1 teaspoon baking soda

1 cup butter, room temperature (2 sticks)
1 cup sugar
2 large eggs
1 teaspoon vanilla extract
3 apples, peeled, cored and diced (about 3 cups)
2/3 cup pecans or walnuts, chopped
1/4 cup raisins
ice cream, any flavor (optional, for serving)
caramel sauce, homemade or store bought (optional, for serving)

Steps:

  • Preheat your oven to 350 degrees.
  • Prepare a springform pan with butter or cooking spray and place on a rimmed baking sheet. Set aside.
  • In a medium sized mixing bowl combine flour, cinnamon, baking soda, salt and nutmeg. Set aside.
  • In another bowl, place your butter and sugar.
  • In another bowl, using a handheld mixer, on medium speed, beat butter and sugar together until smooth, about 5 minutes.
  • Add eggs and vanilla.
  • Scrape sides of bowl with a spatula.
  • Add in flour mixture and blend on low speed until combined.
  • Fold in apples, raisins and nuts. Pour batter into your prepared pan.
  • Bake for 45 to 55 minutes or until a toothpick inserted in center comes out clean.
  • Allow cake to cool completely.
  • Use a knife to loosen cake from the outside of your springform pan.
  • Serve cake warmed and sliced with a scoop of ice cream and some caramel sauce. !
  • This cake can easily be reheated at 325 degrees for 7-9 minutes or in your microwave. Enjoy

4-5 honey crisp apples, peeled and sliced thin
5 tbsp sugar
1 tbsp cinnamon
4 eggs
2 cups sugar
1 cup vegetable oil
3 cups all-purpose flour, sifted
1 tbsp baking powder
2 ½ tsp pure vanilla extract
½ cup orange juice (no pulp)

Steps:

  • Combine the sliced apples with the sugar and cinnamon in a large bowl. Mix well to incorporate.
  • Let sit while you make the cake batter.
  • Preheat the oven to 350°F. Prepare a tube pan by greasing it with butter and then dusting it with flour. Tilt the pan around so that the flour coats the entire interior. Shake off any excess flour.
  • Beat the eggs in a large mixing bowl. Add the sugar and whisk until smooth. Whisk in the vegetable oil.
  • Whisk in the sifted flour and baking powder until just combined. Stir in the vanilla and orange juice.
  • Pour half of the batter into the bottom of the tube pan. Spread half of the apple mixture over top the first layer of the batter.

Steps:

  • Preheat oven to 325 degrees. Grease and flour a 12-cup Bundt pan and set aside.
  • In a large bowl, sift together flour, baking soda, cinnamon, nutmeg and salt. Sift two additional times and set aside.
  • In the bowl of a stand mixer, combine oil and both sugars, and mix until well blended.
  • Add eggs one at a time, mixing thoroughly after each addition. Add vanilla and mix again.
  • Add the sifted dry ingredients to the batter and mix thoroughly. By hand, fold in apples and walnuts and mix until evenly combined.
  • Spoon the batter into the prepared bundt pan. Bake for 1 hour and 15 minutes or until a toothpick inserted into the center of the cake comes out clean.
  • Remove cake from the oven and allow to cool in the bundt pan for 20 minutes.
  • While the cake is cooling, prepare the glaze. In a saucepan, over medium heat, combine all of the glaze ingredients. Bring to a boil and allow the mixture to boil for 1 minute.
  • Remove the cake from the pan, onto a serving plate. Spoon the glaze over the warm cake.

Steps:

  • Preheat oven to 200C/390F.
  • Brush a 12 hole, standard muffin tin with melted butter, or line with paper cases. (Note 3)
  • Place butter and brown sugar in a bowl, whisk to combine.
  • Add milk, then egg and vinegar. Whisk to combine.
  • Scatter flour across batter surface, followed by baking soda, cinnamon and salt. Whisk 10 times until the flour is incorporated - some lumps is fine.
  • Stir through apple -minimum stirs just to disperse.
  • Scoop batter into muffin tin - I use an ice cream scoop - filling it all the way to the top. If using a scooper, leave it the slight ball shape (see video) - don't smooth the top. You should get 12 (see Note 3).
  • Sprinkle with sugar (if using - makes surface slightly crispy), place muffins in the oven.
  • Immediately turn down to 180C/350F.
  • Bake for 20 minutes (standard) or 18 minutes (fan / convection) , or until a skewer comes out clean.
  • Rest in the muffin tin for 5 minutes then transfer to a rack to cool.
  • Once fully cooled, store in an airtight container - it will stay moist for up to 5 days. These also freeze very well.

