2 tablespoons extra virgin olive oil
1 small onion, chopped
1 (14 ounce) can marinated artichokes, heats drained & sliced
1/2 cup black olives, sliced (may substitute kalamata olives)
2 teaspoons water
1/4 teaspoon salt
1/8 teaspoon fresh ground black pepper
1/8 teaspoon thyme
1 (16 ounce) bag tortellini or 1 (16 ounce) bag ravioli
1/2 cup heavy whipping cream
1 teaspoon fresh Italian parsley, chopped

Steps:

  • Heat olive oil in a medium skillet.
  • Add onion; lightly sauté
  • Add artichoke hearts & black olives. Cook for 5 minutes.
  • Add water, salt, pepper and thyme. Mix well.
  • Cook tortellini according to package directions.
  • Drain tortellini and add to skillet.
  • Add cream and parsley; heat on low for a few minutes to thicken.
  • Remove from stove and sprinkle with extra chopped parsley if desired.
  • Serve immediately.

1 package (19 ounces) frozen cheese tortellini
1 cup fresh broccoli florets
1 garlic clove, minced
2 tablespoons butter
1 cup shredded Parmesan cheese
1 cup heavy whipping cream
1/2 teaspoon Italian seasoning
1/4 teaspoon salt
1/8 teaspoon pepper
1-1/3 cups cubed cooked chicken breast
Minced fresh basil, optional

Steps:

  • In a large saucepan, cook tortellini according to package directions, adding the broccoli during the last 5 minutes of cooking., Meanwhile, in a large skillet, saute garlic in butter until tender. Stir in the cheese, cream and seasonings. Bring to a boil; reduce heat. Simmer, uncovered, for 7-9 minutes or until slightly thickened. Add chicken; heat through., Drain tortellini and broccoli; toss with chicken mixture. Sprinkle with basil if desired.

1 tablespoon oil
1 tablespoon butter
3 -5 garlic cloves, peeled and minced
1 cup half-and-half
1/2 cup chicken broth
1 teaspoon cornstarch
1/4 teaspoon pepper
1/2 cup olive, sliced
2 teaspoons herbs, of your choice Rosemary, basil, dill, marjoram, oregano

Steps:

  • Cook tortellini according to the package directions; set aside.
  • In a large pan, heat oil and butter. Sauté garlic 2 minutes.
  • In a cup stir together half and half, broth, and cornstarch; pour into skillet.
  • Bring to a boil, reduce heat and simmer 3 minutes.
  • Stir in the herbs, olives, garlic, and tortellini; cook 2 minutes to heat through.
  • Serve.
