½ cup fresh raspberries
1 teaspoon white sugar
¼ cup balsamic vinegar
¼ cup extra-virgin olive oil
2 tablespoons Dijon mustard
2 tablespoons lemon juice
2 tablespoons honey

Steps:

  • Muddle blueberries, strawberries, and raspberries together with sugar in a bowl until combined.
  • Pour mixture into a blender and add balsamic vinegar, oil, Dijon, lemon juice, and honey. Blend until smooth.

  • Place the strawberries in a blender; cover and process until pureed. Add lemon juice and sugar; cover and process until blended. 3 tbsp extra-virgin olive oil
3 tbsp sunflower oil
2 tbsp red or white wine vinegar
3 large ripe strawberries , hulled and finely chopped
½ x 150g punnet raspberries , roughly crushed
about 4 tbsp redcurrants , stripped from stalks and lightly crushed with a fork
4-5 tbsp blueberries , roughly crushed or chopped

Steps:

  • Shake the oils and vinegar in a bottle or jar with a tight-fitting lid until blended. Season with salt if you want, and pepper, then drop in the fruit. Shake gently before using. Keeps in an airtight container in the fridge for up to 3 days.

Quick to put together, and extremely tasty. This delightful recipe was compliments of Taste of Nova Scotia and was created by Sean Laceby of the Blomidon Inn in Wolfville. My good friend Gail has also made this with strawberries as well as peaches (her favourite). This is one quarter of the original recipe, which was listed as serving 4 - 8. As Gail mentions, this would only apply if you planned to serve it as a beverage. ;) If you have issues with small seeds, it would be a good idea to strain before bottling. I don't know how long it keeps, but I would think you'd be safe if used within a week. I'm still breathing, so I guess that's a good indicator.
