CREAM CHEESE TART SHELLS
Steps:
- Blend cream cheese and butter or margarine. Stir in flour just until blended. Chill about 1 hour. This can be made ahead and chilled for up to 24 hours.
- Preheat oven to 325 degrees F (165 degrees C).
- Shape dough into 24 one-inch balls and press into ungreased 1 1/2 inch muffin cups (mini-muffin size) to make a shallow shell. Fill with your favorite filling and bake for 20 minutes, or until the crust is light brown.

Steps:
- For crust:
- Mix first 4 ingredients in processor. Add butter and cut in using on/off turns until mixture resembles coarse meal. Add cream cheese and pulse 3 times to combine. Blend in enough ice water by tablespoonfuls until moist clumps form. Gather dough into ball; flatten into disk. Transfer to lightly floured surface. Roll out dough to 15-inch round. Transfer dough to 11- to 12-inch-diameter tart pan with removable bottom. Fold in excess dough to form double-thick sides. Transfer tart pan to freezer and chill crust for 1 hour.
- Preheat oven to 350°F. Line crust with foil; fill with dried beans or pie weights. Bake until sides are set, about 15 minutes. Remove foil and beans and bake until crust is firm, about 20 minutes. Transfer tart pan to rack; let crust cool completely in pan.
- For filling:
- Using electric mixer, beat cream cheese and butter in large bowl until light. Beat in powdered sugar, then remaining ingredients.
- Spread cream cheese filling evenly in crust. Refrigerate until filling sets, about 2 hours.
- For glaze:
- Combine first 6 ingredients in medium saucepan over high heat. Boil 2 minutes. Add cranberries. Return to boil. Boil 1 minute. Transfer glaze to bowl and cool completely.
- Spoon glaze over filling. Cover and refrigerate until firm, about 4 hours. (Can be prepared 1 day ahead. Keep refrigerated.) Garnish tart with orange peel.

Steps:
- Preheat oven to 350 degrees.
- In a small saucepan combine the cranberries, 1/4 cup of white sugar and the orange juice.
- Cook, uncovered over medium heat until the cranberries pop and the mixture thickens just a bit, stirring constantly to prevent scorching.
- Set aside.
- In a food processor combine the cream cheese, remaining sugar, egg, egg white and vanilla or almond extract.
- Process until smooth.
- Set aside.
- Spray a 9-inch tart pan with the cooking spray.
- Lightly spray 1 sheet of phyllo dough, fold in h alf and gently press into tart pan.
- Edges will extend over edge.
- Repeat and place second sheet across first in a criss-cross pattern.
- Repeat with remaining two sheets so that all of the tart pan is covered.
- Turn under edges and bake for 5 minutes.
- Spoon cream cheese mixture into phyllo crust, spreading evenly.
- spoon Cranberry mixture over cream cheese mixture, spreading evenly.
- Using a fork marble slightly but dont go too deep.
- Bake for 25 minutes.
- Let cool for 1 hour on a wire rack.
- Cover and chill for 4 hours.
- Remove and drizzle on both kinds of melted chocolate.
- Garnish with candied orange peel.
- Serve.

- Preheat oven to 375°. Unroll the crust into a 9-in. pie plate; flute edge. In a small bowl, beat cream cheese, milk and lemon juice until smooth. Spread evenly into crust., In a small bowl, mix cranberry layer ingredients; spoon over cream cheese mixture. For topping, in another bowl, mix flour, brown sugar and cinnamon; cut in butter until crumbly. Stir in pecans. Sprinkle over cranberry layer., Bake 45-55 minutes or until crust and topping are golden brown. Cover edge loosely with foil during the last 10 minutes if needed to prevent overbrowning. Remove foil. - Press dough onto the bottom and up the sides of a 10-in. tart pan with removable bottom. Bake at 400° for 9-11 minutes or until lightly browned. Cool on a wire rack., In a large saucepan, combine the sugar, cornstarch and water until smooth. Add cranberries. Bring to a boil over medium heat. Reduce heat to low; cook and stir for 3-5 minutes or until thickened and berries have popped. Remove from the heat; cool to room temperature. Stir in the sugar substitute. , In a small bowl, beat cream cheese and 1 cup whipped topping until smooth; add lemon zest. Spread over pastry; top with cranberry mixture. I got this recipe from a Healthy Choice recipe booklet. Every single time I made this pie, somebody ask me for the recipe. The original recipe asks for everything fat free and egg substitute instead of regular eggs. I post it the way I normally make it.

Steps:
- Heat oven to 350°F.
- Combine cornmeal and sugar; stir in 1-cup cheese, milk, eggs and oil. Stir just until moistened.
- Press mixture on bottom and up sides of 9"pie plate sprayed with non stick cooking spray.
- In a 10"skillet, cook ground turkey, green peppers, onion, garlic and jalapeños over medium high heat until turkey is no longer pink.
- Drain. Stir in tomato sauce, corn, chili powder, cumin and cayenne.
- Spoon turkey mixture into cornmeal crust.
- Bake at 350 F, 30 to 35 minutes.
- Remove from oven; sprinkle with 1-cup cheese.
- Return to oven and bake until cheese melts.
- Let stand 5 minutes before serving.
- Serve with sour cream and salsa if desired.
