This is a raisin bread that does not need yeast. Easy for those who don't want all the fuss.

3 cups all-purpose flour
½ cup white sugar
3 teaspoons baking powder
½ teaspoon baking soda
1 teaspoon salt
¾ teaspoon ground cinnamon
1 cup raisins
1 egg
¼ cup melted butter
1 cup milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5x3 inch loaf pan.
  • In large bowl measure flour, sugar, baking powder, soda, salt, cinnamon, and raisins. Stir thoroughly. Make a well in center.
  • In small bowl beat egg until frothy. Mix in melted butter and milk. Pour into well. Stir just enough to moisten. Scrape into greased 9x5x3 inch loaf pan.
  • Bake in 350 degree F (175 degree C) oven for 1 hour. Serve plain or toasted with butter.

Cinnamon Raisin and Apple Bread (Abm / Machine) image

This is the nicest spicy fruit loaf I ever made. It is wonderfully moist and really scrumptious! (I make a fruit loaf of one sort or another every other day, and change things a bit from time to time. This is my absolute favourite combination). A note regarding my ingredients - my dried raisins and peel are really quite dry so I increase the water to about 244g (about an extra 3/4 tsp). This means I deliberately make it with the dough looking like it's way too wet during kneading, but the very dry fruit soaks up the excess water. My loaves work out fine despite looking over-moist to start with. I've found through experience that for any bread that will have dried ingredients added late in the kneading process it can be necessary to adjust the water quantity subtly according to how dried the fruit/grains etc are. I use part margarine part butter to reduce fat content slightly. No reason really not to use all butter instead. Butter is nicer :) Makes a loaf of approx 1 1/2 lbs.

240 ml water (at Room Temperature)
350 g white bread flour
1/4 teaspoon vitamin C powder (a flour improver, required if using the wheat bran)
5 g salt (1 TSP, I use 'Lo-Salt')
8 g firm margarine
5 g butter
13 g nonfat dry milk powder (1 1/2 TBLSP approx.)
4 g wheat bran (2 TSP, very heaped)
18 g demerara sugar (1 TBLSP, Brown sugar, basically)
3 1/4 g bread machine yeast
100 g dried seedless raisins
16 g dried mixed citrus peels (2 TSP Heaped)
4 g ground cinnamon (1 TSP heaped)
1 dash nutmeg, to taste (freshly grated)
1 pinch ground cardamom, next to nothing
40 g apples (peeled & chopped into 1/3 inch chunks)
4 g ground cinnamon, mixed with the apple (1 TSP heaped)

Steps:

  • Remove pan from bread machine and place on electronic scales and zero them.
  • Pour in the water (240ml water weighs 240 grams) and weigh in the rest of the dough ingredients in order.
  • Replace the pan in the bread machine and start machine on a raisin or equivalent 'speciality' setting. I prefer 'normal' crust for this.
  • In small bowl weigh the raisins and dried mixed citrus peel. Add the spices and mix together.
  • Into a second small bowl, peel about 1/3 of an average size eating apple (I usually have Braeburn apples handy but pretty much any apple is fine except the tasteless ones like Golden Delicious and Gala). Chop into small chunks somewhere between roughly 1/4 and 1/3 inch in size. Once in the bowl, sprinkle with another teaspoon of ground cinnamon and stir with spoon to cover the bits well (to take the moistness off the sides of apple bits so they mix in better).
  • Add dried fruit & spice mix at 4 minutes before end of final kneading or at the beep if you trust your machine not to mash the fruit like mine always does. (My LG machine beeps nine minutes before end of final kneading which is far too soon - it can reduce dried fruit to the size of grains of sugar during that time!).
  • If you trust your machine not to mash the apple then you could maybe add it a minute or so before kneading finishes. I don't trust mine in the slightest so here's what I do --
  • Wash hands in very cold water and dry well just before the final kneading completes then --.
  • -- when kneading has completed, quickly add the chopped apple and quickly mix it well by hand. (Shouldn't need to remove pan from bread machine to do this (unless it's in an awkward place! :).
  • Slightly more stuff to do for this loaf than usual, but it's absolutely worth it!

2 1/4 teaspoons active dry yeast
3 cups bread flour
3 tablespoons powdered milk
1 1/2 teaspoons salt
1 1/2 tablespoons sugar
1/3 cup vegetable oil
1 whole egg
1 egg yolk
1 cup water
3 cups raisins

Steps:

  • Try to use very moist raisins. If they are dried out, place them in a colander, pour about 1 quart of boiling water over them, and let them drain at least 30 minutes. (Hmm, I wonder if you soaked the raisins in rum overnight, drained the raisins, reserving the rum to substitute for some or all of the water -- Might not be Belgian, but would be good!).
  • Add all ingredients except the raisins in the order recommended by your bread machine manual and process on the bread cycle according to the manufacturer's directions.
  • At the beeper (or at the end of the first kneading in the Panasonic, Sanyo and National brands), add the raisins.
  • Let cool completely before slicing.

This is my father's recipe for authentic Dutch currant bread (krentenbrood). He was a professional baker and made these loaves a lot! This recipe makes 2 regular-sized loaves, or one long loaf.

