A family favorite that has my hubby coming back for seconds. Serve warm with ice cream or whipped cream.

2 cups fresh blueberries
1 ½ cups pineapple chunks with juice
1 ½ teaspoons all-purpose flour
1 cup all-purpose flour
¾ cup quick-cooking oats
⅔ cup dark brown sugar
¾ teaspoon ground cinnamon
¾ teaspoon sea salt
¼ cup melted butter

Steps:

  • Combine blueberries, pineapple chunks with juice, and 1 1/2 teaspoons flour in a saucepan over medium heat; cook, stirring frequently, until mixture thickens, about 5 minutes. Spread mixture into an 8-inch baking dish.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine 1 cup flour, oats, brown sugar, cinnamon, and sea salt together in a bowl; mix in butter until topping is crumbly. Sprinkle topping over blueberry mixture.
  • Bake in the preheated oven until topping is lightly browned, 30 to 35 minutes.

Here's a recipe from Upstate New York. Very simple to make and my family really enjoys them.

2 ½ cups all-purpose flour
2 teaspoons baking powder
1 pinch salt
½ cup butter
1 cup white sugar
2 eggs, beaten
½ teaspoon lemon extract
½ cup milk
1 cup fresh blueberries

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheet.
  • Sift together flour, baking powder and salt.
  • In a large bowl, cream butter or margarine with sugar. Beat in eggs and lemon flavoring. Mix in milk and flour mixture alternately in three parts, starting with the milk. Gently mix in blueberries.
  • Drop batter by tablespoons onto prepared sheets 1 1/2 inches apart.
  • Bake 12 to 15 minutes.

1 cup melted butter
2 cups white sugar (I cut to 1/3 cups, didn't miss the rest at all)
2 T vanilla
1/2 T salt
1 1/2 tsp baking soda
2 large eggs, beaten
2 1/2 cup flour (I used half whole wheat, half white)
1 cup dried sweetened blueberries
2 cups ground oatmeal (grind in blender or food processor)

Steps:

  • Melt butter, add sugar, then vanilla, salt, baking soda; eggs, flour, dried blueberries, and ground oatmeal. From into balls, flatten on cookie sheet. I often bake only one tray at a time, freeze the rest (already formed into cookies) to have easy, quick, and always fresh from the oven cookies. Bake at 350 F for 10-12 minutes.

This is really a delicious recipe, especially when blueberry season rolls around. It is really more a crunch than a cobbler, as is obvious from the ingredients. This recipe would also be delicious made with huckleberries or other wild blueberries. This recipe is from a "Land O Lakes" cookbook that I really love, and have made many of their recipes. This is a very down home recipe, that I think anyone who enjoys blueberries would love, especially with a bit of homemade ice cream, or vanilla custard sauce to top it off. I hope you enjoy!

1 1/2 cups all-purpose flour or 1 1/2 cups whole wheat pastry flour
1 1/4 cups quick-cooking oats
1 cup firmly packed brown sugar
1/2 cup sweet creamy butter, melted
6 cups fresh blueberries or 6 cups frozen blueberries, thawed, drained
1 cup sugar
1 cup water
3 tablespoons cornstarch
1/4 teaspoon salt
1 teaspoon vanilla

Steps:

  • Heat oven to 350 degrees.
  • In a large mixing bowl combine all the crust ingredients.
  • Beat at medium speed on mixer, scraping bowl often, until crumbly (1 to 2 minutes).
  • Press 2 cups of the crumb mixture on bottom of ungreased 13x9 inch baking pan.
  • Place blueberries over the crumb crust.
  • In 2-qt saucepan combine remaining filling ingredients except vanilla.
  • Cook over medium heat, stirring the mixture occasionally, until it thickens and comes to a full boil(18 to 22 minutes).
  • Continue boiling for 1 minute.
  • Mix in vanilla.
  • Pour over blueberries; sprinkle with the remaining crumb mixture.
  • Bake for 50 to 60 minutes or until lightly browned.

3/4 cup/170 grams unsalted butter (1 1/2 stick), melted and cooled
4 large eggs

1 teaspoon kosher salt
1 1/4 cups/250 grams granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
2 1/2 cups/312 grams all-purpose flour
1 1/2 cups/200 grams blueberries
2/3 cup/85 grams chopped pecans (or walnuts or almonds)
2 tablespoons Demerara sugar

Steps:

  • Heat oven to 350 degrees and butter a 9-by-9-inch metal pan.
  • In a large bowl, whisk together the sour cream, butter, eggs, vanilla and salt until everything is well combined. Whisk in sugar. Add the dry ingredients in this order: baking powder, baking soda and cinnamon, whisking well in between additions. Then, whisk in the flour until just combined. Fold in blueberries.
  • Using a spatula, scrape the batter into the pan, smoothing the top. Sprinkle with the nuts and Demerara sugar. Bake until the top is golden and puffed, and a toothpick inserted into the center of the cake comes out clean, about 50 to 60 minutes. Transfer the cake to a rack, and let it cool in the pan.

We had a lot of great meals, and once he spent all day making me a bouillabaisse for my birthday. That's when I knew I could definitely marry him."

Number Of Ingredients 7

5 1/2-pint baskets blueberries or 1 1/2 pounds frozen, unthawed
1 1/4 cups sugar
1 tablespoon fresh lemon juice
2 1/2 teaspoons ground cinnamon
3/4 cup all purpose flour
5 tablespoons unsalted butter, room temperature
Vanilla ice cream

Steps:

  • Position rack in top third of oven and preheat to 400°F. Place berries in 11x7-inch glass baking dish. Add 3/4 cup sugar, lemon juice, and 1 1/2 teaspoons cinnamon; mix gently. Bake berry mixture until juices are bubbling, about 40 minutes.
  • Meanwhile, mix flour, butter, remaining 1/2 cup sugar, and 1 teaspoon cinnamon in medium bowl. Rub topping together with fingertips, pressing until small moist clumps form.
  • Mix 2 tablespoons topping into warm berry mixture. Let stand 2 minutes. Sprinkle remaining topping over berry mixture. Bake until fruit is bubbling thickly and topping is golden brown and crisp, about 50 minutes longer. Let stand 10 minutes; serve with ice cream.

1 (18 ounce) package yellow cake mix
1/2 cup margarine, melted

  • Preheat oven to 350 degrees.
  • Grease a 9 by 13 inch baking pan.
  • Spread undrained pineapple evenly in pan.
  • Follow with the blueberries.
  • Sprinkle 3/4 cup sugar over the blueberries.

1 teaspoon salt
3/4 cup lemon juice
1 teaspoon vanilla extract
10 crushed Girl Scout Lemonades™ cookies
1 cup fresh blueberries
GLAZE:
2 cups confectioners' sugar, sifted
3-1/2 tablespoons lemon juice
1 teaspoon grated lemon peel
Additional crushed Girl Scout Lemonades™ cookies, optional

Steps:

  • Preheat oven to 350°. Let eggs and buttermilk stand at room temperature 30 minutes., Cream butter and granulated sugar until light and fluffy, about 5 minutes. Add eggs, one at a time, beating well after each addition. Stir in lemon peel. In another bowl, sift together 3 cups flour, baking powder, baking soda and salt. In a separate bowl, combine 3/4 cup lemon juice, buttermilk and vanilla. Add flour and buttermilk mixture to batter alternately, beating well after each addition, beginning and ending with flour mixture. Stir in crushed cookies., Toss blueberries and remaining flour; fold into batter, taking care not to crush berries. Pour into two greased and floured 8x4-in. loaf pans lined with parchment paper.
