1/2 tablespoon prepared horseradish
1 teaspoon Worcestershire sauce
1/2 teaspoon soy sauce
1/2 teaspoon vodka
1/2 lemon, zested and juiced
Kosher salt and freshly ground black pepper
16 peeled and deveined cooked extra-large shrimp (about 1 pound), tail on
1/2 celery stalk, finely diced, plus 16 small celery stalks with leaves, for garnish

Steps:

  • Mix together the ketchup, horseradish, Worcestershire sauce, soy sauce, vodka and lemon zest and juice. Season with salt and pepper.
  • Transfer the sauce to 16 shot glasses, then top each with a shrimp and a sprinkle of diced celery. Place a celery stalk with leaves into each glass.

1 lemon, halved
1 cup dry white wine
1 bay leaf
1/2 teaspoon peppercorns
Salt
1 bottle of your favorite vodka
1 bottle of a good store bought Bloody Mary mix
1 teaspoon cracked pepper
Hot sauce, to taste
Worcestershire sauce
Olive juice, to taste
Bamboo skewers, soaked in water for 30 to 60 minutes

Steps:

  • 1 pound large shrimp, peeled and deveined
  • Place 6 cups of water in a medium saucepan. Add lemon halves, white wine, bay leaf, peppercorns and salt, to taste. Bring to a boil and add the shrimp. Cook for 1 minute or until the shrimp turn pink. Immediately plunge shrimp into a bowl of ice water to stop the cooking process. Strain the shrimp and place into a bowl in the refrigerator until ready to use. In a large pitcher, mix 1-ounce vodka for every 6 ounces Bloody Mary mix. Season with cracked pepper, hot sauce, Worcestershire sauce, olive juice and shake. Serve in decorative glasses with skewered shrimp as garnish.

¾ cup horseradish
½ teaspoon sea salt
2 teaspoons freshly ground black pepper
½ cup clam juice
¼ cup fresh lime juice
¼ cup fresh lemon juice
1 head-on prawn per cocktail
Olive oil
Pinch kosher salt
Ice
5 ounces Bloody Mary mix
2 ounces vodka
1 raw oyster, shucked
1 grilled prawn

Steps:

  • Make the Bloody Mary mix: In a food processor, add the onion and water, and pulse until smooth.
  • In a large pitcher, combine the onion purée and the remaining ingredients, and stir. Refrigerate for at least 2 hours or overnight.
  • Make the grilled prawn(s): Place a grill pan over medium-high heat. Drizzle the prawn(s) with olive oil and sprinkle with salt. Grill, flipping occasionally, until bright pink and the meat is cooked through, 8 to 10 minutes.
