30 vanilla wafers, crushed (about 1 cup)
1 cup plus 3 Tbsp. sugar, divided
3 Tbsp. butter or margarine, melted
5 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
3 Tbsp. flour
1 Tbsp. vanilla
grated peel from 1 medium lemon
1 cup BREAKSTONE'S or KNUDSEN Sour Cream
4 eggs
2 cups fresh blueberries

Steps:

  • Preheat oven to 325°F if using a silver 9-inch springform pan (or to 300°F if using a dark nonstick 9-inch springform pan). Mix crumbs, 3 Tbsp. of the sugar and butter until well blended. Press firmly onto bottom of pan.
  • Beat cream cheese, remaining 1 cup sugar, flour, vanilla and lemon peel with electric mixer on medium speed until well blended. Add sour cream; mix well. Add eggs, 1 at a time, beating on low speed after each addition just until blended. Pour over crust; top with 2 cups of the blueberries.
  • Bake 1 hour 10 min. to 1 hour 15 min. or until center is almost set. Run small knife or spatula around rim of pan to loosen cake; cool before removing rim of pan. Refrigerate at least 4 hours before serving. Store leftover cheesecake in refrigerator.

1 cup graham cracker crumbs
2 tablespoons white sugar
¼ cup melted butter
2 (8 ounce) packages cream cheese, softened
1 cup sour cream
¾ cup white sugar
1 teaspoon vanilla extract
2 tablespoons all-purpose flour
4 eggs
2 cups frozen blueberries, dry pack
⅓ cup blueberry jelly

Steps:

  • Combine crumbs, 2 tablespoons sugar and butter. Pat mixture into the bottom of a 9 inch springform pan.
  • Mash cream cheese until soft and creamy. Gradually beat in sour cream, 3/4 cup sugar, vanilla and flour. Beat in eggs one at a time.
  • Pour mixture into crumb-lined pan. Bake in a preheated 325 degree F (165 degrees C) oven for 1 hour or until firm to the touch.
  • Cool and then remove cake from pan by loosening edges with a knife. Place frozen blueberries on top of cake. Melt jelly and spoon over blueberries to glaze. Chill until ready to serve.

1-1/2 cups fresh blueberries
1/4 cup sugar
1 tablespoon lemon juice
2 teaspoons cornstarch
1 tablespoon cold water
CRUST:
1 cup graham cracker crumbs (about 16 squares)
2 tablespoons sugar
2 tablespoons butter, melted
FILLING:
3 packages (8 ounces each) cream cheese, softened
1 cup sugar
1 cup sour cream
2 tablespoons all-purpose flour
2 teaspoons vanilla extract
4 large eggs, room temperature, lightly beaten

Steps:

  • Preheat oven to 350°. In a small saucepan, combine the blueberries, sugar and lemon juice. Cook and stir over medium heat for 5 minutes or until the berries are softened. Combine cornstarch and water until smooth; stir into the blueberry mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; cool to room temperature. 1 box (11 ounces) vanilla-wafer cookies, such as Nabisco Nilla
1/4 cup plus 3 tablespoons granulated sugar
1/2 teaspoon kosher salt
1 stick unsalted butter, melted
1 cup whole-milk ricotta
16 ounces cream cheese
1 cup confectioners' sugar
1 tablespoon finely grated lemon zest, plus 4 tablespoons fresh juice (from 1 to 2 lemons)
1 1/4 cups heavy cream
5 cups blueberries (from 3 pint containers)
1 1/2 teaspoons cornstarch
Fresh mint leaves, for serving (optional)

Steps:

