This is a delicious and easy recipe. My kids love it. It can be made the day before and refrigerated. Good served over rice.

Ingredients

4 skinless, boneless chicken breasts
4 slices bacon
1 (4 ounce) jar dried beef
1 cup sour cream
1 (10.75 ounce) can condensed cream of chicken soup

Steps:

Shred beef, and spread into the bottom of a greased 8 inch square baking dish.
Wrap each chicken breast with 1 strip of bacon, and lay on top of beef.
Mix together undiluted soup and sour cream. Pour over chicken.
Bake at 350 degrees F (175 degrees C) for 45 minutes to 1 hour.

2 lbs skinless chicken breasts
1/2 cup real butter
1 1/2 cups white sugar
2 cups chopped sweet onions or 2 cups leeks
1 teaspoon parsley
1/2 teaspoon lemon pepper
1/2 teaspoon garlic salt
1/4 cup lemon juice

Steps:

Clean the chicken and cut into 6 serving pieces. Pat chicken dry and place into a long glass baking dish. Set aside.
Using a cast-iron fry pan melt butter on medium and quickly stir in the sugar stirring constantly until melted and caramel color. Lower heat and add the onions or leeks. Stir to coat onions then pour directly over the chicken. Add the parsley,lemon pepper, garlic salt and lemon juice.
Bake at 350 for 60 minutes.

This is a family recipe of a former roommate of mine. She was a little cooking-challenged, so she had her Mom teach me all her favorite recipes so I could fix them for her! I used to make this every year for her birthday.

Ingredients

4 -6 skinless chicken breasts (with bone)
1 large onion, chopped
1/2 cup green pepper, chopped
1 garlic clove
1/4 teaspoon coriander
1 tablespoon ginger, grated
1 pinch cayenne pepper
1 tablespoon brown sugar
1 3/4 cups chicken broth
2 tablespoons tomato paste
1/4 cup creamy peanut butter
1 tablespoon olive oil
1 tablespoon butter

Steps:

Melt butter and oil together. Brown chicken breasts, remove, and keep warm.
Saute onion, pepper and garlic for 5 minutes.
Add ginger, coriander, and cayenne and black pepper.
Add brown sugar, tomato paste, and chicken broth.
Return breasts to skillet, cover, and simmer for 30 minute.
Remove chicken, boil sauce down for about 5 minutes.
Puree mixture in blender (1/2 at a time), then return to pan.
Add peanut butter to melt, mix well.
Reheat chicken breasts and serve over rice.
