The best apple crumble image

You can't beat a traditional apple filling topped with crispy, buttery crumble - classic comfort food at its best

575g Bramley apple (3 medium apples), peeled, cored and sliced to 1cm thick
2 tbsp golden caster sugar
175g plain flour
110g golden caster sugar
110g cold butter
1 tbsp rolled oats
1 tbsp demerara sugar
double cream , clotted cream or custard, to serve

Steps:

  • Heat the oven to 190C/170 fan/gas 5.
  • Toss 575g peeled, cored and sliced Bramley apples with 2 tbsp golden caster sugar and put in a 23cm round baking dish at least 5cm deep, or a 20cm square dish. Flatten down with your hand to prevent too much crumble falling through.
  • Put 175g plain flour and 110g golden caster sugar in a bowl with a good pinch of salt.
  • Slice in 110g cold butter and rub it in with your fingertips until the mixture looks like moist breadcrumbs. Shake the bowl and any big bits will come to the surface - rub them in. Alternatively, pulse in a processor until sandy (don't over-process).
  • Pour the crumb mix over the apples to form a pile in the centre, then use a fork to even out.
  • Gently press the surface with the back of the fork so the crumble holds together and goes crisp, then lightly drag the fork over the top for a decorative finish.
  • Sprinkle 1 tbsp rolled oats and 1 tbsp demerara sugar over evenly, if you wish.
  • Set on a baking tray and put in the preheated oven for 35-40 minutes, until the top is golden and the apples feel very soft when you insert a small, sharp knife. Leave to cool for 10 minutes before serving.

2 lb / 1kg Granny Smith Apples( green apples), weight before peeling
1 tbsp white flour
1/2 cup white sugar
2 tbsp lemon juice (or water)
1/2 tsp ground cinnamon
1 cup rolled oats / oatmeal ((quick cooking is ok))
1 cup white flour
1 cup brown sugar (loosely packed)
1/2 tsp baking powder
1 tsp cinnamon powder
125g / 1/2 cup unsalted butter, melted
Pinch of salt
Vanilla ice cream

Steps:

  • Preheat oven to 350F/180C.
  • Peel apples, then cut into 1.5cm/ 3/5" cubes.
  • Place apple in a bowl. Sprinkle with flour, sugar and cinnamon, then pour over lemon juice. Toss, then spread out evenly in a 1.5 litre/1.5 quart baking dish.
  • Place Topping ingredients in a bowl. Mix until clumps form, like wet sand (see video). Spread over the apples, crumbling with fingers if required to get that crumbly topping.
  • Bake for 30 to 40 minutes or until golden brown. Remove, cover loosely with foil to keep warm and let stand for 10 minutes before serving (let's the apple filling come together).
  • Serve warm with vanilla ice cream!

4 large Golden Delicious apples (about 3 pounds)
1/4 cup sugar
1 lemon, juiced
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
1 cup walnuts or pecans, roughly chopped
1 cup all-purpose flour
1 1/4 cups rolled oats
1/2 cup packed dark brown sugar
1 teaspoon ground cinnamon
Pinch fine salt
8 tablespoons (1 stick) cold butter, cut into small pieces
Vanilla ice cream, for serving, optional

Steps:

  • Position an oven rack in the center of the oven and preheat to 350 degrees F.
  • Peel, core, and slice apples into 1/4-inch slices. Place apples in a large mixing bowl and toss with sugar, lemon juice, flour, and cinnamon. Pour into a lightly greased 9 by 13-inch baking dish, and spread out into an even layer. Set aside.
  • In another large bowl, mix together the nuts, flour, oats, sugar, cinnamon, and salt for the topping. Using a pastry cutter or your fingers, gently work in the cold butter until pea-sized lumps are formed.
  • Top apples evenly with mixture and bake until apples are bubbly and topping is golden brown, about 45 minutes, rotating once halfway through cooking.
  • Serve warm or at room temperature with vanilla ice cream.

