BACON-CHEESE BISCUITS

Steps:
- Preheat the oven to 425 degrees F. Cook the bacon in a skillet over medium heat until crisp. Drain on paper towels and reserve 2 tablespoons drippings. Finely chop the bacon.
- Whisk the flour, baking powder, baking soda, salt, chopped bacon and chives in a medium bowl. Using a pastry blender or your fingers, work the butter into the flour mixture until it is in pea-size pieces. Stir in the cheese with a wooden spoon. Add the buttermilk and reserved bacon drippings and gently mix until just moistened. The dough will be loose.
- Turn the dough out onto a lightly floured surface and knead 3 to 5 times, just until it comes together. (Don't overknead or the biscuits will be tough.) Roll out to 1/2 inch thick, then cut out biscuits using a floured 2-inch-round cutter. Arrange on an ungreased baking sheet. Reroll the scraps and cut out more biscuits. Brush the tops with melted butter.
- Bake the biscuits until golden brown, 12 to 15 minutes. Serve warm.
BEEFY BISCUIT CASSEROLE
Easy casserole to start on top of the stove and pop into the oven. If you don't have a oven-safe skillet, you can also start off by cooking your beef in the microwave in a casserole dish.

- Preheat oven to 375F.
- Brown ground beef, onion and garlic in an ovenproof skillet.
- Drain fat.
- Add green beans, tomato sauce, basil, salt and pepper, stirring to mix.
- Simmer meat mixture for 5-10 minutes, stirring occasionally.
- Stir cheese into meat sauce.
- Separate biscuits, and cut a hole in the center of each.
- Form biscuits to look like a donut, and place biscuits in a ring around the edges of the skillet, and brush the tops with melted butter.
- Sprinkle meat sauce with sesame seeds before baking.
- Bake for 25 minutes or until biscuits are golden.
BACON BEEFY BAKE
Wow... this is quick, easy, and very decadent. In each bite, you really taste the cheese and smokey bacon flavor. There's a hint of the Montreal and Adobo seasonings, but it's not overpowering. A slice of this and a crisp salad would make an easy meal.

Steps:
- 1. Pre-heat oven to 400 degrees. This recipe works best in a cast iron skillet.
- 2. Take bacon and lay in strips along bottom of skillet like pie slices, meeting in the middle with the extra hanging over the edge of the skillet. Use the whole pound, even if you have to overlap the bacon.
- 3. Place uncooked ground meat in the middle of the skillet and press flat along the bacon until you reach the edge.
- 4. Sprinkle seasoning and cheese over the ground meat.
- 5. Then lift the ends of the bacon and fold over into the middle. Coat the top evenly with the barbecue sauce.
- 6. Place cast iron skillet into the oven and bake for 25 minutes or until ground meat is cooked through. If you would like the bacon on top to be crispy, you can turn on your broiler for the last few minutes to crisp up the bacon on top.
- 7. Remove carefully from the oven and allow to sit for 5 minutes before cutting and serving. Enjoy!

- Preheat oven to 375°. In a saucepan over medium heat, cook beef until no longer pink; drain. Add beans, corn, soup, milk, onion, chili powder and salt; bring to a boil. Remove from heat; stir in cheese until melted. Spoon into a greased 2-1/2-qt. baking dish. Bake, uncovered, 10 minutes., Meanwhile, brush all sides of biscuits with butter; roll in cornmeal.
