BIG DADDY'S CHEESY GRAVY FRIES



Big Daddy's Cheesy Gravy Fries image

Number Of Ingredients 12

Canola oil, for frying
2 pounds russet potatoes, cleaned
Kosher salt and freshly ground black pepper
4 tablespoons butter, divided
2 tablespoons all-purpose flour
1 tablespoon minced garlic
1/4 cup Marsala wine
1 1/2 cups beef stock
2 tablespoons water
1 tablespoon cornstarch
1 cup grated smoked Gouda cheese
Freshly chopped chives, for garnish

Steps:

  • Preheat the oven to broil. In a deep-fryer or heavy-bottomed pot, heat enough canola oil to come halfway up the sides of the pot, to 375 degrees F.
  • Slice the potatoes into 1/4-inch thick french fries. Fry in batches until golden brown and crispy; about 5 minutes. Drain on paper towel lined sheet tray and put them in a large baking dish. Season with salt and pepper, to taste.
  • Melt 2 tablespoons of the butter in a medium-sized saucepan over medium-high heat. Stir in the flour and the garlic. Add the wine and beef stock and bring to a simmer.
  • In a small bowl, combine the water and cornstarch. Slowly whisk the mixture into the stock and cook until thickened, roughly 2 to 3 minutes. Add salt and pepper, to taste. Remove the pan from heat, and stir in the remaining 2 tablespoons butter.
  • Ladle the gravy over the fries and sprinkle with the cheese. Put the fries in the oven and bake until the cheese is melted and bubbling. Remove the fries from oven, sprinkle with chopped chives and serve.

2 lbs russet potatoes, cleaned (6)
2 tablespoons grapeseed oil
2 tablespoons freshly chopped fresh rosemary
1 tablespoon freshly chopped fresh thyme leave
3 tablespoons chopped garlic
freshly chopped fresh parsley leaves, for garnish
1/2 cup smokey paprika
1/4 cup granulated onion powder
1/4 cup granulated garlic powder
3 tablespoons seasoning salt
1/4 cup fresh cracked pepper
1/2 cup kosher salt

Steps:

  • Preheat oven to 400 degrees F.
  • Cut potatoes with a mandoline. Cook's note: If you do not have a mandoline, cut each potato lengthwise into thirds; cut each portion into thirds.
  • In a large bowl, combine cut potatoes and grapeseed oil. Add rosemary, thyme, garlic and Big Daddy Seasoning. Toss to coat.
  • Place in a single layer on a greased baking sheet. Bake uncovered for 20 to 25 minutes or until tender, turning once. Remove from oven and toss with chopped parsley.

4 cups chicken stock
2 tablespoons brown sugar
2 tablespoons sea salt, plus more for seasoning
1 tablespoon freshly cracked black pepper, plus more for seasoning
1 pinch grated nutmeg
1/2 teaspoon almond extract
3 sweet potatoes
3 tablespoons heavy cream
1 lemon, juiced

Steps:

  • In a medium saucepan add chicken stock, brown sugar, 2 tablespoons sea salt, 1 tablespoon cracked black pepper, a pinch of nutmeg, and almond extract. Stir mixture and bring to a boil.
  • Meanwhile, peel sweet potatoes and cut into medium-sized cubes. Add to the chicken stock and cook for 15 to 20 minutes until soft.
  • Once potatoes are soft, place potatoes in a food processor. Reserve the liquid and set aside.
  • Add heavy cream and lemon juice and blend until smooth. If too dry, add reserved potato liquid. Season with salt and pepper, to taste, and serve.
