This cornbread recipe contains no oil and tastes very, very good. Serve warm with honey, butter or margarine.

1 cup unbleached flour
1 cup cornmeal
¼ cup white sugar
1 teaspoon baking soda
¾ teaspoon salt
1 cup plain nonfat yogurt
2 eggs, beaten

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease an 8x8 inch baking pan.
  • In a large bowl, mix flour, cornmeal, sugar, soda and salt. Stir in yogurt and eggs. Do not over mix, stir only until well blended. Pour batter into prepared pan.
  • Bake in preheated oven for 20 to 25 minutes, or until center of the bread springs back when gently pressed.

2 egg whites
1 cup fat-free milk

Steps:

  • In a large bowl, combine the flour, cornmeal, sugar, baking powder and salt. In a small bowl, combine the egg whites, milk and applesauce. Stir into dry ingredients just until moistened. , Pour into a 9-in. square baking pan coated with cooking spray. Bake at 400° for 15-20 minutes or until a toothpick inserted in the center comes out clean. Remove from pan to wire rack. Serve warm.

This is a delicious recipe I've served many times to my family. I don't always shape the bread into a heart, but it is fun to do that for Valentine's Day or another special occasion. Even if you don't have a heart-shaped pan, garnishing with ribbon adds a colorful touch. One of our favorite meals is this corn bread with bean soup and a salad.

2 large eggs, room temperature
1 cup sour cream
1/2 cup canola oil
1 can (8-1/4 ounces) cream-style corn
1-1/2 cups cornmeal
1/4 cup all-purpose flour
2-1/4 teaspoons baking powder
3/4 teaspoon salt

Steps:

  • In a large bowl, beat eggs. Add sour cream, oil and corn; mix well. Stir in the dry ingredients just until combined. Pour into a greased and floured 5-cup heart shaped baking pan or a 9-in. round pan. Bake at 425° for 20-25 minutes or until a toothpick comes out clean. Cool 10 minutes in pan before removing to a wire rack.

1 cup buttermilk
½ teaspoon baking soda
1 cup cornmeal

  • Preheat oven to 375 degrees F (175 degrees C). Grease an 8 inch square pan.
  • Melt butter in large skillet. Remove from heat and stir in sugar. Quickly add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture in pan. Stir in cornmeal, flour, and salt until well blended and few lumps remain. Pour batter into the prepared pan.

1/4 cup sugar (more or less to taste)
1 teaspoon baking soda
1/2 teaspoon salt
1 cup plain nonfat yogurt
2 eggs, beaten (or 1/2 cup egg substitute)
1/2 cup whole kernel corn, drained (optional)
1/2 cup jalapeno pepper, chopped (optional)

Steps:

  • Preheat oven to 400 degrees F.
  • In a medium mixing bowl, combine dry ingredients.
  • Stir in yogurt and eggs. If using stir in corn and jalapeno peppers.
  • Pour into 8 inch square pan sprayed with cooking spray (or use a cast iron skillet).

This recipe comes from the "Wild Wild West Cookbook" I was given by my wonderful friend Tammie in the Bi-Annual Cookbook Swap 2009. Ive adapted it slightly, but will list my changes as options as it would be great otherwise also. This makes for a grainy, only slightly sweet, but super tasty bread, which can be enjoyed either with a savoury meal oron its own spread with butter and jam/honey. This is a very versatile recipe, which can be changed easily to suit the meal youre making. Please feel free to play with it. I could think of adding some vanilla or cinnamon to the batter for a more cakey version or using some chili powder and other spices for a hearty one.

1 cup cornmeal (I used half polenta half cornmeal)
1 cup unbleached flour (can use whole grain also)
1/4 cup oil
1 cup skim milk
2 egg whites (I used 1 whole egg)
1 tablespoon sugar (thats plenty for me, but if desired use up to 4 tbs)
3 teaspoons baking powder
1/2 cup corn kernel (fresh or canned or thawed) (optional)

Steps:

  • Combine flour, cornmeal, baking powder (spices if using, see description) and sugar in a big bowl.
  • In a second bowl beat together egg whites (or egg), milk and oil. Stir into dry ingredients until just combined.
  • Stir in corn kernels if using and fill into prepared tin (either a 8 inch pie plate or muffin tins).
  • Bake at 400°F for about 20 minutes (until tester comes out clean).
  • Enjoy!

This recipe is based on a recipe I found on the back of the Quaker Yellow Corn Meal container. I modified it to use whole wheat flour, no oil, and no sugar, so that it's healthier. Plus, this turns out a bit "heavier" than normal cornbread; it has a nice crunchy crust but a moist and chewy center. You can use 2 egg whites or 1 whole egg (beaten) instead of the Egg Beaters egg substitute, if you prefer.

Steps:

  • Preheat oven to 400°.
  • Grease an 8 or 9-inch pan (I use a loaf pan).
  • Combine the dry ingredients (flour, corn meal, Sweet& Low, baking powder, and salt).
  • Stir in the milk, vanilla, applesauce and Egg Beaters (or the egg); mix well.
  • The batter will appear "grainy".
  • Pour the batter into the prepared pan.
  • Bake 20 to 25 minutes or until a toothpick inserted in the center comes out clean (mine typically bakes for 23 minutes).
  • Remove the loaf from the pan and allow to cool for a few minutes before slicing.
  • Serve warm topped with a touch of honey, or calorie-free spray butter--or try spreading a thin layer of unsweetened applesauce on a slice for a slightly sweet and very tasty treat!
