BLUEBERRY SAUCE
Delicious, warm blueberry sauce which is fabulous on pancakes, waffles, cheesecake or ice cream! Fresh or frozen blueberries work equally well.

Steps:
- In a saucepan over medium heat, combine the blueberries, 1/4 cup of water, orange juice, and sugar. Stir gently, and bring to a boil.
- In a cup or small bowl, mix together the cornstarch and 1/4 cup cold water. Gently stir the cornstarch mixture into the blueberries so as not to mash the berries. Simmer gently until thick enough to coat the back of a metal spoon, 3 to 4 minutes. Remove from heat and stir in the almond extract and cinnamon. Thin sauce with water if it is too thick for your liking.

Steps:
- In a small pan over medium high heat, combine blueberries, sugar and lemon juice.
- Stir often until berries soften and release some juice, about 2 minutes.
- In a small bowl, stir cornstarch with water to form a paste.
- Add to saucepan.
- Stir constantly until thickened, at least 2 or 3 minutes.
- Add butter and stir until melted.
- Serve right away or cover and refrigerate up to 3 days.
- Serve sauce warm or cold.

- Melt butter in saucepan. Combine cornstarch and cassis to make a smooth mixture. Gradually stir cassis mixture into melted butter. Add the wine and lemon juice and cook, stirring, until mixture is thick. Stir in berries, and cook just until they begin to burst. Refrigerate, if desired.
- Serve plain or over low-fat vanilla frozen yogurt. Sauce can be served warm or cold.

- Mix ginger, sugar, water and curacao all together in a saucepan and bring to a slow simmer. Reduce mix by 50 percent until a syrupy consistency is reached. Keep in mind that the syrup will thicken as it cools. Strain warm syrup and allow to cool completely in the refrigerator. Take ginger slices and completely coat in sugar. Spread on sheet pan and slowly dry out in a preheated 225 degree oven for 3 hours. Ginger slices should be dried but still chewy.
- Using champagne flutes, add 1 tablespoon of the syrup and fill to the top with champagne. Drop a small sliver of candied ginger in each glass, enjoy.
BLUE CRANBERRY SAUCE
This is my recipe for a very tasty and unique cranberry sauce. It was this recipe that converted my 'we only want the jellied sauce in can' family into homemade cranberry sauce lovers. This sauce is best if made a day ahead and can be served either warm or cold. (I prefer warm, but my family is partial to cold).

- Wash and pick over cranberries. Place in a medium saucepan with water, and sugar. Bring to a boil, reduce heat, stir and simmer for 10 minutes or until cranberries burst.
- Slightly mash the cranberries with the back of a wooden spoon to insure all skins are broken. Add the cinnamon, nutmeg and allspice. Mix well.
- Remove from heat and mix in the blueberries (don't be afraid to break a few, but don't over mash either). The sauce will thicken as it cools.
- Transfer to a bowl, cool slightly and place plastic wrap directly on top of sauce to cover. Refrigerate until chilled.

- Preheat oven to 350°. In a small bowl, combine sugar and flour; stir in milk and vanilla. Place butter in a greased 5-3/4x3x2-in. loaf pan. Pour batter into pan (do not stir). Sprinkle with blueberries., Bake until a toothpick inserted in the center comes out clean, 20-25 minutes. Cool for 10 minutes before inverting onto a serving plate., In a small saucepan combine sugar and cornstarch. Stir in water until smooth; add blueberries. Bring to a boil.
