This seared blackened ahi tuna is made with a blackened seasoning mix of paprika, cayenne pepper, ground ginger, black pepper, oregano, fennel seeds, clove.

- Rinse the fish and pat dry with paper towels. Slice into 1/2 inch steaks.
- In a small bowl mix together the spices and set aside.
- Place a frying pan or cast iron skillet over high heat until it starts to smoke. Keep kitchen area well ventilated.
- Toss the ahi tuna in melted butter and then coat with spice mixture on both sides. Press spice mixture to adhere. Immediately sear on high heat each side for 10 seconds for pink in the middle, or for no more then 30 seconds per side to cook through well. Serve immediately.

HOW TO MAKE BLACKENED AHI TUNA

- Combine blackened seasoning ingredients together in a small bowl.
- Place ahi tuna steaks on a cutting board or plate. Dry all sides with a paper towel.
- Sprinkle half of the seasoning on the top side of the ahi tuna steaks and rub it in.
- Turn steaks over and sprinkle the remaining blackened seasoning on the other side of the steaks. Rub in completely on all sides (edges as well!).
- Heat a cast iron or metal pan on the stove. Let heat for 2-minutes and then add butter.
- Let butter melt and make sure the pan is hot (should be 4-5 minutes since first turned on).
- Place seasoned ahi tuna steaks flat side down (either side is fine, but the larger flat side).
- Let sear for 60-seconds (don't move until 60-seconds are up).
- Flip over (using tongs) and sear the other side for an additional 60-seconds.
- After fully seared, remove from the heat and onto a cutting board. Turn off the stove.
- Let the blackened ahi tuna steaks cool for 3-5 minutes.
- Slice in thin pieces (about ¼-½" thick slices).
- If making extra, make sure to place in fridge in an airtight container immediately. Should be in fridge no more than 2-3 days.

BLACKENED TUNA STEAKS WITH MANGO SALSA
Steps:
- Whisk together the olive oil, lime juice, and garlic in a bowl. Rub the tuna steaks with the mixture. Place the steaks in a sealable container and chill in refrigerator 3 hours.
- Combine the mango, bell pepper, Spanish onion, green onion, cilantro, and jalapeno pepper in a bowl; stir. Add the lime juice and 1 1/2 teaspoons olive oil and toss to combine. Chill in refrigerator 1 hour.
- Stir together the paprika, cayenne pepper, onion powder, salt, pepper, thyme, basil, oregano, and garlic powder in a bowl. Remove the tuna steaks from the refrigerator and gently rinse with water and then dip each side of each steak in the spice mixture to coat.
- Heat 2 tablespoons olive oil in a large skillet over medium heat. Gently lay the tuna steaks into the hot oil. Cook the tuna on one side for 3 minutes; remove to a plate. Pour the remaining 2 tablespoons olive oil into the skillet and let it get hot. Lay the tuna with the uncooked side down into the skillet and cook another 3 minutes; remove from heat immediately.
- Spoon about 1/2 cup of the mango salsa onto each of 4 plates. Lay the tuna steaks atop the salsa and serve immediately.

- Use a paper towel to pat the thawed, raw tuna steak dry.
- Mix together all of the spices in a shallow bowl until well combined.
- Press the dry rub onto the exterior of the tuna steak.
- Heat 1-2 tablespoons of oil in a skillet set to high heat.
- For a medium rare tuna steak, Sear the largest side of the fish for about 60 seconds until the fish exterior turns from pink to white, then flip the tuna filet to sear the opposite side.
- Remove the fish from the skillet, and slice the fish through the sear.
- The fish should have a white edge but a pink center
- Let the fish rest for a few minutes, slice, and serve on salads, tacos, and sandwiches.

- Make the blackened seasoning. Mix the paprika, oregano, thyme, cayenne pepper, black pepper, onion powder, garlic powder and salt in a shake top bottle, or small bowl. Preheat grill to high. Coat all sides of tuna steaks in a thick coating of blackening seasoning, pressing into the flesh of the fish. Spray one side with cooking spray. Place sprayed side down on grill grates. Close lid and cook 1-2 minutes. Open lid, spray other side of fish and flip. Cook 1-2 minutes more. Tuna is finished when outside edges are cooked but middle is still rare.

- Make the mustard first: Mix all ingredients in a small saucepan.
- Bring to a boil, stirring often.
- When somewhat smooth, it's done.

BLACKENED TUNA CHESAPEAKE STYLE
Steps:
- Preheat a convection oven to 500 degrees F.
- Heat an iron skillet over medium high heat. Season both sides of the tuna steaks with blackening spice. Add the tuna to the hot skillet and sear each side for about 1 minute to seal in the moisture. Remove the tuna from the skillet and place in a broiler pan. Top each tuna steak with 1 ounce of butter and place in the oven. Cook for 6 minutes for medium rare or 8 minutes for well done.
- After you place your tuna in the oven start your Chesapeake topping by sauteing jumbo lump crabmeat with the Virginia Smithfield ham in the butter over medium heat until warmed through. When fish is done, place the Chesapeake topping on fish and finish off with Bearnaise sauce.

- Preheat oven to 400 deg.
- Mix first 7 ingredients in small bowl.
- Place steaks on baking sheet, brush on both sides with 1 T. oil. Sprinkle top of each with seasoning.
- Heat heavy large skillet over high heat until very hot. Add remaining 1 T. oil; swirl to coat.
- Place steaks seasoning side down in skillet. Cook until very brown on bottom (about 1 min) return steaks, browned side up to baking sheet.
- Place in oven; bake until done (about 8 min).

Steps:
- Generously coat tuna with Cajun seasoning.
- Heat oil and butter in a large skillet over high heat. When oil is nearly smoking, place steaks in pan. Cook on one side for 3 to 4 minutes, or until blackened. Turn steaks, and cook for 3 to 4 minutes, or to desired doneness.

- In a small mixing bowl, add Wasabi Powder with 1 tsp water and mix to form a paste (add another 1/2 tsp of water if the paste is too dry).
