BEEF AND SPINACH GREEK PIE
Like the popular Greek Spanakopita, but easier! This pie made with Ground Beef, feta and spinach delivers on flavor without messing up the entire kitchen.

Steps:
- Heat oven to 400°F. Squeeze spinach to remove any excess moisture. Combine spinach, cheese, eggs and oregano in medium bowl. Set aside.
- Heat large ovenproof nonstick skillet over medium heat until hot. Add Ground Beef and onion; cook 8 to 10 minutes, breaking into 3/4-inch crumbles and stirring occasionally. Pour off drippings. Season with salt and pepper, as desired. Add beef mixture to spinach mixture; mix well. Wipe out skillet.
- Combine phyllo strips and oil in medium bowl; toss to coat well. Spray same skillet with nonstick cooking spray. Place 1/2 of phyllo strips in bottom of skillet; top with beef mixture, pressing with back of spoon or spatula to flatten. Top with remaining phyllo strips.
- Bake in 400°F oven 15 to 18 minutes or until beef is heated through and topping is golden brown. Let stand 5 minutes. Cut into 4 wedges to serve.

- In a large bowl, combine flour and oats; cut in the butter until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Roll out dough to fit a 9-in. pie plate. Transfer to plate; trim and flute edges., Preheat oven to 400°. In a large skillet, cook the beef, onion, green pepper and garlic over medium heat until meat is no longer pink; drain. Stir in the ketchup and seasonings. Fold in the spinach; cool slightly. Stir in the eggs and 1 cup cheese until combined; spoon into crust., Bake until the center is set, 25-30 minutes. Sprinkle tomato and remaining cheese around edge of pie. Bake until cheese is melted, 5-10 minutes longer. Let stand for 5-10 minutes before cutting.

- Preheat oven to 375 degrees F (190 degrees C). Spray a 9 inch pie pan with non-stick cooking spray.
- Melt 2 tablespoons butter in a large saucepan over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Squeeze extra water out of the spinach and add the spinach to the skillet. Continue cooking until the spinach is heated through and the extra water evaporates. Spoon mixture into pie pan.
- In a large bowl, beat together eggs and cream. Stir in salt, pepper and nutmeg. Pour into pie pan, top with shredded Swiss cheese. dot with remaining 1 tablespoon of butter.
- Bake 25 to 30 minutes until set and golden brown. Cool 5 minutes before serving.

- Preheat over to 450 degrees F. Cook ground beef, stirring until lightly browned.
- Add onion; saute 2 minutes. Stir in water, vegetables and soup mixes and bring to a boil; boil 2 minutes.

- Preheat the oven to 350 degrees F (175 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir ground beef, onion, and garlic in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease. - Preheat the oven. Pull the stems off the spinach. Bring a large pan of salted water to the boil. Plunge in the spinach leave and boil for 30 seconds, just until the leaves are limp. Drain well, pressing with a wooden spoon to extract all the liquid.
- Melt the butter in a heavy saucepan. Stir in the mince and cook over a high heat, stirring for a few minutes until the meat is well browned. Remove from the heat and stir in the paprika and flour. Gradually add the tomato juice and return to the heat. Stirring all the time bring to the boil and bubble for about 3 minutes until thickened. Stir in the orange rind and juice and season to taste with chilli powder and salt.
- Pour a thin layer of meat mixture on the bottom of a greased 1 litre ovenproof dish. Cover with a layer of spinach and continue with thin layers of meat and spinach, ending with a layer of spinach.
- Whisk the eggs, season with salt and black pepper and stir in the chopped almonds. Pour the mixture over the spinach top, spreading it around to cover all the leaves. Cook just above the centre of the oven for 25 minutes.

- Prepare pastry shell.
- Prick bottom and sides well with fork.
- Bake at 450 for 10 to 12 minutes.
- Remove from over; reduce oven temperature to 350.
- Cook spinach according to package directions, except omit salt.
- Drain well, pressing out excess water.
- Combine eggs, mushroom soup, flour, horseradish and mustard; stir in drained spinach.
- Spread hash in baked pie shell; spoon spinach mixture over.
- Bake, uncovered, at 350 for 45 minutes.
