BASIC HAM AND BEAN SOUP



Basic Ham and Bean Soup image

Hearty ham and bean soup. Easy to make and a great way to use a leftover ham bone. This soup also has lots of mixed vegetables.

1 pound dry great Northern beans
8 cups water
½ teaspoon salt
1 ham hock
1 cup chopped carrots
½ stalk celery, chopped
1 cup chopped onion
1 teaspoon minced garlic
1 teaspoon mustard powder
2 bay leaves
2 cups chopped ham
½ teaspoon ground white pepper

Steps:

  • Rinse the beans, sorting out any broken or discolored ones. In a large pot over high heat, bring the water to a boil. Add the salt and the beans and remove from heat. Let beans sit in the hot water for at least 60 minutes.
  • After the 60 minutes of soaking, return the pot to high heat and place the ham bone, carrots, celery, onion, garlic, mustard and bay leaves in the pot. Stir well, bring to a boil, reduce heat to low and simmer for 60 more minutes.
  • Remove ham bone and discard. Stir in the chopped ham and simmer for 30 more minutes. Season with ground white pepper to taste.

2 cans (15-1/2 ounces each) great northern beans, rinsed and drained
2 medium carrots, diced
1 small onion, chopped
2 tablespoons butter
2-1/4 cups water
1-1/2 cups cubed fully cooked ham
1/2 teaspoon salt
1/8 to 1/4 teaspoon white pepper
1 bay leaf

Steps:

  • Mash one can of beans; set aside. In a large saucepan, saute the carrots and onion in butter. Stir in the water, ham, seasonings and whole and mashed beans; cook over medium heat until heated through. Discard bay leaf.

Canning ham and bean soup at home provides quick and easy healthy meals straight from the pantry shelves.

1 Cup Dried Navy Beans
4 Cups Ham or Chicken Broth
3 Cups Ham, diced
1 1/2 Cups Carrot, sliced

Steps:

  • Put the dried beans into a pot and cover with at least 2 inches of water. Cover and let sit overnight.
  • Drain the water from the beans. Put the beans back into the pot. Cover with at least 2 inches of fresh water.
  • Bring the beans to a boil and simmer for 30 minutes.
  • Meanwhile, chop the veggies and ham.
  • Bring the broth to a boil.
  • Fill the jars with equal amounts of beans, ham, and carrots.
  • Top the jars with boiling broth and bean liquid leaving 1 inch headspace in each jar.
  • Remove air bubbles, wipe jar rims. Place lids and rings.
  • Put the jars into pressure canner. Follow the instructions for your canner model.
  • Process at 10 pounds of pressure (adjusting for elevation). Process quarts for 90 minutes. Pints can be processed for 75 minutes.

This is the recipe I use for making 36 pints of soup we use all year long. Minus the cost of the jar it cost me about $0.70 a jar to make including the lid.

4 lbs dried great northern beans
9 cups onions, diced
9 cups carrots, diced
4 1/2 cups celery, diced
9 lbs ham, chopped
1 1/2 cups garlic, granulated
5 quarts ham stock
2 1/4 cups thyme, rubbed
12 bay leaves
4 tablespoons pepper
9 cups cabbage

Steps:

  • 1. Soak the beans overnight or do a quick soak.
  • 2. Add the ham broth, salt, pepper, garlic, thyme and bay leaves to a stock pot and bring it to a simmer.
  • 3. mix the beans, ham, onions, carrots, celery and cabbage together.
  • 4. Fill the jars with bean mixture and leave 1 1/2 inch head space.
  • 5. Fill the jars with simmering ham broth and leave 1 inch head space.
  • 6. place the lids and rings on the jars.
  • 7. Pressure can the jars for your elevation.

2 medium carrots, sliced

½ cup chopped onion
4 (15.5 ounce) cans great northern beans, rinsed and drained
4 cups chicken broth
2 cups cubed fully cooked ham
1 teaspoon chili powder
½ teaspoon minced garlic
¼ teaspoon ground black pepper
1 bay leaf

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Melt butter in the pot; add carrots, celery, and onion. Saute until vegetables are tender, 5 to 7 minutes.
  • Add beans, broth, ham, chili powder, garlic, pepper, and bay leaf to the pot. Close and lock the lid. Select Soup setting according to manufacturers' instructions. Cook until flavors meld, about 30 minutes.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes.
