My vegetarian husband goes crazy over these every time! They are really cheesy, a little bit spicy, and a little bit sweet. Feel free to play around and add chicken or veggies, if you desire. Don't forget the salsa and sour cream!

2 teaspoons olive oil
3 tablespoons finely chopped onion
1 (15.5 ounce) can black beans, drained and rinsed
1 (10 ounce) can whole kernel corn, drained
1 tablespoon brown sugar
¼ cup salsa
¼ teaspoon red pepper flakes
2 tablespoons butter, divided
8 (8 inch) flour tortillas
1 ½ cups shredded Monterey Jack cheese, divided

Steps:

  • Heat oil in a large saucepan over medium heat. Stir in onion, and cook until softened, about 2 minutes. Stir in beans and corn, then add sugar, salsa, and pepper flakes; mix well. Cook until heated through, about 3 minutes.
  • Melt 2 teaspoons of the butter in a large skillet over medium heat. Place a tortilla in the skillet, sprinkle evenly with cheese, then top with some of the bean mixture. Place another tortilla on top, cook until golden, then flip and cook on the other side. Melt more butter as needed, and repeat with remaining tortillas and filling.

1 can (16 ounces) refried beans
1/2 cup canned petite diced tomatoes
2 green onions, chopped
12 flour tortillas (8 inches)
2 cups shredded cheddar cheese

Steps:

  • In a small bowl, mix beans, tomatoes and green onions. Spread half the tortillas with bean mixture. Sprinkle with cheese; top with remaining tortillas., Heat a griddle over medium heat. Place tortillas on griddle in batches. Cook until golden brown and cheese is melted, 2-3 minutes on each side. If desired, serve with sour cream and salsa.

Black Bean Filling, recipe follows
1 cup feta
1/2 cup vegetable oil, for grilling
4 cups cooked black turtle beans, drained
2 cups brown rice, cooked
1 cup corn kernels, cooked
1/2 cup sun-dried tomatoes, rehydrated in water
2 tablespoons cumin
2 tablespoons granulated garlic
1 teaspoon hot red pepper sauce
Salt

Steps:

  • Spread 1 cup shredded white cheddar cheese on 1/2 of a flour tortilla. Then spread on top 1 cup of the Black Bean Filling. Then place 1/4 cup feta cheese. Fold over the tortilla. Repeat with remaining ingredients. Grill on an oiled flat grill, on medium high heat, for 4 to 6 minutes or until both sides are golden brown. Cut each quesadilla into 4 triangles and serve.
  • In a large bowl, mix all ingredients.

About 5 tablespoons unsalted butter
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1 (15 1/2-ounce) can pinto beans, drained
1/2 teaspoon kosher salt, plus more, to taste
16 corn tortillas, preferably white
1 1/2 cups Cheddar (about 3 ounces)
1 ripe Hass avocado
1 ripe tomato, cored and diced
Freshly ground black pepper
1/4 cup sour cream, optional

Steps:

  • Melt 1 tablespoon of the butter in a large skillet, over medium-high heat, with the cumin, coriander, and toast the spices until fragrant, about 30 seconds. Add the beans and mash with a potato masher into a thick paste. Mix in 1/2 teaspoon salt and transfer to a bowl. Rinse and dry the skillet.
  • Lay out half the tortillas on a work surface. Spoon and spread the beans evenly onto the tortillas. Scatter the cheese evenly over the beans, and top with the remaining tortillas.
  • Halve, seed and dice the avocado. Toss with the tomato and season with salt and pepper, to taste.
  • Melt about 1/2 tablespoon of the butter over medium heat in the skillet. Cook the quesadillas one at a time, until golden and the cheese melts, about 1 1/2 to 2 minutes per side. (Add a bit more butter, if needed when they are turned.) Transfer to a cutting board and cool briefly before cutting into wedges. Serve warm with the avocado mixture and the sour cream, if desired.

This is a recipe that my mom and I came up with. My hubby loves it and requests it often. For a quick version, try buying a pre-cooked box of seasoned fajita chicken instead of cooking your own. You can also buy black bean dip in a pinch.

1 medium onion, chopped
1 (15 ounce) can black beans, drained
1/2 cup salsa
1 -2 teaspoon taco seasoning

guacamole
chili powder
vegetable oil
cooking spray

Steps:

  • Saute chicken and onion over med-high heat until chicken is no longer pink and onions are transparent.
  • In food processor or blender, combine black beans, salsa, and taco seasoning and blend until creamy.
  • Distribute beans evenly between 5 tortillas and spread to about 1/4 inch of the edge.
  • Distribute cooked chicken and onion over beans, and sprinkle with cheese.
  • Top with the other tortillas and cook quesadillas over med-high heat until golden brown, flipping once.
  • You can use vegetable oil or cooking spray when cooking quesadillas.
  • While cooking quesadillas, mix sour cream with chili powder and taco seasoning to taste.
  • This makes a killer sour cream dip for the quesadillas.
  • Serve hot with sour cream dip, guacamole, and salsa.

1 onion, finely chopped

1 tsp cumin seeds
400g can pinto or kidney beans, rinsed and drained

handful coriander leaves
200g tub fresh tomato salsa, plus extra to serve

2 large tomatoes, quartered
1 to 2 teaspoons hot sauce
Equipment: a large (2-burner) ridged grill pan (preferably cast-iron)

Steps:

  • Heat dry grill pan over medium heat until hot.