1 teaspoon baking powder
¼ teaspoon salt
1 stick (½ cup) unsalted butter, at room temperature
⅔ cup granulated sugar, plus more for sprinkling over cake
2 large eggs
1 teaspoon vanilla extract
3 tablespoons dark rum
2 baking apples, peeled, cored and cut into ½-inch cubes (I like Honeycrisp, Fuji or Granny Smith) (3½ - 4 cups chopped)
Confectioners' sugar (optional), for decorating cake

Steps:

  • Preheat the oven to 350°F and set an oven rack in the middle position. Grease a 9-inch springform or regular cake pan with butter or nonstick cooking spray. If using a regular cake pan, line the bottom of the pan with parchment paper and grease again.
  • In a small bowl, whisk together the flour, baking powder and salt.
  • Using a handheld mixer with beaters or a stand mixer with the paddle attachment, cream the butter and granulated sugar until light and fluffy, about 3 minutes. Add the eggs, one at a time, beating well and scraping down the sides of the bowl after each addition. Beat in the vanilla and rum. Don't worry if the batter looks grainy at this point; that's okay. Steps:

  • IMPORTANT: Make sure all your ingredients are at room temp (see notes at the bottom of the recipe)
  • Preheat oven to 350 F (177 C)
  • Peel the apples and core them using an apple corer or a knife.
  • Cut the apples into 1/4 inch pieces and place into a bowl.
  • Squeeze 1/2 a lemon over the apples to prevent browning. Set aside
  • Sift together flour, baking soda, salt, ginger, nutmeg, cinnamon and cloves. Set aside.

  • Let cake rest in the pan until it's cool enough to touch, then flip out onto a wire rack.
  • Make sure to cool completely before stacking. (Wrap in plastic wrap and place in fridge or freezer to speed up the cooling process.)
  • Place softened butter in the bowl of your stand mixer with the whisk attachment and mix until smooth.
  • Add in your cream cheese and mix until smooth
  • Add in your browned butter and mix until smooth and creamy
  • Add in your powdered sugar one cup at a time while mixing on low until all the powdered sugar is added. Do not over-mix.
  • Add in your salt and vanilla until combined.
  • Place sugar and water in a medium-sized pot. Cover with the lid and bring to a boil on medium-high heat.
  • Remove lid and place a candy thermometer in the pot. Continue cooking the sugar until thermometer reads 350º (hard crack stage) or it's a deep golden brown color. Do not stir.
  • Remove the sugar from heat and slowly whisk in butter. Be careful, it will bubble up.
  • Whisk in cream and salt.

Steps:

  • Preheat oven to 350°F. Grease a Bundt pan and set aside.
  • In a large mixing bowl, whisk together the flour, sugar, salt, baking soda and cinnamon. Add the eggs, oil and vanilla and beat on low with an electric mixer, just until blended. Using a spatula, fold in the nuts and apples.
  • Scoop the batter into the prepared Bundt pan and smooth the top. Bake at 350°F for 70 - 90 minutes or until a wooden skewer comes out with no wet batter. A few moist crumbs is fine. Baking times may vary depending on the kind of apples used.
  • Cool the cake completely before icing.
  • In a small mixing bowl combine the cream cheese, butter, powered sugar and vanilla. Beat on low with an electric mixer. Add a little milk to thin, if needed, or more powdered sugar to reach the desired consistency. If you prefer a glaze instead of thick icing, reduce the powdered sugar to 1 cup.

Steps:

  • Beat egg and sugar together until fluffy then gradually add oil and vanilla. Continue beating until thick and smooth. I used my food processor to chop the apples. Alternately add apples and dry ingredients. Mix until well blended.Bake at 350 degrees in a greased 13' x 9" pan for about 45 minutes. Sides will pull back slightly from pan. Let cool completely before frosting.

Steps:

  • Preheat oven to 350.
  • Grease or spray 10 inch tube pan and flour.
  • For cake, combine cake mix, flour, eggs, apple juice, oil and cinnamon in large bowl.
  • Fold apples and pecans into batter.

  • Bake 45 minutes or until toothpick inserted in center comes out clean.
  • Cool in pan for 25 minutes.

150 grams (3/4 cup) caster sugar or granulated sugar
1 cup (approximately 1 large) red apple, peeled and roughly chopped
2 large eggs
1 teaspoon vanilla extract
120 ml (1/2 cup) vegetable oil
120 ml (1/2 cup) Greek yogurt
50 grams (1/4 cup) caster sugar or granulated sugar
1 teaspoon ground cinnamon
1 tablespoon butter, melted
30 grams (1/4 cup) icing sugar or powdered sugar, sifted
1-2 tablespoons milk

Steps:

  • Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Grease and line an 8-inch round cake pan with baking or parchment paper.
  • In a large mixing bowl, add flour, baking powder, baking soda, salt and sugar. Add chopped apple and stir briefly to combine.
  • In a separate bowl, add eggs, vanilla, oil and yoghurt. Whisk briefly just to break up the egg yolks.
  • Add wet ingredients to dry ingredients and gently mix with a wooden spoon until combined - but be careful not to over mix. Spoon batter into prepared tin.
