Weight Watchers Blueberry Cobbler Dessert Recipe - A quick and easy 30 minute recipe with blueberries, ginger, sugar, lemon juice, cinnamon, and Bisquick.

1½ cups blueberries (fresh or frozen) (thawed)
1 tsp crystallized ginger
2 tbsp sugar
1 tsp lemon juice
1 tsp lemon zest (grated)
¼ tsp cinnamon
½ cup bisquick baking mix - reduced-fat
3 tbsp milk - skim
½ tsp sugar

Steps:

  • Preheat the oven to 450° F
  • Prepare 2 - 6 oz. custard cups by spraying with Pam cooking spray. Set aside
  • In a mixing bowl, add blueberries, ginger, sugar, lemon juice, lemon zest, and cinnamon. Stir to mix.
  • Pour into prepared custard cups.
  • In a mixing bowl, add Bisquick and skim milk. Mix well
  • Drop spoonfuls of Bisquick mix on top of blueberries in custard cups.
  • Sprinkle sugar over top of contents of custard cups.
  • Put custard cups on a baking pan to prevent spillage, and place in preheated oven. Bake for 20 minutes or until golden brown and bubbling.

1 1/2 cups fresh blueberries (can use thawed frozen)
2 tablespoons sugar
1 teaspoon crystallized ginger, minced
1 teaspoon lemon zest, grated
1 teaspoon lemon juice
1/4 teaspoon cinnamon
1/2 cup reduced-fat baking mix, Bisquick
3 tablespoons skim milk
1/2 teaspoon sugar

Steps:

  • Preheat oven to 450. Spray two 6oz custard cups with non-stick spray.
  • Combine blueberries, sugar, ginger, lemon zest and juice and cinnamon. Divide between custard cups.
  • Combine together Bisquick and milk in small bowl. Spoon over blueberry mixture. Sprinkle with sugar.
  • Place on baking pan and bake 20 minutes until golden and bubbly.
  • Serve with vanilla ice cream.

2 (12 ounce) bags frozen mixed berries, thawed (about 6 cups)
1/4 cup whole wheat flour
1/4 cup sugar
2 teaspoons orange zest, finely grated
1/4 cup whole wheat flour
1/4 cup all-purpose flour
2 tablespoons sugar, divided
1 teaspoon sugar, divided
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons chilled unsalted butter, cut into small pieces
1/3 cup low-fat buttermilk
2 tablespoons canola oil

Steps:

  • Preheat the oven to 400 degrees F. Coat an 8 by 8-inch baking dish with cooking spray.
  • In a large bowl, toss the berries with whole wheat flour, sugar and zest. Transfer the berry mixture to the baking dish and set aside.
  • In a medium bowl whisk together the whole-wheat flour, all-purpose flour, 2 tablespoons of sugar, baking powder, baking soda and salt. Cut in the butter using 2 knives or a pastry cutter until many small pebble-sized pieces are formed.
  • In a small bowl or pitcher, whisk together the buttermilk and oil. Add the buttermilk-oil mixture to the dry ingredients and mix until just moistened. Do not over mix. Drop the batter onto the fruit forming 6 mounds. Sprinkle with the remaining teaspoon of sugar. Bake for 30 minutes, until fruit is bubbly and top is golden. Let stand for at least 10 minutes before serving.

1/2 C uncooked cornmeal
2/3 C packed light brown sugar
2 tsp. lemon zest, zested
1/4 tsp. ground allspice
1-1/4 C flour
6 C blueberries
3 tsp. canola oil
1 Tbl. lemon juice
1 large egg
1-1/2 tsp. baking pwder
1/4 tsp. baking soda
1/4 tsp. table salt

Steps:

  • Preheat oven to 350F. Whisk together milk, cornmeal, and 2 Tbl. of brown sugar in a medium bowl. Set aside for a few minutes to allow the cornmeal to soften. In a 2-qt. (13x9-inch), combine zest, allspice, 2 tablespoons of flour and remaining brown sugar, mix in blueberries and level the mixture. Whisk oil, lemon juice and egg into milk mixture. Add baking powder, baking soda, salt and remaining flour; whisk just until combined. Pour batter evenly over blueberries. ake for 40 minutes, or until the fruit is bubbly and a knife inserted into the center of the topping comes out clean. Cut into 12 pieces and serve.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place butter in an 8-inch square baking dish.
  • Melt butter in the preheating oven, about 5 minutes. Remove from oven.
  • Mix flour, sugar, and milk in a bowl until combined; pour batter over melted butter. Scatter blueberries over batter.
