GROWN UP MAC AND CHEESE



Grown Up Mac and Cheese image

For a cozy dinner for two, try Ina Garten's Grown-Up Mac and Cheese, which features cheddar, Roquefort and Gruyre, from Barefoot Contessa on Food Network.

4 ounces thick-sliced bacon
Vegetable oil
Kosher salt
2 cups elbow macaroni or cavatappi
1 1/2 cups milk
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
4 ounces Gruyere cheese, grated
3 ounces extra-sharp Cheddar, grated
2 ounces blue cheese, such as Roquefort, crumbled
1/4 teaspoon freshly ground black pepper
Pinch nutmeg
2 slices white sandwich bread, crusts removed
2 tablespoons freshly chopped basil leaves

Steps:

  • Preheat the oven to 400 degrees F.
  • Place a baking rack on a sheet pan and arrange the bacon in 1 layer on the baking rack. Bake for 15 to 20 minutes, until the bacon is crisp. Remove the pan carefully from the oven - there will be hot grease in the pan! Transfer the bacon to a plate lined with paper towels and crumble when it is cool enough to handle.
  • Drizzle oil into a large pot of boiling salted water. Add the macaroni and cook according to the directions on the package, 6 to 8 minutes. Drain well.
  • Meanwhile, heat the milk in a small saucepan, but don't boil it. Melt the butter in a medium pot and add the flour. Cook over low heat for 2 minutes, stirring with a whisk. While whisking, add the hot milk and cook for a minute or 2 more, until thickened and smooth. Off the heat, add the Gruyere, Cheddar, blue cheese, 1 teaspoon salt, pepper, and nutmeg. Add the cooked macaroni and crumbled bacon and stir well. Pour into 2 individual size gratin dishes.
  • Place the bread slices in a food processor fitted with a steel blade and pulse until you have coarse crumbs. Add the basil and pulse to combine. Sprinkle the bread crumb mixture over the top of the pasta. Bake for 35 to 40 minutes, or until the sauce is bubbly and the macaroni is browned on the top.

Mac 'N Cheese with Bacon and Cheese image

1 pound elbow macaroni
4 cups milk
2 or 3 sprigs thyme
4 cloves garlic, smashed and divided
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
5 1/2 cups shredded sharp white Cheddar
Freshly ground black pepper
1/4 cup chopped flat-leaf parsley
4 slices bacon, cut crosswise into thin strips
1 large onion, diced
2 garlic cloves, smashed
Leaves from 1/4 bunch fresh thyme

Steps:

  • Bring a pot of salted water to a boil over high heat. Add the macaroni and cook for 8 to 9 minutes, until al dente. Drain.
  • Preheat the oven to 400 degrees F.
  • In a small saucepan heat the milk with the thyme sprigs and 2 garlic cloves. Melt the butter in a large, deep skillet over medium-high heat. Whisk in the flour and cook for about 1 minute, stirring constantly, to keep lumps from forming. Strain the solids out of the milk and whisk it into the butter and flour mixture. Continue to whisk vigorously, and cook until the mixture is nice and smooth. Stir in the 4 cups of the cheese and continue to cook and stir to melt the cheese. Season with salt and pepper. Add the cooked macaroni and the parsley and fold that all in to coat the macaroni with the cheese mixture. Scrape into a 3-quart baking dish and sprinkle with the remaining 1 1/2 cups cheese. Bake for 30 minutes, or until hot and bubbly.
  • While that bakes, heat a saute pan. Add the bacon, render the fat and cook until crispy. Add onion, garlic and thyme leaves and cook for about 5 minutes to soften the onion. Season with salt and pepper.
  • To serve, scatter the bacon mixture over the mac and cheese. Use a big spoon to scoop out servings, making sure you get some of the smoking bacon mixture on each spoonful.

