EASY RITZ™ TOFFEE
Deceptively simple, this salty-sweet toffee starts with a layer of Ritz™ crackers, followed by a buttery toffee and finished with chocolate and sprinkles.

Steps:
- Heat oven to 350°F. Line 15x10x1-inch pan with foil. Spray foil with cooking spray. Place crackers in single layer in pan.
- In 2-quart saucepan, cook and stir butter, sugar and salt over medium heat until butter is melted. Heat to boiling, stirring frequently. Boil 7 to 9 minutes longer, stirring frequently, until light brown color. Remove from heat. Add vanilla; stir until blended. Immediately pour mixture evenly over crackers in pan; spread to cover.
- Bake 13 to 15 minutes or until bubbly and brown in color. Sprinkle chocolate chips on top of cracker mixture. Let stand 5 minutes. Spread chocolate evenly over cracker mixture. Sprinkle with candy sprinkles. Cool completely, about 2 hours or until chocolate is set. Break into pieces. Store covered in refrigerator up to 1 week.

Steps:
- Heat olive oil in saute pan over medium heat. Add spinach and cover for 1 minute to steam. Uncover and stir spinach until it is wilted. Drain spinach, dry between paper towels, and chop. Melt butter in the same pan over medium heat. Add shallots and saute for a minute. Add heavy cream and nutmeg; stir to combine. Add chopped spinach and combine thoroughly. Remove from heat when spinach is creamy. Add salt and pepper. Set aside.
- Melt 1 tablespoon butter in a separate saute pan; add shallots and white wine vinegar. Cook until all liquid has evaporated, about a minute. Remove from the pan; set aside to cool.
- Add egg yolk and lemon juice to blender; slowly blend in half cup of melted butter until mixture is smooth and creamy. Pour into shallots mixture. Stir in chopped fresh tarragon.
- To assemble bites, place about 1-1/2 teaspoons creamed spinach on top of a RITZ Cracker. Place a slice of steak on top of the creamed spinach, then drizzle with about 1-1/2 teaspoon bearnaise sauce over the steak.

Getting ready for Holiday Snacks ! Well here it is! I loved it -- Must be the Dill & Garlic that did me in for these great little snacks !!These little cheese cracker make good picken's! Saw this on tv and tried this because I love dill!

- Place the crackers in a large sealable freezer container.
- In a bowl, mix the oil, salad dressing mix, dill,garlic power& celery salt.
- Pour this mixture over the crackers & make sure they are covered well with dressing.
- Refridgerate at least 24hours~turning the container every so often.
- Let mixture come to room Temp.
- before serving.
- Then just store in covered container in refrigerator.
RITZ BITZ (MUNCHIES)
This is a little treat I always make at Christmas, even though it can be make all year long. (don't let the amount of oil fool you, You can't even tell there is oil on them)I get so many requests for this recipe.The taste is a wonderful ranch dill. I have frozen these as well. Standing time is not included.
