Berbere-Rubbed Rib-Eye Steaks with Grilled Lemon image

These easy steaks are a wonderful centerpiece for a casual summer meal. They get a flavor boost from berbere, an Ethiopian chile and spice blend that has a hint of sweetness from cinnamon and cardamom. Grilled asparagus or tabbouleh salad makes an excellent accompaniment, or you can fan the steak slices over lightly dressed greens and serve with grilled bread for a complete meal. 2 (1.0-pound) boneless rib-eye steaks
1 1/2 teaspoon berbere spice blend
1/2 teaspoon coarse sea salt, slightly more if your berbere doesn't include salt
1 large lemon, quartered, seeds removed
1 1/2 teaspoon extra-virgin olive oil, divided

Steps:

  • Prepare a grill for medium heat cooking, making sure there is a cool area where you can move steaks in case of flare-ups.
  • Sprinkle steaks on both sides with berbere and salt.
  • Brush cut sides of lemon wedges with 1/2 teaspoon of the oil.
  • Grill steaks, flipping halfway through, until they reach the desired doneness, 6 to 8 minutes per side for medium-rare.
  • Grill lemon wedges on cut sides until browned and hot, about 5 minutes.
  • Transfer steaks to a cutting board and let rest for 10 minutes.
  • Slice thinly and drizzle with remaining 1 teaspoon oil. Serve with lemon wedges to squeeze over top.

3 tbsp. freshly cracked black pepper
2 tbsp. kosher salt
2 tbsp. grated lemon zest, dried for 1 hour
2 tsp. garlic powder
2 tsp. mustard powder
2 tsp. onion powder
1 tsp. sugar
8 boneless rib-eye steaks (about 1 inch thick)
Kosher salt, to taste
1 stick salted butter, melted

Steps:

  • For the lemon-pepper seasoning: Stir together the pepper, salt, lemon zest, garlic powder, mustard powder, onion powder and sugar in a small bowl.
  • For the steaks: Preheat a grill to medium high. Season the steaks lightly with salt and rub the lemon-pepper seasoning on both sides. Brush the steaks liberally with the melted butter
  • Grill the steaks 1 minute 45 seconds, then rotate the steaks 90 degrees. Cook 2 minutes, then go ahead and flip the steak over to the other side. After 1 minute 45 seconds on the second side, rotate 90 degrees and finish cooking for 2 minutes, or until the steaks reach 115˚ to 120˚ on an instant-read thermometer (the steak will continue to cook slightly after you've removed it from the grill). This is medium rare- my favorite. Remember, you can always throw a steak back on the grill if it's too red for your taste but you can't undo it if it's overcooked!

HERBED BUTTER RIB EYE STEAKS

Picture rib eye steaks cooked outdoors on your barbecue grill, with a delicious herb butter melted on top. Herb butter must be made 2 hours in advance and refrigerated.

1/2 cup softened butter
1 teaspoon minced garlic
1/4 teaspoon lemon juice
2 teaspoons fresh parsley, chopped fine
2 rib eye steaks
1/2 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • In a small bowl, combine butter, garlic, lemon juice and parsley.
  • Place mixture on wax paper and roll into a 1" log, wrap tightly and refrigerate for 2 hours or until firm.
  • Preheat grill.
  • Mix onion powder, salt and pepper together and sprinkle on each side.
  • Place steak on grill and cook for about 7 minutes.
  • Turn the steaks over and place a 1/4" pat of the butter on each steak.
  • Cook for another 7 to 9 minutes for medium rare or until done as desired.
  • Remove steaks from grill and place an additional 1/4" slice of herbed butter on each steak and allow to melt.
  • Store the rest of the herbed butter in refrigerator.

1 cup coarsely chopped fresh cilantro
Juice of 1 lemon
For the steaks:
4 boneless rib-eye steaks (about 12 ounces each and 1 inch thick)
1 tablespoon olive oil
Kosher salt and freshly ground black pepper
3 tablespoons olive oil
2 dried chiles de arbol
8 large tomatillos, husked and rinsed
3 medium heirloom tomatoes (about 1 1/4 pounds)
2 red jalapeno peppers
1 green jalapeno pepper
1 bunch scallions, trimmed
Kosher salt
Vegetable oil, for the grill
2 cloves garlic

Steps:

  • Make the salsa: Prepare a grill for high heat. In a small heavy skillet, combine the olive oil and chiles de arbol and cook over medium heat, about 4 minutes, or until the chiles are toasted and beginning to blacken. Remove the chiles and set aside. Allow the chile oil to cool slightly.
  • On a large baking sheet, toss the tomatillos, tomatoes, jalapenos and scallions with the chile oil and season with salt. Lightly oil the grill grates with vegetable oil, place the vegetables on the grill and close the lid. Cook the vegetables, turning only once, until they are blackened as much as possible; don't stress out if the tomatoes and tomatillos break open and begin to fall apart-it's a sign that they're cooked through. Aim for these cooking times: 8 minutes per side for the tomatoes and tomatillos, about 6 minutes per side for the jalapenos and about 3 minutes per side for the scallions. Using tongs, transfer the vegetables to the baking sheet and let cool slightly. Meanwhile, let the steaks stand at room temperature, 30 minutes.
  • Trim the stems from the jalapenos and remove the seeds, if desired. Do not remove the charred skins. In a blender, combine the blackened vegetables, the garlic, cilantro, lemon juice and the toasted chiles de arbol and blend until smooth. Season the salsa to taste with salt. (You will have about 5 cups salsa; it will keep for up to 5 days, stored airtight in the refrigerator.)
  • Make the steaks: Reduce the grill heat to medium high. For a gas grill, spread the drained wood chips in the smoker box and close it; alternatively, spread the wood chips in the foil pan. Place the smoke box or foil pan on a lit burner. For a charcoal grill, sprinkle the drained wood chips over the hot coals.
  • Coat the steaks with the olive oil and season with salt and pepper. When you see the wood chips beginning to smoke, set the steaks on the grill grate and grill them 4 to 5 minutes per side, or until the meat feels only slightly resilient when pressed with a fingertip, for medium rare. Transfer the steaks to a carving board and let rest, uncovered, about 5 minutes. Serve the steaks with the salsa.

1 tablespoon garlic powder
1 tablespoon paprika
2 teaspoons dried ground thyme
2 teaspoons dried ground oregano

1 teaspoon lemon-pepper seasoning
1 teaspoon cayenne pepper
1 teaspoon crushed red pepper flakes
4 beef ribeye steaks (1-1/2 inches thick and 8 ounces each)

Steps:

  • Combine all seasonings. Sprinkle over steaks, pressing mixture into both sides to help it adhere. Refrigerate, covered, for at least 1 hour or up to 24 hours., Remove steaks; blot with paper towels to remove any surface moisture, taking care to leave as much garlic mixture on steaks as possible. If desired, sprinkle with additional kosher salt. Grill steaks, covered, turning occasionally, on a greased grill rack over medium indirect heat until a thermometer reads 110°. Move steaks to direct heat; continue grilling until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., Let stand 5 minutes before slicing. Place on a warm serving platter; cut across grain into thick slices.
