Black Cherry Jam - Conserve Method image

A delicious easy cherry jam made using the conserve method, so preserving the fruit in its whole form. No need to use jam sugar with added pectin - just add a little lemon juice to help the fruit set. Gluten Free.

1200 g Stoned cherries ((6 cups))
1000 g Sugar ((5 cups))
2 tbs Lemon juice

Steps:

  • Stone the cherries. This is best done with a cherry stoner. Make sure the stone is removed from each fruit.
  • One third of the fruit - about two cups into quarters
  • Put in a bowl cover with sugar add lemon juice. Stir. Cover and leave.
  • Cook at a rolling boil until setting point of 105C and test by placing a teaspoon onto a frozen plate. If it sets, the jam is ready to be transferred to sterilized jars.

This easy recipe for cherry freezer jam is made in minutes and has the most wonderful flavor and texture.

3 cups bing cherries (chopped)
1/2 cup raspberries
2 tablespoons lime juice
1 3/4 cups sugar
1/2 cup water
1 (1.5-ounce) package no-cook freezer jam pectin

Steps:

  • Place six (250 mL) freezer-safe mason jars in the dishwasher and run through the wash cycle to sanitize. Leave the jars in the dishwasher until you're ready to fill them.
  • Place the cherries and raspberries in a large bowl; mash with a potato masher or a large fork. Add the lime juice and water and stir.
  • In a medium bowl, combine the sugar and pectin; stir well with a wire whisk to make sure the pectin is evenly distributed. Stir the sugar mixture into the fruit mixture; stir constantly for 3 minutes.
  • Ladle the jam into each jar leaving about 1/2" of headspace. Wipe the tops of the jars with a damp cloth and place the lids on the jars; fasten securely. Let the filled jars stand at room temperature for one hour.
  • Label the jars and refrigerate for 3 to 5 days until the jam sets. Then you can freeze them up to one year.
  • When opened, each jar will last, refrigerated, for about three weeks. You can also refrigerate the jars for up to three weeks; We do that with the first one and freeze the rest, taking them out of the freezer and putting them in the fridge the night before we want to use the jam.

The recipe is so easy, you might just need a second freezer!

5 cups crushed plums, peaches, or nectarines (about 3 pounds fruit), any bruised spots cut away
1/3 cup fresh lemon juice (from 2 lemons)
2 1/2 cups granulated sugar
1/3 cup (1.75 ounces) powdered, no-sugar-needed pectin

Steps:

  • Thoroughly wash, rinse, and dry seven 8-ounce plastic freezer or glass jars with tight-fitting lids. You can also use zip-top freezer bags.
  • In a medium pot, combine fruit and lemon juice. Bring to a boil over medium-high.
  • In a bowl, whisk together sugar and pectin; add to fruit, stirring until sugar mixture dissolves and fruit returns to a full rolling boil. Boil 1 minute, then remove from heat.
  • Transfer to jars or bags, leaving a 1/2-inch space on top. Seal and let sit at room temperature until jam is set, 2 to 3 hours. To store, freeze, up to 6 months. To thaw jam, transfer to the refrigerator and use within 3 weeks.

1 ¾ cups apple juice
3 tablespoons Ball® RealFruit™ Low or No-Sugar Needed Pectin
3 cups blackberry, crushed
3 cups sugar

Steps:

  • Gradually add pectin into apple juice until dissolved. Bring to a full rolling boil that cannot be stirred down, over medium-high heat, stirring frequently. Boil hard for 1 minute, stirring constantly. Remove from heat.
  • Immediately add prepared blackberries into hot pectin mixture. Stir vigorously for 1 minute. Stir in sugar.
  • Ladle the Blackberry Freezer Jam into clean freezer jars leaving ½ inch headspace. Apply caps and let jam stand in refrigerator until set, but no longer than 24 hours. Serve immediately, refrigerate up to 3 weeks, or freeze up to 1 year.
