PEANUT BUTTER CHOCOLATE CHIP COOKIES FROM HEAVEN

Steps:

• Preheat oven to 350 degrees F (180 degrees C).
• Cream together butter and brown sugar. Beat in eggs, peanut butter and vanilla.
• Add flour, cornstarch, salt, baking soda and baking powder. Stir in chocolate chips.
• Roll into balls about 1 1/2 teaspoonfuls (or use cookie scoop) and place onto ungreased cookie sheets about 2 inches apart. Flatten slightly because they do not flatten much while cooking.
• Bake for 10 minutes.

BIKKIES (COOKIES) FROM HEAVEN

Steps:

• Preheat oven to 180°C.
• Line 3 baking trays with non-stick baking paper.
• Beat the butter and sugar in a stand mixer till pale and creamy.
• Add the condensed milk and flour to the butter mix, stirring to combine.
• Stir in the the craisins and chocolate.
• Divide the dough into 2 equal portions, wrap and refrigerate second portion while working with first and remove second portion when you put cookies/bikkies into oven.
• Roll tablespoons of 1st portion into balls and divide among the prepared trays, allowing room for spreading.
• Use the palm of your hand to flatten slightly (or you could press with a fork).
• Bake in oven,swapping trays halfway through cooking for 8 to 10 minutes or until golden (swapping shouldn't be necessary in a fan forced oven).
• Set aside on trays for 3 minutes to cool before transferring to a wire rack to cool completely.
• Repeat with remaining dough portion.

CINNABONS - CINNAMON BUNS FROM HEAVEN

Steps:

• To prepare dough: In a cup, combine yeast, warm water and 1 tsp sugar, stir and set aside.
• In a large bowl, mix milk, remaining 2/3 cup sugar, melted butter, salt and eggs; stir well and add yeast mixture.
• Add half the flour and beat until smooth.
• Stir in enough of the remaining flour until dough is slightly stiff (dough will be sticky).
• Turn out onto a well-floured board; knead 5-10 minutes.
• Place in well-buttered glass or plastic bowl, cover and let rise in warm place, free from drafts, until doubled in bulk, about 1 to 1 1/2 hours.
• When doubled, punch down dough and let rest 5 minutes.
• Roll out on floured surface into a 15 x 20 inch rectangle.
• To prepare filling: Spread dough with 1/2 cup melted butter.
• Mix together 1 1/2 cups sugar and cinnamon; sprinkle over buttered dough.
• Sprinkle with walnuts and raisins, if desired.
• Roll up jellyroll-fashion and pinch edge together to seal.
• Cut into 12 slices.
• Coat bottom of a 13-by-9-inch baking pan and an 8-inch square pan with remaining 1/2 cup melted butter, then sprinkle with remaining 1/4 cup sugar.
• Place cinnamon roll slices close together in pans.
• Let rise in warm place until dough is doubled in bulk,about 45 minutes.
• Preheat oven to 350 degrees.
• Bake 25 to 30 minutes, or until rolls are nicely browned.
• Cool rolls slightly.
• To prepare glaze: Meanwhile, in medium bowl, mix melted butter, powdered sugar and vanilla; add hot water 1 Tbsp at a time until glaze reaches desired spreading consistency.
• Spread over slightly cooled rolls.
• These will taste most like the originals if you use Makara Cinnamon (available at the Cinnabon Stands) instead of conventional powdered cinnamon from the supermarket.

BETTER BIKKIES (PEANUT BUTTER BACON DOG COOKIES)

Steps:

• Combine oats and boiling water, let stand 10 minutes.
• In a bowl, mix together stock, oil, honey, peanut butter and egg until well combined.
• Beat in the oats.
• In another bowl, whisk together the flours, guar gum, baking powder, ground flaxseed, wheat germ, tapioca, whole flaxseed and bacon bits.
• Slowly beat the dry mixture into the peanut butter mixture.
• Turn out onto a floured surface and knead until no longer sticky. Wrap and refrigerate 1 hour.
• Preheat oven to 325°F Line 2 cookie sheets with parchment.
• Roll out the 1/2"-thickness and cut into desired shapes.
• Place 1" apart on the sheets.
• Bake 45 minutes, until golden brown.

EEZY BIKKIES

Steps:

• Preheat oven to 350 degrees F (175 degrees C). Whisk together the cake flour, cornstarch, and confectioners' sugar; set aside.
• Beat the butter, vegetable oil, superfine sugar, and vanilla extract with an electric mixer in a large bowl until smooth. Mix in the flour mixture until just incorporated. Roll dough into 1 inch balls. Place 2 inches apart on ungreased baking sheets, and flatten each cookie slightly with the bottom of a glass.
• Bake in the preheated oven until golden, about 12 minutes. Allow the cookies to cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.
