BACON EGG SALAD CROISSANTS

- In a large bowl, combine the celery, mayonnaise, mustard, salt and pepper. Stir in eggs and bacon. Place a lettuce leaf, tomato slice and 1/2 cup egg salad on each croissant.

- Place eggs in a large pot and cover with an inch of water. Bring to a boil over medium-high heat, cover, and remove from heat. Let sit for 10 minutes. Drain and run under cold water to stop the cooking. Peel the eggs and chop.
- Combine eggs with mayonnaise, Cheddar cheese, green onions, mustard, and pepper in a large bowl. Stir gently until evenly mixed. Fold in bacon and tomatoes.
- Layer egg salad and lettuce between 2 slices of bread to make each sandwich.

- Preheat grill or toaster oven.
- Cook bacon in a large frying pan until crisp.
- Meanwhile make the aioli- mix aioli ingredients together- set aside.
- Toast croissants under the grill for about 30 seconds.
- Split croissants in half; spread aioli over one half of each croissant (botton half) and then top with bacon, tomato, lettuce and remaining croissant half.
