Steps:

  • Bring 2 1/2 cups water, 1/4 onion, 1 bay leaf, 1 quartered celery stalk and a few peppercorns to a boil in a large pot. Add 3 pounds scrubbed steamer clams; cover and cook until they open, about 10 minutes (discard any that do not open). Drain, then strain the liquid. To eat, remove the clams from their shells and rinse in the liquid. Dip in melted butter and serve with lemon wedges.

  • Fill a cocktail shaker with ice. Pour vodka, rum, gin, tequila, triple sec, and sour mix over ice; cover and shake. Pour cocktail into a Collins or hurricane glass; top with splash of cola for color. Garnish with a lemon slice.

Steps:

  • Fill a kettle with cold water and set it to boil. As the water nears a boil, pour a little of it into a teapot to warm it, swirling the water around and then discarding it.
  • For each cup of tea desired, place a spoonful of loose tea leaves into the empty, warmed teapot. Pour the boiling water into the teapot and let the tea steep 3 to 6 minutes, depending on the type of tea leaves.
  • Gently stir the tea before pouring it through strainers into teacups. Serve with milk and sugar cubes, or lemon slices and honey.

1 ounce Triple Sec
1 ounce lime juice
1 ounce tequila

2 ounces cranberry juice
Lemon slice, optional

Steps:

  • In a mixing glass or tumbler, combine the sugar, vodka, rum, gin, Triple Sec, lime juice and tequila; stir until sugar is dissolved. , Place ice in a highball glass; pour in the sugar mixture. Top with cranberry juice. Garnish with lemon if desired.

1/4 teaspoon dried mint
1/2 teaspoon allspice
6 tablespoons lemon juice (fresh is best)
3/4 cup orange juice (fresh is best)
2 quarts water, boiling

Steps:

  • Boil water and sugar together for 5 minutes; add tea, mint and allspice.
  • Cover and allow to steep for 10 minutes.
  • Strain, add fruit juices, boiling water and bring to a boil.

2 1/2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon mace
1/4 teaspoon clove
1/2 cup butter
1 cup sugar
2 eggs
1/3 cup molasses
3/4 cup milk

Steps:

  • Butter two 9" round cake pans and line with parchment paper or waxed paper; preheat oven to 350°F.
  • Sift dry ingredients together.
  • Cream butter and sugar thoroughly and add eggs one at a time, beating well after each addition.
  • Blend in molasses and add the sifted ingredients alternately with the milk; beat well.
  • Pour into prepared cake pans and bake for about 25 minutes or until cakes test done.

2 cups milk
4 teaspoons white vinegar
1 cup all-purpose flour
3/4 cup yellow cornmeal
3/4 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
2 tablespoons butter
1 cup heavy cream

Steps:

  • Preheat oven to 350 degrees. Combine milk and vinegar in a bowl and set aside to sour. In another bowl, combine flour, cornmeal, sugar, baking soda and salt. Whisk eggs into the soured milk. Stir into dry ingredients and set batter aside.
  • Melt butter in a 12-inch cast-iron skillet. Pour in the batter. Pour cream into the center, slide skillet into the oven and bake until golden brown on top, about 45 minutes. Slice into wedges and serve warm.
