BLUEBERRY STRATA
Blueberries, cream cheese,and bread bake in a creamy custard to create the best breakfast ever!

Steps:
- Coat a 9x13 inch baking dish with cooking spray. Place 1/2 of the bread cubes in dish; top with 1 1/2 cups blueberries. Scatter cream cheese over berries. Cover with remaining bread cubes. In a mixing bowl, whisk together eggs, maple syrup, and milk. Pour egg mixture over bread in pan. Cover, and chill overnight.
- Preheat oven to 350 degrees F (175 degrees C).
- Bake strata, covered, for 30 minutes. Remove cover, and bake for an additional 30 minutes.
- While the strata is baking, prepare the blueberry syrup. Combine sugar, cornstarch, and water in a saucepan. Bring mixture to a boil over high heat; cook for 5 minutes. Pour in remaining 1 1/2 cups blueberries; continue cooking for 10 minutes. Remove from heat, and stir in butter. Serve warm over slices of the strata.

GOOSEBERRY-BLUEBERRY JAM
Tart-sweet blueberries, as it turns out, are the perfect complement to gooseberries. And because gooseberries are naturally high in pectin, you can leave your box of the stuff in the cupboard. It thickens up beautifully on its own.

- Pick through and rinse gooseberries and blueberries, removing stems and leaves and discarding any bad berries.
- Add the lemon juice and water to a medium saucepan.
- Over medium heat, slowly add the sugar to the lemon and water, whisking as you go, until the sugar-water mixture is smooth. If necessary, you can add a bit more water.
- Heat on medium until the sugar dissolves and the mixture is clear. Just don't keep heating it, because you'll end up with caramel - in this case, not good! And yes, I've done it.
- Add the gooseberries, and cook (keeping the heat at medium) for about 3 minutes.
- Stir in the blueberries (and the nutmeg, if using).
- Bring the mixture to a boil, and allow to boil for about 5 - 10 minutes until thickened.Tip: How do you tell it's the right consistency? Do the spoon text. Dip a cold metal spoon into the mixture, and pull it out sideways. If the mixture drips off in one stream, it's not ready. When the mixture drips off in two drips, it's close. Then the two drips begin to form a sheet, it's ready! Keep in mind it'll keep thickening up after it cools.
- Allow to cool a bit, then pour into jars. Store in an airtight container in the refrigerator.
BLUEBERRY AND GOOSEBERRY FOOLS
Fools can be made with any soft fruit; the amount of sugar will vary with the tartness of the fruit.

- Melt butter in a large skillet on medium heat, and add berries and sugar. Cover, reduce heat to low, and cook gently, stirring occasionally, until sugar has dissolved and berries have softened, about 5 minutes. Remove pan from heat, and lightly squash fruit with the back of a wooden spoon. Don't mash to a puree; some texture should remain. Cool completely in the refrigerator before proceeding.
- Whip cream to soft but not stiff peaks. Gently fold the cream into the cooled fruit mixture, leaving the mixture marbled. Serve immediately in individual bowls.

- Spread half the bread cubes onto bottom of 13x9-inch baking dish sprayed with cooking spray; cover with 1 cup blueberries, cream cheese and remaining bread.
- Whisk eggs, milk and cinnamon in medium bowl until well blended. Add 1/3 cup syrup and sugar; mix well. Pour over bread. Refrigerate 12 hours or overnight.
- Heat oven to 350ºF. Bake strata, covered, 1 hour to 1 hour 5 min. or until center is set and top is lightly browned, uncovering after 30 min.
- Bring remaining syrup and blueberries to boil in saucepan, stirring constantly; simmer on medium-low heat 1 min., stirring constantly. Serve over individual servings of strata.

STRAWBERRY STRATA

- Place the cheeses in a large bowl and stir together with a wooden spoon. Add the eggs, 1 at a time, mixing until completely incorporated before adding the next. Stir in the milk, strawberries, honey, cinnamon, and bread. Pour into an 8 by 10 by 2-inch casserole dish. If freezing, cover with plastic wrap and place in the freezer for 1 day and up to 1 month.
- To bake, preheat the oven to 350 degrees F. Bake covered with foil for 45 minutes. Increase the oven temperature to 400 degrees F. Remove the foil and continue baking for 30 to 35 minutes.

- Drain fruits, reserving syrups.
- Blend cream cheese, sugar, milk and vanilla.
- Set aside 2 TBS pineapple; stir remaining into cheese mixture.
- Spread over bottom of pastry shell; chill.
- Blend sugar, cornstarch and salt.
- Combine syrups and measure 1 1/2 cup; blend into the cornstarch mixture.
- Cook and stir until thickened.
- Add blueberries and lemon juice; stir and cool.
- Pour over cheese layer and chill.
- Top with whipped cream and reserved pineapple.
RASPBERRY CREAM CHEESE STRATA
Steps:
- Place half of the bread cubes in a shallow 1-qt. baking dish coated with cooking spray. Top with cream cheese and raspberries. In a small bowl, combine the eggs, syrup, milk and remaining bread cubes; spoon over raspberries. Cover and refrigerate overnight., Remove from the refrigerator 30 minutes before baking. Bake at 350° for 30 minutes. Uncover; bake 15-20 minutes longer or until set., Meanwhile, for syrup, combine the sugar, cornstarch and water in a saucepan until smooth. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, for 2-3 minutes or until syrup reaches desired consistency. Add berries; mash slightly. Remove from the heat; stir in butter. Pour over strata. Serve immediately.

- Cut cream cheese into about 8 cubes and place into a medium bowl. Beat until smooth with an electric mixer, about 2 minutes. Add blueberries, and mix on low until fruit is partially smashed. Add raspberries, and mix just until they're broken up. Add vanilla extract and maple syrup, and mix until desired consistency is reached.
- Spoon cream cheese into an airtight container and refrigerate until firmed up, about 30 minutes. Store in the refrigerator.

I found this in a Gooseberry Patch cookbook and I am posting for safe keeping. It was originally submitted by Kathy Grashoff from Ft. Wayne, IN. I think I will also add a dash of cinnamon and serve it with whipped cream. (Prep time includes the soaking time)

Steps:
- Place half of the bread in a greased 8x8" baking pan.
- Top with half of the blueberries.
- Top blueberries with cream cheese, remaining bread and remaining blueberries; set aside.
- Beat eggs, milk, sugar, vanilla, salt and nutmeg with an electric mixer on medium speed until well blended.
- Pour over bread mixture and refrigerate for 20 minutes to overnight.
- Bake, uncovered, at 325 for one hour.
