HOW TO MAKE (THE BEST) HUMMUS



How to Make (The Best) Hummus image

Ever wondered how to make hummus the RIGHT way? After you try this easy method, you'll never go back to store-bought again. Plus it's naturally gluten-free, oil-free, vegan, and healthy!

Number Of Ingredients 8

12 oz dried Chickpeas (about 2 cups), soaked in water overnight
1 tsp Baking Soda
3-5 cloves of Garlic
Juice of 1 Lemon
1 1/2 tsp Kosher Salt
1/4 -3/4 cup Tahini (based on preference)
1 cup Ice Cold Water*, divided
Optional Toppings: Olive Oil, Cumin, Smoked Paprika, Za'atar, etc.

Steps:

  • in water for 12-24 hours, then drain and rinse them.
  • with 3-5 cloves of raw Garlic (according to preference) and the Baking Soda (this softens them and makes them easier to peel).
  • Add the Chickpeas, Garlic, and Baking Soda to a large pot and cover with water. Bring to a boil and cook for 40 - 120 minutes, until the beans are tender.
  • Drain and rinse the cooked beans, until no bubbles remain. Set the cooked cloves of Garlic aside and peel the Chickpeas. The skins should slide off quite easily when you gently "pinch" each bean. Discard the Chickpea "skins" once finished.
  • by adding 3 cups of the peeled Chickpeas and cooked Garlic to the Food Processor, then seal it shut. Mix the Lemon Juice and Salt together in a small bowl until the Salt dissolves, then slowly pour this mixture into the Food Processor while it is running to puree the Chickpeas until they are smooth.
  • Add in 1/4 cup of Tahini to the Food Processor, then seal it and add in 1/3 cup of Ice Cold Water while it is running. Let the Food Processor run for 4-5 minutes, to help make the hummus fluffy and smooth. Add in extra Tahini and Water in 1/4 cup increments, if you would like your spread to be thicker or have a higher fat content (and be creamier).
  • with the remaining peeled Chickpeas and any toppings of your choice. Leftovers will keep well in a sealed container in the fridge for up to 5 days.

I know, I know! There are 183 hummus recipes! But none have peanut butter in them. I got this from a nutritionist who's (now grown) children would only eat hummus if she used peanut butter instead of tahini. I like it this way rather than the tahini way. Try it. You'll be pleasantly surprised! I put the olive oil right in the blender instead of drizzling on afterwards. Then I eat it with Kashi TLC crackers right out of the container.

  • Place the garbanzo beans, peanut butter, lemon juice and salt and garlic in a blender or food processor.

1/4 cup water
6 tablespoons tahini
2 tablespoons extra virgin olive oil, plus extra for drizzling
14 ounces chickpeas, rinsed and drained
1 garlic clove (minced or pressed through garlic press 1/2 teaspoon)
1/2 teaspoon salt
1/4 teaspoon ground cumin
1 pinch cayenne pepper
1 tablespoon fresh cilantro or 1 tablespoon fresh parsley leaves, minced

Steps:

  • 1 Combine lemon juice and water in a small bowl or measuring cup. 2 Whisk together tahini and 2 tablespoons oil in second small bowl or measuring cup. 3 Set aside 2 tablespoons chickpeas for garnish. 4 Process remaining chickpeas, garlic, salt, cumin, and cayenne in food processor until almost fully ground, about 15 seconds. 5 With machine running, add lemon juice-water mixture in steady stream through feed tube. 6 Scrape down bowl and continue to process for 1 minute. 7 With machine running, add oil-tahini mixture in steady stream through feed tube and continue to process until hummus is smooth and creamy (about 15 seconds, scraping down bowl as needed). 8 Transfer hummus to serving bowl and sprinkle with reserved chickpeas and cilantro over surface. 9 Cover with plastic wrap and let stand until flavors meld, at least 30 minutes. 10 Drizzle with olive oil and serve.

3 cups chickpeas, cooked or canned, drained and rinsed
6 cloves roasted garlic
1 tablespoon chipotle puree
2 tablespoons lemon juice
2 tablespoons tahini
1/2 cup olive oil
Salt and freshly ground pepper
4 pita bread
3 tablespoons olive oil
1 yellow bell pepper, seeds removed, cut into eighths
1 red pepper, seeds removed, cut into eighths
1 purple pepper, seeds removed, cut into eighths

Steps:

  • Place chickpeas, garlic, chipotle, lemon juice and tahini in the bowl of a food processor and process until smooth. With the machine running, slowly add the olive oil until emulsified. Season with salt and pepper to taste. Brush the pita with olive oil on both sides. Grill until golden brown. Cut into eighths. Serve hummus with pitas and peppers.

ULTIMATE HUMMUS



Ultimate Hummus image

This takes a little more work than cracking open a container from the store, but it is SO worth it. You can use regular chickpeas or the smaller, darker kind known as kala chana or desi chickpeas. Desi chickpeas are much healthier than the larger type. This is from Cook's Illustrated.

1/2 cup desi chickpeas
1/8 teaspoon baking soda
3 tablespoons lemon juice
6 tablespoons tahini, stirred
2 tablespoons extra virgin olive oil
1 small garlic clove, minced
1/2 teaspoon table salt
1/4 teaspoon ground cumin
1 pinch cayenne
1 tablespoon parsley, minced

Steps:

  • Soak chickpeas overnight in a quart of water. Drain, then combine in a large stockpot with baking soda and a quart of clean water.
  • Bring to a boil and simmer gently about an hour, until beans are tender.
  • Drain, reserving 1/4 cup of the bean cooking water, and cool.
  • Combine lemon juice and bean cooking water in a bowl and set aside.
  • Combine tahini and olive oil, stir together and set aside.
  • In the workbowl of a food processor, process chickpeas, garlic, salt, cumin and cayenne until almost fully ground, about 15 seconds. You may need to pause occasionally to scrape down the sides of the bowl.
  • With machine running, add lemon-water mixture in a steady stream; scrape down the bowl and process one minute.
  • With machine running, add oil-tahini mixture in a steady stream; process about 15 more seconds until the hummus is smooth and creamy.
  • Transfer to serving bowl and garnish with minced parsley and drizzled olive oil.
  • This will keep in the fridge for about 5 days. Makes about 2 cups.

It is eaten warm, fresh, and as a whole meal spread out in a dish and drizzled with fresh olive oil. It is scooped up with pita, raw onion slices, or just a fork. Do NOT use canned chickpeas (garbanzo beans)!

3 cups dry garbanzo beans, soaked overnight
1 pinch baking soda
½ cup extra-virgin olive oil
¾ cup tahini paste
¼ cup fresh lemon juice, or more to taste
1 large clove garlic, minced, or more to taste
1 teaspoon ground cumin
salt to taste
1 tablespoon extra virgin olive oil, for drizzling

Steps:

  • Rinse the garbanzo beans and and place in a pot. Fill with enough water to cover by at least 1 inch. Add baking soda, if using. Bring to a boil and then simmer over medium heat until the beans are very soft, 1 1/2 to 2 hours.
  • Drain the beans, reserving some of the water to use later. Reserve a small handful of the whole beans for a garnish. Transfer the rest to a blender or if you have a hand blender, a large bowl. Blend the beans until smooth, adding 1/2 cup of olive oil gradually. Add some of the reserved water if needed to help it blend. Add the tahini and blend in along with the lemon juice. Blend in the garlic, cumin and salt.
  • Spread the hummus into a flat serving dish and garnish with the reserved beans and a drizzle of olive oil.
