SOFT ITALIAN BREADSTICKS

Soft Italian Breadsticks image

These soft Italian breadsticks are perfect with a bowl of soup or pasta! Pillow-y soft, easy to make, and even better than Olive Garden!

Provided by Allie {Baking A Moment}

Categories     Appetizer     Side Dish     Snack

Time 53m

Number Of Ingredients 11

2 teaspoons sugar
1 1/2 cups warm water
1/4 ounce active dry yeast* ((1 packet))
3 cups bread flour ((you may need as much as 3 3/4 cups))
3 tablespoons extra virgin olive oil
1 teaspoon kosher salt
egg wash ((1 egg beaten with 1 to 2 teaspoons water))
1/4 cup unsalted butter, (melted)
1/4 teaspoon kosher salt
1/4 teaspoon garlic powder
1/4 teaspoon Italian seasoning

Steps:

  • Place the sugar in a large mixing bowl, and add the warm water and yeast. Set aside for 5 minutes, or until the yeast has dissolved and looks foamy.
  • Add 3 cups of bread flour, the olive oil, and the salt, and mix on low speed until a stiff dough forms. (If the dough seems sticky, add up to 3/4 cup additional flour (1/4 cup at a time), until it pulls cleanly away from the sides of the bowl.)
  • Knead until dough is smooth and elastic, about 10 minutes.
  • Mist the bowl with non-stick spray, place the dough inside, and cover with plastic wrap.
  • Allow the dough to rise for 30 minutes.
  • Divide the dough into 16 equal portions, and shape each one into a rope (about 6 inches long), placing them on a parchment-lined baking sheet.
  • Mist a sheet of plastic wrap with non-stick spray, place it loosely over the unbaked breadsticks, and allow them to rise for 30 minutes.
  • Preheat the oven to 350 degrees F, and lightly brush the breadsticks with egg wash.
  • Bake the breadsticks for 12 to 14 minutes, or until just beginning to turn golden at the tips.
  • Stir the melted butter, salt, garlic powder, and Italian seasoning together, and brush the mixture over the warm breadsticks.

Provided by Jaclyn

Categories     breads

Time 3h6m

Number Of Ingredients 9

1 cup + 2 Tbsp warm water ((110 - 115 degrees))
1 1/4 tsp active dry yeast
2 Tbsp granulated sugar, (divided)
3 - 3 1/2 cups all-purpose flour ((scoop and level to measure))
1 3/4 tsp salt
3 Tbsp vegetable oil (or olive oil)
2 Tbsp butter
1/4 tsp salt ((or to taste))
1/4 tsp garlic powder

Steps:

  • In the bowl of an electric stand mixer whisk together warm water, yeast and 1/2 tsp granulated sugar until yeast has dissolved. Allow to rest 10 minutes.
  • Add in remaining 1 Tbsp + 2 1/2 tsp granulated sugar, 1 1/2 cups flour, 1 3/4 tsp salt and vegetable oil, then fit mixer with paddle attachment and blend mixture until well combine.
  • Switch mixer to dough hook attachment, add in remaining 1 1/2 cups flour and knead mixture on low speed, adding up to 1/4 cup additional flour as needed, and knead until dough is smooth and elastic*.
  • Transfer dough to a large buttered mixing bowl, cover with plastic wrap and allow to rest in a warm place free from draft until double, about 1 1/2 hours.
  • Punch risen dough down, divide into 12 equal portions (2 ounces each by weight), keep them covered with plastic wrap as you work. Roll each piece into a 9 inch rope on a lightly floured surface, then transfer to two parchment paper lined baking sheets.
  • Cover and let rise 1 hour. Preheat oven to 425 during the last 10 minutes of rising.
  • Bake in preheated oven 11 - 13 minutes until golden**. Meanwhile, in a small bowl whisk together 1/4 tsp salt and garlic powder.
  • Remove breadsticks from oven and run a stick of butter over hot breadsticks (using 2 Tbsp, or brush with melted butter) and immediately sprinkle with garlic salt mixture.
  • Serve warm. Let any left over cool and store in an airtight container.

