BAKED RAISIN BRAN (BARS)

I created these raisin bran bars in hopes of getting my family started with something healthy in the morning. Good anytime! I try not to use refined sugar so I made with splenda. You may have to adjust amount of sweetner, depend on how sweet the cereal is to start out with. I used regular splenda, not the one for baking. If using splenda for baking or splenda brown sugar, be sure to cut in half.

3 cups Raisin Bran cereal
1 1/2 teaspoons baking powder
1/4 cup turbinado sugar or 1/4 cup brown sugar
1/2 cup Splenda sugar substitute
1/2 cup applesauce
1/2 cup milk
2 eggs, beaten
1 1/2 teaspoons vanilla

Steps:

  • Preheat oven to 325 degrees F.
  • Mix all dry ingredients together, crumbling raisin bran.
  • Mix wet ingredients with dry.
  • Pour into greased 8x8 pan and bake 45 minute.

1 cup raisins
1 cup water
1/2 cup salad oil or 1/2 cup shortening
1 slightly beaten egg
1 cup sugar
1 3/4 cups flour
1/4 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon allspice
1/2 teaspoon clove
1/2 cup walnuts, chopped

Steps:

  • Combine raisins and water in a saucepan; bring to a boil. Remove from heat. Stir in salad oil, cool to lukewarm. Stir in sugar and egg. Sift together dry ingredients; beat into raisin mixture. Stir in nuts. Pour batter into greased 9 x 13" pan. Bake at 350* for 20 minutes or until done. When cooled cut into bars. Dust with powdered sugar.

Yield Makes 36 bars

Number Of Ingredients 9

2 sticks (1 cup) unsalted butter, softened
1 cup firmly packed light brown sugar
2/3 cup tahini (sesame seed paste)
1 large egg
1 1/2 teaspoons vanilla extract
1/2 teaspoon salt
2 cups all-purpose flour
1 cup raisins, chopped
1/2 cup benne (sesame) seeds, toasted lightly and cooled

Steps:

  • Preheat oven to 350°F.
  • In a large bowl with an electric mixer cream butter and sugar until light and fluffy. Add tahini and beat until combined well. Beat in egg, vanilla, and salt. Add flour and beat batter until just combined. Beat in raisins and benne seeds. Spread batter evenly in a buttered jelly-roll pan, 15 1/2 by 10 1/2 by 1 inch, and bake in middle of oven until a tester comes out clean, about 16 to 20 minutes. Let cool in pan on a rack and cut into 36 bars. Bars may be made 3 days in advance and kept in an airtight container.
