Steps:
- Spray a waffle iron with nonstick cooking spray and preheat it.
- Sift together the flour, baking powder and 1/2 teaspoon salt in a medium bowl. Beat the egg whites in a second medium bowl until stiff.
- Beat the egg yolks with the milk and butter in a large bowl. Add the flour mixture, stirring until just blended. Fold in the beaten egg whites.
- Place 2 halves of a bacon slice in each waffle grid and close the cover. Cook for 1 minute and then add a scant 1/2 cup batter to each waffle grid. Bake until golden brown, about 5 minutes. Serve with maple syrup.
THE BEST BELGIAN WAFFLES
These waffles are super crisp on the outside, light as a feather inside and so scrumptious! Avoid removing them from the waffle iron too soon; they should be a golden brown. Enjoy!

- Oil the waffle maker.
- Sift the dry ingredients together in a large bowl.
- In separate bowl, separate egg whites and beat until stiff peaks form.
- In a separate bowl, mix together the egg yolks, milk, oil , and vanilla, stir slightly.
- Add to dry ingredients and mix well.
- Fold in egg whites.
- Cook in waffle iron on medium-high heat for around 5-10 minutes.

- Place pancake mix in a large bowl. In another bowl, whisk the egg, milk, sour cream and butter. Stir into pancake mix until blended. Fold in bacon and cheese. , Bake in a preheated waffle iron according to manufacturer's directions until golden brown.

Recently I have been puzzled when I read about an IBM Watson recipe "African style tiramisu with blue cheese". I didn't find this recipe, but I started reflecting about this combination. I had blue cheese and bacon at home, and decided to make my own "Watson style" waffle recipe. With the ingredients you can make 8 large Belgian waffles. With the cheese and the bacon they become really hearty. You can eat them immediately. Real Belgian waffles are made upside down. After you have filled it with the batter, you have to turn it upside down, so that it can distribute equally. After a few minutes you can return and continue to bake until ready. - Preheat a waffle iron.
- In a small bowl, whisk the eggs until fluffy; reserve.
- Next, in a large bowl, mix together the flour, baking powder, sugar and salt. In a third bowl, whisk together the milk, oil and vanilla extract. Add the wet ingredients into the dry ingredients and mix just until combined. Add the bacon, Cheddar and reserved whisked eggs and mix until combined.
- Spray the waffle iron with nonstick spray. Pour in 1/4 cup of the batter and cook the waffles until golden brown. (The waffles can be kept in a low oven to keep warm while the others cook.) Repeat with the remaining batter. Serve the waffles with butter, syrup and/or fried eggs.

- Place the bacon in a medium skillet and heat over medium heat. Cook the bacon until almost entirely crispy, about 10 minutes. Add the shallots and cook for an additional 2 minutes. Using a slotted spoon, scoop the bacon mixture into a medium bowl. Add the cream cheese and gorgonzola and mix well with a rubber spatula. Using a 1-tablespoon ice cream scoop, scoop little balls of the cheese mixture and roll them between your palms to smooth. Place on a plate, cover and refrigerate for at least 1 hour.
- When ready to serve, allow the balls to sit at room temperature for 5 minutes. Mix together the pretzels and chives in a small bowl. Roll the truffles in the crushed pretzel mixture and serve.
