This recipe calls for trout, but catfish or red snapper would be equally good. Be sure to have a well-ventilated kitchen!

1 tablespoon paprika
2 teaspoons dry mustard
1 teaspoon cayenne pepper
1 teaspoon ground cumin
1 teaspoon black pepper
1 teaspoon white pepper
1 teaspoon dried thyme
1 teaspoon salt
¾ cup unsalted butter, melted
6 (4 ounce) fillets trout
¼ cup unsalted butter, melted

Steps:

  • In a small bowl, mix together paprika, dry mustard, cayenne pepper, cumin, black pepper, white pepper, thyme and salt; set aside. Heat a heavy cast iron pan on high heat until extremely hot, about 10 minutes.
  • Pour 3/4 cup melted butter into a shallow dish. Dip each fillet into butter, turning once to coat both sides. Sprinkle both sides of fillets with spice mixture, and gently pat mixture onto fish.
  • Place fillets into hot pan without crowding. Carefully pour about 1 teaspoon melted butter over each fillet. Cook until fish has a charred appearance, about 2 minutes. Turn fillets, spoon 1 teaspoon melted butter over each, and cook until charred. Repeat with remaining fish.

1 (14 ounce) package coleslaw mix
½ small red onion, chopped
¼ cup apple cider vinegar
¼ cup olive oil
2 tablespoons Creole mustard
½ teaspoon white sugar
¼ teaspoon celery seed
salt and ground black pepper to taste
2 pounds cod fillets
2 tablespoons blackening seasoning
2 teaspoons paprika
1 tablespoon olive oil
8 hamburger buns

Steps:

  • Combine coleslaw mix, onion, vinegar, oil, mustard, sugar, celery seed, salt, and pepper in a large bowl. Stir until evenly combined. Set aside.
  • Lay cod fillets on a clean work surface. Sprinkle 1/2 of the blackening seasoning and 1/2 of the paprika over the fillets. Flip fillets over and sprinkle with remaining blackening seasoning and paprika. Brush olive oil over both sides of the fillets.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Grill fish for 3 minutes. Flip and grill for 3 minutes more.
  • Cut fillets in half and place each half on a hamburger bun. Top with reserved slaw.

1/2 teaspoon ground cumin
Kosher salt and freshly ground pepper

4 6-ounce tilapia fillets
1/3 cup jarred salsa verde
2 tablespoons white wine vinegar
2 tablespoons sour cream
3 tablespoons extra-virgin olive oil
4 cups shredded coleslaw mix (one 14-ounce bag)
1 15-ounce can black-eyed peas, drained and rinsed
6 cups chopped romaine lettuce (about 1 small head lettuce)
Cornbread, for serving (optional)

Steps:

  • Combine the paprika, cumin and 1/4 teaspoon each salt and pepper in a small bowl. Rub one side of the fish fillets with the spice mixture.
  • Whisk the salsa verde, vinegar, sour cream, 1 tablespoon olive oil, 1/4 teaspoon salt, and pepper to taste in a large bowl. Add the coleslaw mix and black-eyed peas and toss. Add the lettuce to the bowl but don't toss.
  • Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add 2 fish fillets, spice-side down, and cook until nicely blackened, 3 to 4 minutes. Carefully turn the fillets and continue cooking until the fish is firm and flaky, 2 to 3 more minutes. Remove to a plate and keep warm. Repeat with the remaining 1 tablespoon olive oil and 2 fish fillets.
  • Toss the salad and season with salt and pepper. Serve the fish with the salad and cornbread.

If you like red snapper, then use it here - I think it's fabulous. The spice rub can be used on anything - it's the best I've ever tasted! I make 3 fillets for 2 people because it's so good!

1 teaspoon garlic powder
2 teaspoons onion powder
1 teaspoon cayenne
2 teaspoons paprika
1 -1 1/2 teaspoon salt (based on preference)
1 teaspoon ground black pepper
1 teaspoon dried thyme
1/4 teaspoon cumin
3 fish fillets (I love red snapper, but use anything you like)
2 tablespoons melted butter
cooking oil
lemon wedge

Steps:

  • Mix first 8 ingredients together, and drench the fish in the mixture.
  • Drizzle with melted butter and sauté in a very hot (not burning), heavy (cast iron!) skillet until blackened, only a few minutes per side.
  • Turn and repeat on other side.
  • Serve with lemon wedges.

  • To make dressing, in a food processor, combine half of avocado with cotija cheese, sour cream, 2 tbsp of lime juice, 1 tbsp taco seasoning, olive oil and generous pinch of salt and black pepper. Pulse until fine pureed. Add 1-2 tbsp water if dressing looks too thick. (adjust lime juice/salt per taste.). Remove in a bowl and set aside. Splash 1 tbsp of lime juice on remaining avocado and set aside.
  • In a bowl, add sliced red onion, add remaining 1 tbsp of lime juice with pinch of salt. Toss and set aside.
  • Heat a non-stick pan with few tbsps of oil for shallow frying. Pat dry fish with paper towel. Season both sides with few pinches of salt and liberal coat of seasoning. Cook fish in skillet until crisp and flaky. I like to cook 2-3 minutes each side. Remove in a plate.
  • To assemble salad, add half of dressing in salad bowl. Layer all chopped veggies and beans on top. Tear fish into rough bite size pieces and top on the salad. Finish with marinated red onion, avocado and torn tortilla chips. Serve remaining dressing on side or top over the bowl. Serve and enjoy!
