FISH WITH BANANAS
The delicious, unexpected combination of fish and bananas make this the perfect "special occasion" dish.

Steps:
- Heat butter in a medium sauté pan until melted. Add mushrooms at medium-high heat. Add tarragon. Stir to coat and sauté until the majority of the liquid has been cooked out of the mushrooms. Add salt & pepper as needed. Remove from heat and divide mushrooms amongst the two au gratin dishes.
- In a medium saucepan over medium heat, melt 1 tablespoon butter. Once butter is melted, add shallots. Saute slightly until they are fragrant and start to become translucent, about 3 minutes. Add white wine. Turn heat to low and simmer.
- In a separate, small saucepan, heat egg yolks, stirring constantly until they become thick. Once thickened, add 1 tablespoon butter and orange juice. Stir to combine, then add to white wine-shallot mixture. Add whipping cream and tarragon and stir to combine.
- Remove sauce from heat and put in a blender. Blend until combined and whipping cream becomes frothy. Pour back into saucepan and simmer on low heat.
- Once rewarmed, drizzle half of the sauce over the mushrooms in the two au gratin dishes.
- Preheat oven to 425 degrees Fahrenheit.
- Season the two pieces of fish with salt & pepper.
- Warm olive oil in a medium sauté pan over high heat. Add seasoned fish and sear lightly (about 2 minutes each side.)
- Place one piece of fish over the mushrooms and sauce on each of the au gratin dishes.
- Drizzle each piece of fish with the remaining sauce.
- Heat butter in a small sauté pan over medium-high heat. Once butter is melted and pan is hot, add slices of banana. Caramelize until lightly golden (about 1-2 minutes each side.) Remove bananas from pan and place slices on top of the sauced fish in the au gratin dishes.
- Place au gratin dishes in preheated 425-degree oven. Bake for about 18 minutes or until sauce is bubbly and golden. Remove from oven and let cool slightly before eating.

SEAFOOD CREOLE
This is a spicy sauce similar to etouffee. By adding seafood, it becomes Seafood Creole. Due to the seasoning mix, it is quite spicy. This can be controlled by adjusting the amount of the peppers. I like mine full strength, but for the wife I have to cut the peppers down to 1/8 teaspoon each. This recipe can easily be doubled or quadrupled for large affairs. It goes great with rice, garlic bread, a green salad and a good white wine, such as white Merlot, white Cabernet, Johannisburg Riesling, or Gewurztraminer. Use your favorite firm, white fish fillets in this recipe. Canned diced tomatoes can be used in place of chopping fresh tomatoes.

- Mix together oregano, salt, white pepper, black pepper, cayenne pepper, thyme, and basil in a small bowl; set aside.
- Melt butter in a large Dutch oven over medium heat; stir in tomato, onion, celery, green bell pepper, and garlic. Cook and stir until the onion is translucent, about 5 minutes.
- Stir in chicken stock, tomato sauce, sugar, hot pepper sauce, and bay leaves. Reduce heat to low and bring sauce to a simmer. Stir in seasoning mix and simmer until the flavors have blended, about 20 minutes.
- Gently stir in rock shrimp, bay scallops, and haddock; bring sauce back to a simmer and cook until the shellfish and fish are opaque, about 20 more minutes. Remove bay leaves to serve.

EASY FISH CREOLE
This recipe has the trinity in it that is what makes it creole cooking. After reading Derf's review, I set out to find what other Creole recipes used for spices. I found most used garlic and either chili powder, red pepper or Tabasco sauce. So you might want to add 2 cloves of garlic and one of the other pepper spices to put a kick into this recipe. Let me know which pepper and how much you use.

- In a large skillet sprayed with butter-flavored cooking spray, saute onion, celery, and green pepper for 10 minutes or until tender.
- Stir in undrained stewed tomatoes, garlic and brown Sugar Twin.
- Add fish and mix gently to combine.
- Lower heat, cover and simmer for 20 minutes, stirring occasionally.
- For each serving, place 1/2 cup rice on a plate and spoon about 1 full cup fish mixture over top.

- For green seasoning, process ingredients in a food processor to a slightly coarse paste. Adjust seasoning with salt and pepper. Makes 1 cup; you'll need 50gm for this recipe and reserve remainder for Bajan roast pork (½ cup), and for peas and rice (20gm, about 1½ tbsp).
- For Creole sauce, sauté onion in olive oil in a saucepan over low-medium heat until softened (7-8 minutes). Add garlic and cook for a further 3-4 minutes, then add capsicum and celery, and sauté until softened (4-5 minutes). Add remaining ingredients except butter and cook over low-medium heat until liquid has reduced and vegetables are tender (25-30 minutes). Adjust seasoning and stir in butter. Cool.
- Preheat oven to 200C. Trim thicker edges on banana leaves and wilt each leaf over a gas flame (10-15 seconds per leaf, or blanch them). Place snapper on plates and squeeze a lime over each, stand for 5 minutes, then lightly pat dry. Season both fish with salt and rub green seasoning inside and out. Place each fish on a large piece of wilted banana leaf, slather with Creole sauce, then top with a second, smaller piece of banana leaf and tuck the sides under, then bring sides up from bottom leaf to enclose fish completely and secure with toothpicks, ensuring there are no gaps that will leak. Place fish parcels on a wire rack with a tray underneath to catch any drips, and bake until fish is cooked and a skewer inserted meets little resistance (25 minutes). Serve fish with extra lime.