2 tablespoons butter
1/4 cup flour
1 cup whipping cream
3 cups grated cheddar cheese
1 1/2 cups crumbled blue cheese
2 cups whole milk
1 teaspoon minced fresh chives, to taste

1 dash pepper

Steps:

  • Preheat oven to 350* and butter 13x9 glass baking dish.
  • Cook pasta (about 8 min) and drain.
  • Melt butter in heavy large saucepan over medium to low heat, then add flour and cook 1 minute stirring constantly (do not allow to brown).
  • Gradually whisk in cream and milk and simmer until mixture thickens slightly, whisking occasionally (about 3 minutes).
  • Reduce heat to low and add grated cheddar cheese and only 1 cup blue cheese.
  • Whisk about 2 minutes or when cheese starts to melt, then flavor with salt and pepper.
  • Add cooked pasta to sauce, stirring to coat, and transfer mixture to 13x9 dish.
  • Sprinkle with remaining 1/2 cup blue cheese and bake about 25 minutes or until sauce begins to bubble.
  • Sprinkle with chives and serve- enjoy!

¼ cup butter
½ cup sour cream
1 egg, beaten
2 tablespoons cream cheese, softened
4 cups grated Asiago cheese
4 cups grated Vermont Cheddar cheese

2 tablespoons butter
1 large onion, sliced thin
4 cloves garlic, minced
⅛ teaspoon brown sugar
¼ cup chopped fresh parsley

Steps:

  • Bring a large pot of lightly salted water to a boil, add macaroni and cook for 8 minutes (noodles will still be slightly hard). Drain noodles and transfer to a large bowl with 1/4 cup of butter and toss to coat. Whisk together the sour cream, egg, and cream cheese; add to the pasta and mix well. Stir in 3 cups of grated Asiago and 3 cups of grated Cheddar cheese, reserving the remaining 2 cups of cheese for the topping.
  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate and chop into small pieces.
  • Preheat an oven to 400 degrees F (200 degrees C).
  • Stir 2 tablespoons butter, the onion, and garlic into the bacon drippings in the pan and cook and stir for 2 minutes. Reduce the heat to medium-low, and add the brown sugar.   • Pour the sauce over the macaroni mixture, stirring well. Transfer to a greased 9x13 inch pan and sprinkle with the remaining 2 cups of Cheddar cheese. Top cheese with the onion breadcrumb mixture.
  • Bake in preheated oven until bubbling, hot and golden brown on top, about 30 minutes.

I came up with this recipe one Sunday night after a busy weekend. My boys wanted mac n' cheese but I was tired of the same old thing. So..the result is this...it is awesome, smoky, creamy and crunchy. For a more adult taste, sub out the gruyere or parmesan for blue cheese. That is what my husband and I do when the kids are out or at Grandma's. I normally don't follow a recipe, so I estimated some of the measurements.

1 lb elbow macaroni
1 cup sharp cheddar cheese (shredded)
1 cup greyere cheese (shredded)
1/2 cup parmesan cheese (shredded)
1 cup milk
1 cup cream
2 tablespoons butter
2 tablespoons flour
1 1/2 cups crushed cheese crackers
1 lb bacon
salt and pepper

Steps:

  • Boil pasta in hot water 6-7 minutes until al dente. Drain.
  • Cook bacon in the microwave or oven until just crisp. Crumble.
  • Meanwhile, melt butter in a skillet, add flour and whisk until smooth.
  • Combine milk and cream and heat in microwave or stove until warm, but not boiling. Add to butter/flour mixture to make a roux.
  • While the roux is thickening, pulse cheese crackers in the food processor or crush w/ rolling pin.
  • Add cheeses (reserve 1/2 cup) to the roux, turn temp to low and allow to melt slowly. Add salt and pepper to taste.
  • Add 1/2 bacon crumbles to the roux; pour over pasta and mix.
  • Pour pasta/roux mixture into greased 9 x 13 pan.
  • Top with remaining bacon, then cheese crackers, sprinkle with reserved 1/2 cup cheddar.
  • Bake at 400°F for 20 minutes or until brown and crispy.

¼ cup margarine
1 tablespoon minced onion
¼ cup all-purpose flour
2 cups milk
4 ounces processed cheese food

1 pinch ground black pepper
¼ teaspoon dry mustard

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the fusilli, and return to a boil.   • Preheat the oven to 350. Cook the macaroni according to the package directions; omitting salt. Drain and set aside.

  • Melt the remaining 1 tablespoon of butter in a small bowl, and whisk together the melted butter, bread crumbs, and remaining 1 tablespoon of parmesan cheese. Sprinkle the bread crumb mixture over the pasta, and top with the remaining bacon pieces.
  • Bake 15 minutes, or until the bread crumbs are toasted and the cheese sauce is bubbly. Serve hot.
