CHICKEN SOBA NOODLES

Quick and easy to prepare, whether you're packing them up for work or grabbing a bite at home

85g bundle soba or buckwheat noodles
drizzle of sesame oil
8 mangetout
1 small carrot
½ red chilli
1 tbsp toasted sesame seeds
handful shredded cooked chicken
soy sauce

Steps:

  • Cook the noodles, drain well, then toss with a drizzle sesame oil.
  • Finely slice the mangetout, cut the carrot into matchsticks and deseed and slice the red chilli.
  • Add to the noodles with the toasted sesame seeds and some shredded cooked chicken, if you have it. Pack with a small portion of soy sauce.

This is a WONDERFUL recipe that I have looked for over 7 years now! I finally got the recipe from Chef Betsy502, who has someone in her family that worked at Bob Evans, and then Impera Magna re-calculated all of the ingredients to make it a home-cooked meal for my family! YAY for the Chefs here on Zaar! This is so good! Such comfort food, I simply can't explain! ENJOY! (And thank you SO MUCH, Betsy502 and Impera Magna for helping me achieve my DREAM RECIPE!) :)

9 cups hot water
3/4 cup carrot, chopped
3/4 cup celery, chopped
1 cup onion, chopped
1 1/2 tablespoons chicken bouillon (or soup base)
3/4 cup butter, melted
1/2 teaspoon black pepper
1/2 teaspoon salt
1 lb cooked boneless skinless chicken breast, torn into large pieces
1 (16 ounce) bag reame's frozen noodles

Steps:

  • In a large stock pot, mix water, carrots, celery, onions, chicken bouillon, melted butter, pepper and chicken pieces.
  • Bring to a boil, turn to low heat and simmer for 30 minutes.
  • Add noodles and simmer on medium-low heat for an additional 10 minutes.

1 (26 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of mushroom soup
3 (14.5 ounce) cans chicken broth
2 cups diced, cooked chicken breast meat
2 teaspoons onion powder
1 teaspoon seasoning salt
½ teaspoon garlic powder
2 (9 ounce) packages frozen egg noodles

Steps:

  • In a large pot, mix the cream of chicken soup, cream of mushroom soup, chicken broth, and chicken meat. Season with onion powder, seasoning salt, and garlic powder. Bring to a boil, and stir in the noodles. Reduce heat to low, and simmer for 20 to 30 minutes.

2 (46 ounce) cans chicken broth
6 cups water
4 bay leaves
1 teaspoon salt
3 tablespoons onion flakes
1 teaspoon poultry seasoning
2 teaspoons refrigerated minced garlic (produce section of grocery store)
2 teaspoons McCormick grill seasoning
16 ounces frozen sliced carrots
36 ounces frozen noodles
1 deli herb roasted broiler, boned and cut into bite-size pieces

Steps:

  • Use an 8 quart stock pot.
  • Put first 9 ingredients into stock pot. Mix well and bring to a rapid boil.
  • Add frozen noodles and chicken; mix well; bring to boil once again.
  • Reduce heat to low; simmer for 1 1/2 - 2 hours stirring about every 15 minutes. Cook until the noodles and carrots are al dente.
  • Be sure to remove bay leaves before serving.

1 (8 ounce) package dried soba noodles
3 tablespoons soy sauce
3 tablespoons brown sugar
1 pound boneless, skinless chicken breasts, cubed
2 tablespoons sesame seeds
½ cup olive oil
3 tablespoons rice vinegar
1 tablespoon finely grated ginger
1 (7 ounce) package mixed salad greens

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Ease soba noodles into the water and return to a boil. Cook uncovered, stirring occasionally, until noodles are tender yet firm to the bite, 5 to 7 minutes. Drain and rinse under cold water.
  • Heat soy sauce and brown sugar in a large skillet over medium heat. Add chicken; stir and cook until cubes are no longer pink in the center and juices run clear, 5 to 7 minutes. Transfer to a bowl; sprinkle with sesame seeds, toss to coat.
  • Whisk olive oil, vinegar, and ginger together in a bowl until vinaigrette is combined. Divide greens among 4 plates; top with soba noodles and chicken. Serve with vinaigrette.