These are great little "light as a feather" and meltingly crisp English style biscuits, or cookies. This recipe is the slightly adapted recipe from the Be-Ro Flour cookbook - they suggest lard, but I don't "do" lard! Melting Moments ALWAYS made an appearance on my grandmother and mum's afternoon tea table, and we also had them popped into our lunch boxes for school. The recipe is SO easy to rustle up and they stay crisp and fresh for up to 5 days in an airtight tin. You can roll them in coconut or oats, I prefer coconut - but I am sure they would be just as nice with oats, which is a suggested alternative. Children and "big children" love these, and they really are melting moments, great with a cuppa English tea!

5 ounces soft butter or 5 ounces soft margarine
3 ounces caster sugar
2 teaspoons vanilla essence or 1 teaspoon vanilla extract
5 ounces self raising flour
desiccated coconut or oats
glace cherries

Steps:

  • Heat oven to 180ºC, 350ºF, Gas Mark 4. Grease two baking trays.
  • Cream the butter or margarine with the sugar until very light and fluffy. Beat in the vanilla essence or extract.
  • Stir in the flour and mix well.
  • Roll walnut sized pieces of the mixture into balls and toss in rolled oats or desiccated coconut.
  • Cut each glace cherry into quarters, for quarter for each melting moment.
  • Place on baking trays, flatten slightly and place a small piece of cherry on each biscuit. Bake for 10-15 minutes until golden brown but NOT dark brown.
  • N.B. To help shape "ball" type biscuits, slightly dampen the hands.

3 -4 ounces granulated sugar, depending on the sharpness or tartness of the fruit
6 ounces plain flour
3 ounces unsalted butter

Steps:

  • Preheat oven to 375°F.
  • Prepare fruit according to type.
  • Place the fruit in a 1-quart oven-proof dish in layers with granulated sugar.
  • Sift flour into a bowl.
  • Rub butter into flour until mixture resembles fine breadcrumbs.
  • Stir in the caster sugar.
  • Sprinkle the crumble mixture thickly and evenly over the fruit.
  • Press down lightly with palm of hand then smooth the top with a knife.
  • Bake for 15 minutes.
  • Reduce the temperature to 350°F.
  • Cook for a further 45 minutes or until top is lightly brown.
  • Serve with fresh double cream, crème fraîche, or real custard.

Obviously any sort of fruit can be used here. I love it with berries or apricots in summer, in spring it's good with rhubarb, and in autumn I use half blackberries and half apples. Whatever fruit you use, though, the great thing about the topping is that it bakes to a lovely short, crumbly crispness, which, combined with the toasted almonds, makes it the best ever.

700g Bramley apples
225g Cox's apples
25g light brown soft sugar
1 level teaspoon ground cinnamon
¼ teaspoon ground cloves
75g chilled salted butter, cut into small dice
175g self-raising flour
1 level dessertspoon ground cinnamon
110g demerara sugar
110g whole almonds, skin on
Clotted cream or Isigny Ste Mere creme fraiche

Steps:

  • Begin by preparing the apples. I always find the best way to do this is to cut them first into quarters, then pare off the peel with a potato peeler (or leave it on, whichever you prefer) and slice out the cores. Now cut them into thickish slices and toss them in a bowl with the sugar, cinnamon and ground cloves, then place them in the baking dish. For the crumble all you do is place the butter, sifted flour, cinnamon and sugar in a processor and give it a whiz till it resembles crumbs. Next add the almonds and pulse, until they are roughly chopped and chunky. If you don't have a food processor, in a large bowl, rub the butter into the sifted flour until it resembles crumbs, then stir in the cinnamon, sugar and almonds, which should be roughly chopped by hand. Now spoon the crumble mixture all over the apples, spreading it right up to the edges of the dish, and, using the flat of your hands, press it down quite firmly all over; the more tightly it is packed together the crisper it will be. Then finish off by lightly running a fork all over the surface. Bake the crumble on the centre shelf of the oven for 40-45 minutes, until the topping is well browned and crisp. Leave it to rest for 10 minutes before serving with well-chilled crème fraîche or clotted cream.
