3 tablespoons olive oil
1 small lemon, very thinly sliced, seeds removed
2 anchovy fillets packed in oil
4 garlic cloves, thinly sliced
1/2 bunch broccoli rabe, chopped
Kosher salt, freshly ground pepper
2 15-ounce cans cannellini (white kidney) beans, rinsed
1/2 cup fresh flat-leaf parsley leaves
2 tablespoons finely grated Parmesan, plus more for serving
Crushed red pepper flakes (optional)

Steps:

  • Heat oil in a large Dutch oven or heavy pot over medium heat. Add lemon, anchovies, and garlic. Cook, stirring occasionally, until lemon is softened and brown in spots and anchovies fall apart, about 5 minutes. Add broccoli rabe; season with salt and pepper and cook, tossing occasionally, until bright green and crisp-tender, about 5 minutes.
  • Add beans and 1/2 cup water to pot. Bring to a boil; reduce heat and simmer, stirring occasionally, until flavors have melded and liquid is reduced by half (you still want it to be saucy), about 5 minutes. Mix in parsley and 2 tablespoons Parmesan.
  • Transfer to a platter, sprinkle with red pepper flakes, if desired, and top with more Parmesan.

1 pound fresh green beans, trimmed
1 tablespoon lemon juice
1 tablespoon olive oil
1 teaspoon minced garlic
½ teaspoon salt
ground black pepper to taste
1 tablespoon grated Parmesan cheese, or to taste

Steps:

  • Place green beans, lemon juice, olive oil, garlic, salt, and pepper into a resealable plastic bag; marinate for 10 minutes.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Spread green beans into a shallow baking pan; place under the broiler and cook until barely tender, about 5 minutes. Sprinkle with Parmesan cheese.

1 teaspoon olive oil
1 medium onion, chopped
2 (15 ounce) cans black beans
garlic
1 (14 ounce) can chicken broth
1 can salsa flavored tomatoes
1 teaspoon dried thyme
3 bay leaves
1/2 teaspoon cumin
1 teaspoon vinegar
1 (15 ounce) can corn kernels, drained

Steps:

  • Heat oil in the soup pot on medium heat.
  • Add onions and cook for 3 minutes, stirring occasionally.
  • While onions brown slightly, pour 1 can of beans and juice into a large cereal bowl using the back of a serving sized spoon, mash the beans until they are broken up and pasty.
  • Add the garlic into the soup pot and cook 1 minute.
  • Raise the heat to high and add broth.
  • Both cans of beans and their juice, stir well.
  • Add tomatoes, thyme, bay leaves, cumin and vinegar and corn if desired.
  • Cover pot and bring to a boil.
  • Reduce heat to low and simmer for 8 minutes, or until ready to serve.
  • Stir often to prevent sticking.

1 pound dried great northern beans
3 smoked ham hocks (about 1-1/2 pounds)
1 large onion, chopped
3 cans (14-1/2 ounces each) reduced-sodium chicken or beef broth
2 cups water
1 tablespoon onion powder
1 tablespoon garlic powder
2 teaspoons pepper
Thinly sliced green onions, optional

Steps:

  • Rinse and sort beans; soak according to package directions., Drain and rinse beans, discarding liquid. Transfer beans to a 6-qt. slow cooker. Add ham hocks. Stir in onion, broth, water and seasonings. Cook, covered, on low 6-8 hours or until beans are tender., Remove meat from bones when cool enough to handle; cut ham into small pieces and return to slow cooker. Serve with a slotted spoon. Sprinkle with onions if desired.

1 small green bell pepper, chopped (1/2 cup)

Steps:

  • In 12-inch nonstick skillet, heat oil over medium heat. Cook ham steak in oil 6 to 8 minutes, turning once, until browned and hot. Remove steak to deep serving platter; cover to keep warm.
  • In same skillet, cook bell pepper and onion over medium heat 2 to 4 minutes, stirring frequently, until crisp-tender. Stir in beans and barbecue sauce. Heat until bubbly. Pour beans over ham.