3 ½ cups dried currants
3 cups raisins
½ cup candied peel
7 ¼ cups bread flour
1 teaspoon ground cinnamon
4 (.25 ounce) packages active dry yeast
2 teaspoons white sugar
1 cup lukewarm water (113 degrees F (45 degrees C)), divided
1 cup milk, at room temperature
2 eggs
1 teaspoon salt
2 teaspoons butter

Steps:

  • Soak currants and raisins in a bowl of warm water for 30 minutes. Drain and pat dry with paper towels; stir in candied peel.
  • Sift flour and cinnamon into a large bowl. Make a well in the center of the flour. Add yeast and sugar to the well; pour in 1/4 cup lukewarm water. Let stand until yeast begins to foam, about 5 minutes.
  • Stir remaining 3/4 cup lukewarm water, milk, eggs, and salt into the flour mixture until dough comes together.
  • Turn dough out onto a lightly floured surface. Add currant mixture; knead until evenly incorporated and dough is smooth and elastic, about 5 minutes. Transfer to a bowl and cover with a damp cloth. Let rise in a warm place until doubled, 45 minutes to 1 hour.
  • Grease two 9x5-inch loaf pans lightly with butter. Flatten dough gently and shape into 2 loaves. Place 1 loaf in each pan and cover with a damp cloth. Let rise in a warm place until puffy, about 45 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake loaves in the preheated oven until firm and dark brown, about 45 minutes. Invert onto a wire rack to cool completely before slicing, about 1 hour.

I found this recipe on allrecipes.com and wanted to post it here for safe keeping. This is the best thing that has ever come out of my bread machine! A light fluffy tasty bread that my family gobbled up and asked for more! Remove your predetermined ideas of banana bread and try this yeast bread, the banana flavor is very subtle, but I think it adds to the nice texture. I am posting the recipe as I found it, but be warned I had to reduce the amount of yeast I used because when i used it with the full 2 1/2 teaspoons the dough spilled over the top of my ABM. I had better results with 2 tsp.

2 bananas, ripe
3 1/2 cups all-purpose flour

  • Place milk, butter, bananas (no need to mash, the machine will do it for you!), flour, sugar, salt, cinnamon, and yeast in the AMB, in the order the manufacturer recommends (I did it in the order listed).
  • Select basic setting, press start. If your bread machine has a fruit/ nut setting add the raisins and nuts at the signal, or around 5 minutes before the kneading cycle has finished.

2/3 cup raisins, soaked in
3 tablespoons vanilla, for at least one hour (or microwaved - see below)
1 1/4 cups buttermilk (or plain milk soured with a tsp of white vinegar)
1 egg
1 teaspoon salt
3 tablespoons butter or 3 tablespoons margarine
2 tablespoons sugar
3 1/2 cups all-purpose flour or 3 1/2 cups bread flour
1 teaspoon cinnamon (optional)
1 1/2 teaspoons yeast

Steps:

  • Select basic or SWEET setting.
  • Special Notes: The recipe calls for 2 tsp of yeast, but I find this way too much yeast- blows the top off the machine!
  • This makes a 1 1/2 lb loaf which basically fills my 2 lb machine.
  • DO use pure vanilla extract for best results.
  • If you don't have the time to soak the raisins ahead of time (I never do) just microwave the raisins and vanilla for 1 minute on high or med-high in a micro-safe bowl.

A lovely lean sort of brioche from Belgium, this particular version comes from Wittaner, arguably the best pastry shop in Brussels, and is featured in Nick Malgieri's "A Baker's Tour." This bread should be cut into relatively thin slices and makes great sandwiches and toast.

2 cups all-purpose flour (do not pack it down in the measuring cup)
2 teaspoons active dry yeast
1/2 cup milk, warm (110 degrees F)
2 egg yolks, large
4 tablespoons unsalted butter, very soft (2 ounces)
1 teaspoon sugar
3/4 teaspoon salt
3/4 cup dark raisin

Steps:

  • Place 1 1/2 cups flour in the bowl of your mixer.
  • In a medium bowl, whisk togathere the yeast and th milk, then whisk in the egg yolks.
  • Stir the egg mixture into the flour.
  • Using the paddle, mix on the lowest speed for 2 minutes; stop the mixer and allow the dough to rest for tene minutes.
  • Add the butter, sugar and salt to the bowl along with the remaining 1/2 cup of flour and mix on the lowest speed until combined; then mix on medium speed until the dough is smooth and elastic, about another 3 - 4 minutes.
  • Beat in the raisins on the lowest speed (if necessary, plump the raisins in hot water to soften, drain, pat dry and add).
  • Scrape the dough into a buttereed bowl and turn the dough over so that the top is buttered.
  • Cover with plastic wrap and allow to rise til doubled, about an hour.
  • Meanwhile butter a loaf pan and line the bottom with parchment.
  • After the dough is risen, scrape it onto a floured board.
  • Press the dough into a rectangle brush off any excess flour; stretch th dough into a rectangle and then fold like a business letter about the length of your loaf pan.
  • Tuck in the ends and lay the loaf in the pan, seam side down.
  • Butter a piece of plastic wrap and cover the bread with it (buttered side down) and allow the loaf to rise til doubled, about an hour.
  • Preheat the oven to 400 degrees F.
  • When the loaf has completely risen, place on a rack in the middle of the oven and bake until the bread is a deep golden color and reaches an internal temperature of 200 degrees F., about 30 minutes.
  • Unmold onto a rack and cool on its side.
  • Eat it then or wrap and freeze.