BETTER THAN OLIVE GARDEN BREADSTICKS

Better Than Olive Garden Breadsticks image

I'm sharing a copycat Olive Garden breadsticks recipe that's even better than the original!

Provided by Autumn

Categories     Side Dish

Time 2h33m

Number Of Ingredients 9

1 cup Warm Water
1 tablespoon Active Dry Yeast
2 tablespoons Butter (softened)
1 Egg
3 & 1/4 cup All Purpose Flour (bread flour is also ok)
1/4 cup Sugar
1 teaspoon Salt
3 tablespoons Butter (melted)
Garlic Salt and Italian Seasoning to taste

Steps:

  • Combine all ingredients (except for topping ingredients) in the bowl of a stand mixer and mix using the dough hook attachment until combined on low.
  • Continue mixing 5-10 minutes, adding just a little more flour if needed.
  • Dough will be soft and slightly sticky; it may not completely pull away from side of bowl. However, it should feel smooth and elastic when it's done kneading.
  • Turn dough out onto a floured surface and knead two or three times, forming a ball.
  • Cover with a kitchen towel and let rise one to one and a half hours, until nearly double in size. (If you live in a very dry area you may want to put the dough into a large greased bowl and cover it with plastic wrap to ensure it doesn't dry out.)
  • On a floured surface, roll dough into a 12x16 inch rectangle. Use pizza cutter to slice into 16 strips.
  • Pinched the long sides of each piece together to form a breadstick shape.
  • Place sticks pinched side down on a baking sheet that's been lightly greased or lined with parchment paper. Cover with a towel, and let rise about 30 minutes.
  • Bake at 350 degrees for 15-18 minutes until golden brown. Brush with melted butter and sprinkle with seasonings.

ALMOST-FAMOUS BREADSTICKS (OLIVE GARDEN COPYCAT)

Almost-Famous Breadsticks (Olive Garden Copycat) image

Since Olive Garden won't give out the recipe, here's the closest one to the real thing! This recipe calls for a Kitchen-Aid mixer with the paddle attachment, but I'm sure you could use something similar. From Food Network magazine.

Provided by Ashbow

Categories     Yeast Breads

Time 31m

Yield 16 breadsticks, 16 serving(s)

Number Of Ingredients 9

1 (1/4 ounce) package active dry yeast
4 1/4 cups all-purpose flour, plus more for dusting
2 tablespoons unsalted butter, softened
2 tablespoons sugar
1 tablespoon fine salt
3 tablespoons unsalted butter, melted
1/2 teaspoon kosher salt
1/8-1/4 teaspoon garlic powder
1 pinch dried oregano

Steps:

  • Make the dough: Place 1/4 cup warm water in the bowl of a mixer; sprinkle in the yeast and set aside until foamy, about 5 minutes. Add the flour, butter, sugar, fine salt and 1 1/4 cups plus 2 tablespoons warm water; mix with the paddle attachment until a slightly sticky dough forms, 5 minutes.
  • Knead the dough by hand on a floured surface until very smooth and soft, 3 minutes. Roll into a 2-foot-long log; cut into 16 1 1/2-inch pieces. Knead each piece slightly and shape into a 7-inch long breadstick; arrange 2 inches apart on a parchment-lined baking sheet. Cover with a cloth; let rise in a warm spot until almost doubled, about 45 minutes.
  • Preheat the oven to 400 degrees F.
  • Make the topping: Brush the breadsticks with 1 1/2 tablespoons of the butter and sprinkle with 1/4 teaspoon kosher salt.
  • Bake until slightly golden, about 15 minutes.
  • Meanwhile, combine the remaining 1/4 teaspoon salt with the garlic powder and oregano.
  • Brush the warm breadsticks with the remaining 1 1/2 tablespoons melted butter and sprinkle with the flavored salt.
  • Serve warm with salad.