  • Pulse cookies in a food processor until finely ground. Add 1/4 cup granulated sugar, 1/4 teaspoon salt, and butter; pulse until all crumbs are moist (you should have about 3 1/2 cups). Press mixture into the bottom of a 9-by-13-inch baking pan; refrigerate while making filling.
  • Blend ricotta, cream cheese, confectioners' sugar, zest, and 3 tablespoons lemon juice in clean food processor until very smooth. Transfer to a large bowl. Beat cream on medium-high speed to stiff peaks, then fold into ricotta mixture
  • Dollop 2 1/2 cups cream mixture over crust; spread evenly to cover with an offset spatula. Top with 2 cups berries. Dollop with remaining cream mixture; spread to cover berries. Wrap in plastic and refrigerate at least 8 hours.
  • In a small saucepan over medium-high heat, combine 1 1/2 cups blueberries with 2 tablespoons water and remaining 3 tablespoons granulated sugar, 1 tablespoon lemon juice, and 1/4 teaspoon salt. Cook, stirring, until blueberries begin to burst, 2 to 3 minutes. Whisk together cornstarch and 2 tablespoons water; stir into blueberry mixture. Bring to a boil, then cook 1 minute more. Remove from heat. Stir in 1 more cup berries; let cool completely. Spoon berry mixture over chilled cake. Garnish with remaining 1/2 cup berries and mint leaves. ¼ cup white sugar
¼ cup ground almonds
⅓ cup butter, melted
2 cups fresh blueberries
½ cup white sugar
2 tablespoons cornstarch
¾ cup water
2 (8 ounce) packages cream cheese, softened
4 cups vanilla ice cream

Steps:

  • Combine graham cracker crumbs, sugar, and almonds in a bowl. Pour in butter and mix until incorporated.
  • Grease a 10-inch springform pan and press crumb mixture over the bottom to make a crust.
  • Combine blueberries and sugar in a saucepan over medium heat; simmer for 5 minutes. Stir cornstarch into water until dissolved. Pour into the blueberry mixture and cook until thick, 5 to 10 minutes. Remove from heat and let cool.
  • Beat cream cheese with an electric mixer until light and fluffy. Mix in ice cream, 1 spoonful at a time, until blended.
  • Spoon 3/4 of the cream cheese mixture over the crust. Cover with the blueberry filling. Spoon remaining cream cheese mixture on top. Run a fork through the cheesecake to create swirls.
  • Freeze, uncovered, until firm, about 2 hours. Cover with plastic wrap and keep frozen.

3 cups fresh blueberries or 3 cups frozen blueberries
8 ounces cream cheese
2 cups sour cream
3/4 cup granulated sugar
2 large eggs
1 tablespoon lemon juice
1 cup fresh blueberries or 1 cup frozen blueberries
1/4 cup granulated sugar
2 tablespoons lemon juice

Steps:

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl, combine flour, finely chopped almonds, 1/4 cup sugar and baking powder.
  • Using a pastry blender, cut in butter until mixture is crumbly.
  • In a separate bowl, beat together egg, vanilla and almond extract.
  • Drizzle egg mixture over crumbly flour mixture and mix until egg mixture is just incorporated and the mixture is still crumbly.
  • Press mixture evenly over the bottom of an 11" x 1 1/2" spring form pan.

  • Remove from oven and let cool.
  • Spoon 3 cups of blueberries evenly over baked base.
  • Sprinkle remainder of 1/4 cup of sugar over the blueberries.
  • FILLING: In a mixing bowl using an electric mixer, combine cream cheese, sour cream, 3/4 cup of sugar, eggs and lemon juice and mix until smooth.
  • Pour cream cheese mixture over blueberries.
  • Bake in preheated 350 F oven for 1 to 1 1/4 hours or until center of cake is barely firm to the touch.
  • Remove cake form oven and immediately run a knife around inside of rim to loosen cake.
  • Let cool.
  • Cover and refrigerate for at least 8 hours.
  • SAUCE: Puree' 1 cup of blueberries in a blender.
  • In a small saucepan, combine blueberry puree' and sugar and cook over medium-high heat just long enough to dissolve sugar, about 3 to 4 minutes.
  • Add lemon juice, mix well and let cool.
  • TO SERVE: Remove sides from spring form pan.
  • Cut cheesecake into wedge slices.
  • Pour some blueberry sauce on each serving plate.
  • Place a piece of cheesecake in pool of sauce, then spoon more sauce over cheesecake.
  • If using frozen blueberries, make sure they are thawed, drained and patted dry with paper toweling.
