BEER MARINADE



Beer Marinade image

1/2 cup olive oil
1 cup dark beer
1/4 cup lemon juice
4 cloves garlic, smashed
1 1/2 teaspoons sea salt
1 teaspoon freshly ground black pepper
2 bay leaves
1 teaspoon dry mustard
1 teaspoon basil
1 teaspoon oregano
1 teaspoon thyme

Steps:

  • To prepare the marinade, whisk together the oil, beer, and lemon juice. Add the garlic, salt, pepper, bay leaves, mustard, basil, oregano, and thyme. Mix well.

Yield 2 1/2 cups, enough for 2-3 pounds of meat

Number Of Ingredients 13

2 cups beer (the stronger the beer the stronger the flavor)
1/2 cup honey mustard
1/4 cup canola oil
1 teaspoon coarse salt
1 teaspoon pepper
1 medium onion, thinly sliced
1/2 bell pepper, finely chopped
4 scallions, trimmed and chopped
4 garlic cloves, flattened with the side of a cleaver
2 slices fresh ginger, flattened with the side of a cleaver
1 tablespoon pickling spices
1 tablespoon paprika
1/2 teaspoon caraway seed

Steps:

  • Whisk beer, mustard, oil, salt and pepper together in a nonreactive bowl until salt dissolves.
  • Stir in remaining ingredients.
  • This will keep up to 3 days if covered and refrigerated.

1/2 cup Worcestershire sauce
1/2 cup red wine vinegar
1/8 cup Tabasco sauce
1 onion, chopped (I use 1015, if available)
1/4 cup packed brown sugar
6 -8 cloves garlic, pressed
1/2 tablespoon crushed red pepper flakes
1/2 teaspoon onion salt
1/4 teaspoon pepper

Steps:

  • Mix all ingredients in a shallow glass baking dish, large enough to hold meat in one layer.
  • Cover and refrigerate.
  • Marinade meat for at least 30 minutes, The longer you let it sit, the better!
  • Recipe can be doubled for large quantities of meat.

¾ cup soy sauce
¼ cup rice wine vinegar
⅓ cup olive oil
⅓ cup orange juice
2 tablespoons minced fresh ginger root
2 tablespoons minced garlic
1 ½ tablespoons ground mustard
1 ½ tablespoons brown sugar

Steps:

  • In a medium bowl, stir together soy sauce, vinegar, olive oil, orange juice, ginger, garlic, mustard, and brown sugar. Pour over meat in a shallow container. Make sure all meat is submerged in marinade. Cover, and refrigerate for at least 6 hours.

½ cup vegetable oil
½ cup white vinegar
1 cup white sugar
1 (15 ounce) can green beans, drained
1 (15 ounce) can baby peas
1 (15 ounce) can white corn, drained
1 (2 ounce) jar pimentos, drained
1 cup chopped celery
1 cup chopped onion
salt and freshly ground black pepper to taste

Steps:

  • In a saucepan over medium-high heat, bring oil, vinegar, and sugar to a boil. Reduce to a simmer, and stir until sugar is completely dissolved. Refrigerate 1 hour.
  • In a medium bowl, mix together the green beans, peas, corn, pimentos, celery, and onion. Pour in dressing, and toss to coat. Cover and refrigerate 8 hours, or overnight. Season with salt and pepper, and serve chilled.
