound.
  • Let cool thoroughly overnight in fridge.
  • Finely chop (or shred) roast beef and mix with cheddar cheese, garlic and onion powder, salt and pepper, picante sauce and onion in a large bowl.
  • Portion 1/4 cup mixture onto each corn tortilla in the lower 1/3 of the tortilla.
  • Roll up tortilla.
  • To soften tortillas, microwave between two damp paper towels for a few seconds.
  • To freeze for later, simply put seam side down on cookie sheets and freeze.
  • Flash freeze on wax papered covered cookie sheets.
  • When firm, transfer to ziplock freezer bags.
  • To Re-heat: Thaw, then lightly fry in hot oil until brown and crispy.
  • To eat them now, continue with directions for frying below.
  • Heat electric skillet to 300°F covering bottom with oil.
  • Fry taquitos with open edge down to seal.
  • Turn over fry other side.
  • Serve hot with condiments.

¾ pound lean ground beef
½ cup barbeque sauce
1 tablespoon dried minced onion
1 (12 ounce) package refrigerated biscuit dough
⅓ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease the cups of a muffin pan.
  • In a large heavy skillet over medium heat, cook beef until evenly brown. Drain excess fat. Stir in barbeque sauce and dried onion. Simmer for a few minutes over low heat.
  • Flatten each biscuit, and press into cups of the prepared muffin pan. Make sure the dough comes to the top of the pan. Spoon a portion of the meat mixture into each dough cup.
  • Bake in preheated oven for 12 minutes. Sprinkle with cheese, and bake for 3 more minutes.
