SIMPLE AND DELICIOUS BEET GREENS



Simple and Delicious Beet Greens image

Don't throw away those hearty green leaves that top fresh bundles of beets! They have a flavor similar to kale. This simple recipe will will help you make the most of your fresh beets!

2 bunches beet greens, stems removed
1 tablespoon extra-virgin olive oil, or to taste
2 cloves garlic, minced
¼ teaspoon crushed red pepper flakes
salt to taste
freshly ground black pepper to taste
2 lemons, quartered

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the beet greens, and cook uncovered until tender, about 2 minutes. Drain in a colander, then immediately immerse in ice water for several minutes until cold to stop the cooking process. Once the greens are cold, drain well, and coarsely chop.
  • Heat the olive oil in a large skillet over medium heat. Stir in the garlic and red pepper flakes; cook and stir until fragrant, about 1 minute. Stir in the greens until oil and garlic is evenly distributed. Season with salt and pepper. Cook just until greens are hot; serve with lemon wedges.

Number Of Ingredients 10

3 teaspoons olive oil, divided
Greens from 1 bunch beets or you may substitute Swiss chard
1/2 cup finely minced onion, leek or scallions
salt & pepper
1 cup low fat milk
3 large eggs
3 cups of 1 inch cubed whole wheat or artisan bread, preferably day old or stale
1/2 teaspoon fennel seed, ground
8 oz mushrooms, cleaned and sliced
1 cup shredded Gruyere cheese

Steps:

  • 1) Grease an 8 inch square baking dish (6 cup volume) 2) Cut the washed greens from the stems. Cut stems into 1/2 inch slices and cut the leaves into 1/2 strips. Giving you 1 cup stems and 4 cups leaves 3) Heat some of the oil in a large skillet over medium heat. Add the onion and beet stems, cook for about 4 minutes until stems are barely tender. Add the leaves and cook until they have wilted. Add a splash of water, cover and for for 2-3 minutes. Put greens into a large bowl. Season with salt and pepper. 4) Wipe out skillet if needed. Heat a little more oil over high heat and add the mushrooms. Season with salt and pepper. Cook until the water from the mushrooms has evaporated and they start to brown. Add mushrooms to bowl with greens. Allow to cool. 5) Add the bread cubes, fennel seed and 1/2 cup of cheese to the greens. Toss gently and place in baking dish. 6) In the empty greens bowl beat together the milk and eggs, seasoned with salt and pepper. 7) Pour custard mix over the greens in the pan, tucking in any bread cubes. Sprinkle with remaining 1/2 cup cheese. 8) Cover with plastic wrap and refrigerate overnight. 9) Remove from refrigerator and allow the strata to come to room temperature. Preheat the over to 350 degrees. Bake 40 to 45 minutes or until strata is set and cheese is bubbly.

1 clove garlic, thinly sliced
2 teaspoons tomato paste
8 ounces beet greens, stems thinly sliced (about 1 cup), leaves torn (about 4 cups)
1/4 teaspoon coarse salt

Steps:

  • Heat oil in a large skillet over medium heat. Add garlic and tomato paste; cook, stirring, 1 minute. Add beet-green stems and cook, stirring frequently, until softened, about 2 minutes.
  • Add beet-green leaves and 2 to 3 tablespoons water. Cook, stirring frequently, until tender, about 2 minutes. Season with salt and serve.

3 teaspoons olive oil, divided
1 pound fresh asparagus, trimmed and cut into 2-inch pieces
2 medium zucchini, quartered and sliced
1 cup fresh or frozen corn
2 shallots, chopped
3 garlic cloves, minced
4 teaspoons each minced fresh sage, basil and parsley
1/2 teaspoon salt
1/2 teaspoon pepper
1 loaf (1 pound) Italian bread, cut into 1-inch cubes
3 cups shredded Gruyere or Swiss cheese
5 large eggs
1-3/4 cups 2% milk
1/2 cup chopped pecans

Steps:

  • Preheat oven to 350°. In a large skillet, heat 1 teaspoon oil over medium-high heat. Add asparagus; cook and stir until crisp-tender. Transfer to a large bowl., Repeat with an additional 1 teaspoon oil and zucchini; add to asparagus. In same pan, cook and stir corn, shallots and garlic in remaining oil until shallots are tender; stir in herbs, salt and pepper. Add to asparagus mixture; stir in bread cubes., Place half of mixture in a greased 13x9-in. baking dish. Sprinkle with 1-1/2 cups cheese. Repeat layers. In another bowl, whisk eggs and milk; pour over casserole. Sprinkle with pecans. Refrigerate, covered, at least 1 hour., Bake, uncovered, 40-50 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before serving. Freeze option: After assembling, cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake strata, covered, 45 minutes. Uncover; bake 10-15 minutes longer or until a knife inserted in the center comes out clean. Let stand 10 minutes before serving.

Green Strata With Goat Cheese and Herbs image

This herb-infused savory bread pudding makes an excellent brunch dish or a light dinner. It gets its hue from a copious amount of braising greens pureed into the custard - baby kale, mustard greens, chard. Use all of one or a combination. The bread cubes can soak for up to 24 hours before baking, so plan on assembling this in advance. But don't bake it until just before serving. You want the eggs on top to still have their bright yellow, runny yolks. If you're not a goat cheese fan, substitute dollops of fresh ricotta instead.

2 cups whole milk
1/2 cup heavy cream
5 ounces baby braising greens, such as kale, mustard greens, chard or a mix (about 5 cups)
3/4 cup mixed soft herbs, such as parsley, cilantro, dill, mint or chives
1/4 cup grated Parmigiano-Reggiano
1 teaspoon kosher salt, more as needed
Black pepper, as needed
12 large eggs
1 pound day-old brioche or white bread, cut into 2-inch cubes (about 6 cups)
6 ounces cold goat cheese, sliced into 1/4-inch-thick rounds
Aleppo or Turkish pepper, for serving (optional)

Steps:

  • In a medium pot, bring milk and cream to a simmer.
  • Meanwhile, place greens, herbs, cheese, salt and pepper in a food processor fitted with the blade attachment. Once the hot milk mixture comes to a simmer, pour over greens and purée until smooth. Pour into a bowl and let cool completely. Once cool, whisk in 6 eggs.
  • Lightly oil a 9-by-13-inch baking pan. Scatter bread cubes over bottom of pan. Pour custard over bread and press down so the bread absorbs the custard. Cover with plastic wrap and refrigerate for at least 4 hours. If you can, stir bread cubes after an hour or so to encourage an even distribution of custard.
  • When you are ready to bake the strata, heat oven to 350 degrees. Tuck the goat cheese rounds into and on top of the strata. Transfer pan to oven and bake until top is beginning to firm up but is still slightly wet underneath, about 25 minutes.
  • Remove pan from oven and use a spoon to make 6 evenly spaced indentations on the surface of the strata. Crack an egg into each hole and season with salt and pepper. Return pan to oven and continue to bake until strata is cooked through and eggs are just set, 20 to 25 minutes more. Sprinkle with Aleppo or Turkish pepper if desired.
