Steps:
- Preheat oven to 325 degrees F (165 degrees C). Grease a 10-inch tube pan with 2 tablespoons butter. Sprinkle pan with 1/4 cup sugar.
- Mix together 2 3/4 cups flour, baking powder and salt. Set aside.
- In a large bowl, cream together 1 cup butter and 2 cups sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Gradually beat in the flour mixture. Dredge blueberries with remaining 1/4 cup flour, then fold into batter.
- Pour batter into the prepared pan.
- Bake in the preheated oven for 70 to 80 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

BLUEBERRY CRUMB CAKE

- Preheat oven to 350 degrees.Combine flour, baking powder, and a salt. Stir and set aside.Cream 1/2 stick plus 1 tablespoon butter with cinnamon and sugar. Add egg and mix until combined. Add vanilla and mix. Add flour mixture and milk alternately until totally incorporated. Do not overbeat. Stir in blueberries until evenly distributed.Grease a 9 x 13 inch baking pan. Pour in batter. In a separate bowl, combine topping ingredients and cut together using two knives or a pastry cutter. Sprinkle over the top of the cake.Bake cake for 40 to 45 minutes, or until golden brown. Sprinkle with sugar. Cut into squares and serve with softened butter.
MISSY'S LEMON AND BLUEBERRY CUPCAKES

- Preheat the oven to 350 degrees F.
- For the batter: Mix the butter and eggs. In a medium bowl, mix the flour, baking powder, baking soda and salt together. Mix the granulated sugar, milk and lemon peel together. Then mix the butter and eggs into the milk and sugar mixture. Mix the flour into the wet mixture and blend.
- Place paper cups into a pan, spray with butter baking spray and fill each cup three-quarters full with batter. Drop the coated blueberries on top. Bake for 18 to 20 minutes.
- For the frosting: Combine the powdered sugar, butter, cream cheese, lemon juice and zest together until light and fluffy. Pipe onto the cupcakes and decorate with lemon peel, blueberries and a mint leaf.

- In a large bowl, cream butter and sugar until light and fluffy. Beat in extracts. Add eggs, one at a time, beating well after each addition. - Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the lemon extract. - Start by preheating your oven to 350 degrees F, then spray your loaf pan with baking spray and set aside.
- Next, take a small bowl and combine in it both lemon zest and sugar, make sure to mix them well together with the use of your fingers until the zest is coated with sugar and the mixture is fragrant.
- Now, in a large bowl mix together the flour, baking powder, salt, and sugar zest mixture, then whisk everything together to combine.
- Take another medium bowl and beat the eggs then add in the lemon juice, greek yogurt, vanilla extract, and vegetable oil, make sure to stir well until combined.
- At this point, you want to pour wet ingredients into the dry ones and stir gently to mix.
- Go ahead and toss your blueberries with the ½ tablespoon of flour, and once the batter is mostly mixed, gently fold in the blueberries.
- Next, pour the batter into the loaf pan that you already prepared, with the use of the back of the spoon evenly spread the batter.
- Bake your cake for about 50 minutes or until the top is browned and a toothpick inserted into the middle will come out clean.
- Allow your cake to cool in the pan for 10 minutes then turn it upside down and remove it from the pan and move it to a wire rack to continue cooling.

- For the cake: Preheat the oven to 325°. Thoroughly coat a 10-cup Bundt pan with cooking spray. In the bowl of an electric mixer fitted with the paddle attachment, cream the butter with the granulated sugar on medium-high speed until light and fluffy, about 5 minutes. Add the eggs one at a time, mixing after each addition. With the mixer on medium-low speed, add the salt, then mix in the flour 1 cup at a time, mixing after each addition. With the mixer on low speed, mix in the soda and then the lemon zest. Scrape down the sides of the bowl and mix again. Add large spoonfuls of batter to the Bundt pan until the pan is filled, then smooth the top. Bake until a toothpick inserted into the cake comes out clean, 70 to 75 minutes. Let cool on a rack for 15 minutes, then carefully turn out the cake onto the rack and let cool completely. For the glaze: Spread out the lemon zest on a plate and air-dry for about 30 minutes. Combine the powdered sugar, dried lemon zest, lemon juice, salt and water in a medium bowl. Gently whisk until thick but pourable, thinning with a little more lemon juice if needed. Put the cake on a cake stand or platter and use a large spoon to drizzle the glaze all over the cake. Let it set, about 30 minutes.
LEMON-BLUEBERRY PANCAKES (PIONEER WOMAN)

- Heat heavy skillet or grill over medium low heat.
- In a medium bowl, mix flour, salt, baking powder, and sugar. Set aside.
- In a separate bowl, mix evaporated milk, juice of 1 lemon (more if lemon isn't very juicy), and lemon zest. Allow to sit for five minutes, then add egg, vanilla, and melted butter. Mix to combine.
- Pour wet mixture into dry ingredients. Stir gently to combine. Splash in more evaporated milk if mixture is overly thick. Stir in blueberries. Again, check to make sure mixture isn't overly thick.
- Melt butter in heated skillet. Drop batter by 1/4 cup measures and fry pancakes on both sides until golden.
- Serve with softened butter and warm syrup.

- In a large bowl, stir together cake mix, pudding mix and sugar.
- Make a well in the center and pour in water, oil, eggs and cream cheese.
