BAKED ZITI

Steps:
- Heat the olive oil in a pot over medium heat. Add the garlic and onions and saute until starting to soften, 3 to 4 minutes. Add the ground beef and sausage and cook until browned. Drain off almost all of the fat, leaving a bit behind for flavor and moisture. Add the tomato sauce, tomatoes, Italian seasoning, red pepper flakes and some salt and pepper. Stir, bring to a simmer and simmer for 25 to 30 minutes. Remove 3 to 4 cups of the cooked sauce to a bowl to cool down.
- Bring a large pot of water to a boil and add some salt. Cook the ziti until not quite al dente.
- Preheat the oven to 375 degrees F.
- In a bowl, mix 2 cups of the grated mozzarella, the ricotta, Parmesan, parsley, eggs and some salt and pepper. Stir together just a couple of times (do not mix completely).
- Drain the pasta and rinse under cool water to stop the cooking and cool it down. Pour it into the bowl with the cheese mixture and toss to slightly combine (there should still be large lumps). Add the cooled reserved meat sauce and toss to combine.
- Add half the coated pasta to a large casserole dish or lasagna dish. Spoon half of the remaining sauce over the top, then top with half the remaining mozzarella. Repeat with another layer of the coated pasta and the remaining sauce and mozzarella.
- Bake until bubbling, about 20 minutes. Let stand 5 minutes before sprinkling with chopped parsley to serve.
OVER-THE-TOP BAKED ZITI
I adapted a ziti recipe to remove ingredients my kids did not like, such as ground beef, garlic and onions. The revised recipe was a success not only with my family but at potlucks, too. - In a 3- or 4-qt. slow cooker, combine the first 10 ingredients. Cover and cook on low for 4 hours., Cook ziti according to package directions. In a large bowl, combine the egg, ricotta cheese, 1 cup mozzarella, Parmesan, parsley, salt, pepper and 5 cups sauce. Drain ziti; stir into cheese mixture., Transfer to a 13x9-in. baking dish coated with cooking spray. Pour remaining sauce over the top; sprinkle with remaining mozzarella cheese. Bake at 350° for 20-25 minutes or until bubbly. Garnish with additional parsley.

- Preheat the over to 450 degrees and spray a casserole dish with non stick spray.
- Cook pasta according to directions. In a separate mixing bowl, mix ricotta cheese, egg whites, and 3 of the 4 cups of mozzarella. Add in the garlic powder and salt and pepper. Once the pasta is cooked mix it in with the ricotta mixture.
- In the baking dish spread 1 cup of pasta on the bottom. Then spread 1/2 of the pasta/ricotta mixture on top of that. Next spread a layer of 1/2 cup of sauce, then layer the remaining pasta/ricotta mixture over that. Add the remaining 1/2 cup of sauce and sprinkle the remaining cup of cheese on top.
- Cover loosely with aluminum foil and bake for 20 minutes. Remove the aluminum foil and continue baking for 10 more minutes. Pull out of oven and let sit for 5 minutes.

- Preheat the oven to 450 degrees F. Lightly mist a 13" x 9" x 2" ceramic or glass baking dish with the olive oil spray. Cook the ziti according to package directions until al dente. Drain. In a large mixing bowl, mix the ricotta, egg whites, and all but 1 cup of the mozzarella until well combined. Add the garlic powder and season with salt, pepper, and red pepper flakes. Stir in the cooked pasta until well combined. Spread 1 cup of the marinara sauce on the bottom of the prepared dish. Add half of the pasta in an even layer over the sauce. Layer the remaining pasta over the sauce. Spoon the remaining 1 1/2 cups sauce evenly over the top of the pasta, then sprinkle the remaining mozzarella and the Parmesan over the top. Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake 10 minutes longer, or until the mozzarella is melted. Let stand 5 minutes. Cut into 8 pieces or spoon among 8 bowls and serve.
BAKED ZITI I
A lady I worked with brought this in one day, and it was a hit. Now it is the favorite of all my dinner guests. It's great for a covered dish dinner too. I have made this also without the meat, and it is well received.

- Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain.
- In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes.
- Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish. Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Top with grated Parmesan cheese.
- Bake for 30 minutes in the preheated oven, or until cheeses are melted.

- Preheat the oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add ziti and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
- Combine 4 cups mozzarella, pasta sauce, ricotta, cream cheese, 2 tablespoons Parmesan, Italian seasoning, garlic powder, and salt in a large mixing bowl. Add cooked ziti and mix well to coat. Transfer to a 9x13-inch glass baking dish. Sprinkle remaining mozzarella and Parmesan over top, along with parsley. Cover with foil.
- Bake in the preheated oven until thoroughly heated and cheese on top is melted, 20 to 30 minutes.

- Main Event Marinara:.
- Spray a medium non-stick saucepan with olive oil spray, place over medium heat. Add onion and garlic, cook until tender (about 4-6 minutes), do not brown. Reduce heat to low. And stir in tomatoes, water, tomato paste, honey, oregano, basil and crush red pepper flakes until well combine. Cover, stirring occasionally, for at least 1 hour. Season with Salt, to taste.
- Baked ziti.

- Preheat oven to 450. Spray olive oil in 13 x 9 baking dish.
- Cook ziti (or penne rigate) according to directions on box. Drain well.
- In a large mixing bowl, combine ricotta cheese, egg whites and all but 1 cup of the mozzarella cheese until well combine. Add the garlic powder and season to taste with salt, pepper, and red pepper flakes. Stir in the cooked ziti until thoroughly coated.
