BILLIE'S ITALIAN CREAM CAKE WITH BLUEBERRIES



Billie's Italian Cream Cake with Blueberries image

5 eggs, separated
1 stick butter
1 cup vegetable oil
1 cup granulated sugar
1 tablespoon vanilla extract
1 cup sweetened flaked coconut
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 cup buttermilk (or 1 cup milk mixed with1 teaspoon white vinegar)
Two 8-ounce packages cream cheese
1 stick butter
2 teaspoons vanilla extract
2 pounds powdered sugar
1 cup chopped pecans
1 cup sweetened flaked coconut
1 1/2 pints or 3 small containers blueberries

Steps:

  • For the cake: Preheat the oven to 350 degrees. Grease and flour two 9-inch round cake pans.
  • Beat the egg whites until stiff. Set aside.
  • In a large bowl, cream together the butter, oil and granulated sugar until light and fluffy. Mix in the egg yolks, vanilla and coconut.
  • In a separate bowl, mix the flour, baking soda and baking powder. Alternate adding the buttermilk and dry ingredients to the wet ingredients. Mix until just combined, and then fold in the egg whites.
  • Pour evenly into the prepared pans and bake until a toothpick comes out clean, 20 to 25 minutes. Remove from the oven and allow to cool for 15 minutes. Then turn the cakes out onto cooling racks and allow to cool completely.
  • For the frosting: In a medium bowl, combine the cream cheese, butter, vanilla and powdered sugar. Beat until light and fluffy. Stir in the pecans and coconut.
  • To assemble: Cut each cake in half lengthwise so you are left with 4 layers. Spread the first layer with frosting and top with blueberries. Repeat the cake, frosting and blueberry layers until you have 4 layers of cake. Arrange more blueberries around the edge of each layer for structure.

1/2 pint blueberries
1/2 pint raspberries
1/4 cup port
1/4 cup plus 1 tablespoon sugar
4 large egg yolks

Steps:

  • Cook's Note: For a nonalcoholic version, substitute the port with 1/4 cup white grape juice mixed with 1/2 teaspoon vanilla extract.
  • In a medium bowl, combine the berries with 1 tablespoon port and 1 tablespoon sugar. Allow to sit and macerate while you prepare the zabaione.
  • Bring a small pot of water to a boil over medium heat. In a bowl that will fit over the top of the pot, beat the egg yolks with the remaining 1/4 cup sugar with an electric hand mixer until pale. Place the bowl over simmering water and, with the beater running slowly, drizzle in the remaining 3 tablespoons port. Continue to beat until the mixture becomes very thick and has doubled in volume, 5 to 10 minutes. Remove from the heat.
  • Divide half the berries among 4 serving glasses. Top each with a generous dollop of zabaione, garnish with the remaining berries and serve immediately.

½ cup whipped cream
2 milkshake glasses, 8 ounce (225 G)

Steps:

  • In a medium bowl, combine the prosecco and strawberries. Let sit for 1 hour.
  • Strain the prosecco from the strawberries. Add the prosecco and most of the strawberries to the blender, reserving a few strawberries for garnish. Add the strawberry ice cream and blend on high speed until smooth.
  • Divide the milkshake between 2 glasses, top with the whipped cream, and garnish with the prosecco-soaked strawberries.
  • Enjoy!

This is a simple, lovely way to serve fresh summer berries. I made this for brunch today and found it a refreshing end to the meal. This dish could also be made year-round using unsweetened frozen berries that have been thawed. Note: Preparation time includes time needed for berries to sit at room temperature.

1/2 cup raspberries
1/2 cup strawberry, hulled and quartered
1/2 cup blueberries
1 teaspoon lemon zest
2 tablespoons granulated sugar
1/4 cup light cream (or half-and-half or milk)

Steps:

  • In a medium bowl, combine berries, lemon zest and sugar. Gently toss, being careful not to break the blackberries and raspberries too much.
  • Allow berry mixture to sit at room temperature for 30 minutes until berries begin to create their own juice, and sugar is dissolved.
  • Serve in four small serving bowls (or dessert bowls) with around 2 tbs. cream drizzled attop per bowl.

4 tbsp Crème de Cassis (blackcurrant liqueur)
650g strawberry , hulled and halved if large
2 x 125g punnets raspberries
2 x 125g punnets blueberries
2heaped tbsp golden caster sugar
578ml carton single cream to serve

Steps:

  • Measure the cassis into the base of a large serving bowl and stir in the strawberries. Pile the raspberries and blueberries on top and scatter over the sugar, but don't mix yet.
  • Cover the bowl with cling film. Just before serving gently toss the berries and serve with a big jug of cream.
