A delicious parfait. If you prefer, you can replace the blueberries with raspberries. Preparation time: 10 minutes. This recipe is from The WEBB Cooks, articles and recipes by Robyn Webb, courtesy of the American Diabetes Association.

1 ½ cups sliced fresh strawberries
1 ½ cups fresh blueberries
1 cup part-skim ricotta cheese
1 tablespoon nonfat evaporated milk
1 tablespoon white sugar
1 ½ tablespoons Marsala wine
1 ½ tablespoons chopped toasted hazelnuts

Steps:

  • Layer the strawberries and blueberries in 6 individual serving dishes.
  • Using an electric beater, whip together the ricotta cheese, milk, sugar and wine. Spoon a portion of the cream over each fruit serving, top with toasted hazelnuts, and serve.

Red, white and ooh! Fork into sweet sugar cookie crust, creamy filling and a bursting-with-berries top.

1 pouch (1 lb 1.5 oz) Betty Crocker™ sugar cookie mix
1/2 cup butter or margarine
1 egg
1 cup white vanilla baking chips (6 oz)
1 package (8 oz) cream cheese, softened
1/2 cup sugar
2 tablespoons cornstarch
1/3 cup water
1 1/2 cups sliced fresh strawberries
2 cups fresh blueberries

Steps:

  • Heat oven to 350°F. Spray bottom of 15x10x1-inch pan with cooking spray. In large bowl, stir cookie mix, butter and egg until soft dough forms. Press in bottom of pan. Bake 12 to 15 minutes or until light golden brown. Cool completely, about 30 minutes.
  • In small microwaveable bowl, microwave baking chips uncovered on High 45 to 60 seconds or until chips are melted and can be stirred smooth. In medium bowl, beat cream cheese with electric mixer on medium speed until smooth. Stir in melted chips until blended. Spread mixture over crust. Refrigerate while making topping.
  • In 2-quart saucepan, mix sugar, cornstarch and water. Cook over medium heat, stirring constantly, until mixture boils and thickens. Cool 10 minutes.
  • In medium bowl, gently stir strawberries and 1/4 cup cornstarch mixture together until well mixed. In another bowl, gently stir remaining 1/4 cup cornstarch mixture and blueberries together until well mixed. Spoon strawberry mixture lengthwise over half of cream cheese mixture and blueberries over remaining half of cream cheese mixture. Refrigerate 30 minutes.
  • Cut bars in half lengthwise; cut each half into eight 3 1/2-inch triangles. Store in refrigerator.

3 ounces cream cheese, softened
1 cup marshmallow creme
1 cup sliced fresh strawberries
1 cup fresh blueberries

Steps:

  • Cut pound cake in half. Cut one half into 1/2-in. cubes (save remaining cake for another use). In a small bowl, beat cream cheese and marshmallow creme until smooth., In four small serving dishes, layer the cake cubes and fruit. Top with cream cheese mixture. Chill until serving.

2 cups fresh or frozen cranberries
1 cup fresh or frozen blueberries
1/2 cup sugar
1/2 cup water
1 cup whole-milk ricotta cheese
4 ounces cream cheese, cubed and softened
1/4 cup confectioners' sugar
1/2 teaspoon vanilla extract
1 loaf (10-3/4 ounces) frozen pound cake, thawed and cut into 1/2-in. cubes

Steps:

  • In a small saucepan, combine cranberries, blueberries, sugar and water; bring to a boil, stirring to dissolve sugar. Reduce heat; simmer, uncovered, 5 minutes. Transfer to a small bowl; cool completely. Refrigerate, covered, at least 1 hour or until cold., Place ricotta cheese, cream cheese, confectioners' sugar and vanilla in a small food processor. Process until smooth., In each of eight parfait glasses, layer 1 tablespoon berry sauce, 1/3 cup cake cubes, 2 tablespoons ricotta mixture and 2 tablespoons berry sauce. Repeat cake and cheese layers; top with 1 tablespoon berry sauce. Refrigerate, covered, until serving or up to 2 hours.
