BLUEBERRY MARGARITAS
This refreshing blueberry margaritas recipe is quick and easy to make, and sweetened with tons of fresh blueberries and lime juice.

- Add blueberries and lime juice together blender, and pulse until smooth. (Or alternately, you can muddle the blueberries and lime juice together in a jar until pureed.) Strain out the juice through a fine-mesh strainer into a cocktail shaker, discarding the berry pulp.
- Add the tequila and Cointreau to the cocktail shaker, and stir to combine.
- If you would like salt-rimmed glasses, begin by running a lime wedge (the juicy part) around the top rims of your glasses. Fill a shallow bowl with salt, and dip the rims in the salt until they are covered with your desired amount of salt. (Or you can skip this step and use regular glasses that are not salt-rimmed.)
- Fill the glasses with ice, then pour in the blueberry margarita mixture. Serve immediately.
BLACKBERRY MARGARITAS

- For the puree: Add the blackberries to a medium saucepan with the sugar and lime juice. Cook over low heat, covered, 20 to 25 minutes. Strain using a fine mesh strainer, pressing the berries to extract as much juice/puree as possible. Place in the fridge to cool completely.
- For the lime sugar: Mix together the sugar and lime zest. Use a piece of lime to moisten the rim of each margarita glass, and then dip in the lime sugar.
- For the margaritas: In a blender, add 1 cup of the tequila, 1/4 cup of the triple sec, 1/4 cup of the sugar, and the juice of 1 lime. Fill the blender with ice and blend until smooth. Then add as much blackberry puree as desired, 1/3 to 1/2 cup. Pour into 4 rimmed glasses and serve immediately. Repeat with the rest of the ingredients for the other 4 glasses.

I like making pie just as much as the next guy likes making pie, but I like making a galette even more. They're more fun, and I like the freedom that the rustic appearance affords. But mostly, I think I just enjoy the higher crust to fruit ratio. Serve with ice cream.

- Combine flour, cornmeal, and salt in a bowl with a pastry blender. Add cold butter and combine with the pastry blender until coarse crumbs form. Drizzle in cold water, a little at a time, stirring to combine with a fork, until dough comes together.
- Turn dough onto a work surface and bring together with your hands; press into a disk of dough.
- Wrap dough in plastic wrap and chill in the refrigerator for about 30 minutes.
- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper or a Silpat® baking mat.
- Combine blueberries, sugar, lemon juice, lemon zest, and cornstarch in a bowl.
- Remove dough from the refrigerator and roll on a lightly floured work surface into a 15-inch circle, about 1/8 inch thick.
- Place blueberry filling into the center of the dough, leaving 3 to 4 inches of space around the border of dough. Fold dough up and around the berries, rotating a few inches and make another fold, overlapping the first; repeat around the dough until pleats are formed.
- Combine beaten egg and water in a small bowl and brush on the dough. Sprinkle on demerara sugar.
- Bake in the center of the preheated oven until golden, about 45 minutes.

- For the rim: Mix together salt and lime zest on a small flat plate. Wet the sides of a margarita glass with a wedge of lime. Rim the glass in the salt mixture. Set it aside.

- Rub the rim of two rocks or margarita glasses with a lime wedge. Swirl the rims through a small pile of kosher or sea salt to salt them. Add ice cubes to the glasses.
